Fetaxa is called Greek cheese, although it is widespread not only in Greece, but also in Romania, Egypt and some other countries. Cheese is part of the main national dishes of these countries. Each country has its own characteristics of preparing cheese for the Greek fetax salad, which is why its taste has some differences depending on the manufacturer.
In appearance, fetax resembles feta cheese. According to the original recipe, it is made from sheep's milk, but today there are types of fetaxa made from cow's and goat's milk. Soft, delicate in texture, the cheese has a sweet and sour taste, which gourmets appreciate. In addition, fetax contains a large amount of easily digestible protein, calcium and special bacteria, which means it can be used as a basis for dietary dishes.
The history of cheese goes back to the Byzantine Empire. The cooking technology has not changed and has survived to this day. The milk is heated in the sun to 35 degrees Celsius, and when it curdles, the whey is separated from the grounds. The grounds are used to prepare fetaxa. The mass is transferred into special mesh bags and hung in the barn. After some time, the mass hardens and you get cheese.
Preparing the salad
Let's look at the basic recipe for making salad with fetax cheese.
Finely chop the onion, and cut some of the tomatoes into 4 slices. Next, you need to cut the crab meat and cheese into cubes and place all four ingredients, without mixing, in a salad bowl.
It is best to start with the crab meat, then add the tomatoes and onions, and place the cheese on top. The result is a rather beautiful layered salad that will look great in a transparent container.
Then you need to prepare the dressing. To do this, squeeze lemon juice, olive oil and sugar into a separate bowl and mix everything thoroughly. This dressing needs to sit for about 10 minutes, then stir again and you can season the salad.

Salad with chicken breast and Fetax cheese
Chicken breast is a light dietary product that is ideal for salad with vegetables and pickled cheeses.
Ingredients:
- Chicken fillet – 300 gr.
- Pickled onions – 1 pc.
- Orange - 1 pc.
- Fetax cheese -100 gr.
- Wine vinegar – 1 tbsp.
- Dijon mustard – 1 tsp.
- Garlic – 2 cloves
- Olive oil – 3 tbsp.
Preparation:
Cut the chicken fillet into small pieces, add salt and pepper and fry in vegetable oil until cooked. Peel the orange and cut it in half. Cut Fetax cheese into small cubes. For the dressing, mix olive oil, vinegar, mustard and squeeze the garlic through a garlic press. Next, mix all the ingredients and season our salad. The dish is ready!
With Chiken
Salad with Fetax cheese, recipes for which are both very light and dietary, are often prepared with the addition of chicken meat. In order not to add extra calories to the dish, the bird should not be fried, but boiled.
For a bright, pleasant aroma, you can also add bay leaves and any herbs to it during the process.
Composition of ingredients
For the dish you need to take:
- chicken fillet – 3 pcs.;
- young spinach leaves - 2 tbsp.;
- oranges – 2 pcs.;
- apple cider vinegar (natural) – ¼ tbsp.;
- olive oil – 2.5 tsp;
- Fetax cheese – 120-140 g;
- chopped garlic (fresh) – 1 clove;
- orange juice – 1/3 cup;
- Dijon mustard - 2 tbsp. l.;
- dried mint – 1 tsp;
- salt pepper.
Step-by-step cooking process
The cooking process includes several stages:
- The poultry fillet, washed and dried from excess moisture, should be cut into small cubes.
- At the next stage, you will need to heat any vegetable oil in a frying pan. The chicken will fry on it with frequent stirring for 2-3 minutes. It should lightly brown over medium heat and be cooked inside.
- Next, you should season the bird with chopped garlic and dried mint, and leave it to fry for another couple of minutes.
- Afterwards, you need to reduce the heat, and pour orange juice into the frying pan with the chicken, add mustard, salt and pepper to taste. You can use other spices as well.
- All that remains is to simmer the chicken with the additives until fully cooked, stirring it occasionally.
- While the bird is roasting, it's time to get started with the rest of the ingredients. First you need to rinse and dry the spinach leaves with towels. Oranges - divide into slices, remove the skin and film from them, cut into cubes.
- Prepared spinach, pieces of citrus, and chicken in a delicate sauce should be sent to the container in which you plan to serve the treat. Next, you need to mix the ingredients thoroughly.
All that remains is to distribute the treat among the plates and sprinkle each portion with large cubes of Fetaxa.
How to serve a dish
You can use pumpkin seeds and any other seeds to decorate the dish. For example, sesame 2 colors. You can also decorate the treat with halves or thin slices of olives/pitted olives.
Salad “Vitamin mix” of pasta and Fetax cheese with vegetables
We are used to pasta being served as a second course. However, it is not. Pasta fits perfectly into salads with vegetables and pickled cheeses and gives the dish greater richness.
Ingredients:
- Pasta (any to taste) - 250 gr.
- Corn -0.5 cans
- Cherry tomatoes -15 pcs.
- Bell pepper – 0.5 pcs.
- Fetax cheese -100 gr.
- Olive oil – 3 tbsp.
- Lemon - 1 pc.
- Garlic -2-3 cloves
- Salt - to taste
Preparation:
Boil the pasta and transfer it to a bowl. Cut the pepper into strips and then chop into cubes. Transfer to bowl with pasta. Cut the cherry tomatoes in half. Add olives, corn and diced Fetax cheese. A little black pepper. Stir and season with olive oil, garlic and lemon juice. Bon appetit!
Original salad with avocado
Necessary ingredients for preparing the original salad:
- fetax cheese – 100 g
- avocado – 1 pc.
- green salad leaves – 200 g
- cherry tomatoes – 100 g
- green onion feathers – 40 g
- basil – 20 g
- lime or lemon – ? PC.
- olive oil – 2 tablespoons
- salt, ground pepper - to taste
Preparation
- The avocado needs to be washed, peeled and pitted. Then cut into small pieces. Place some chopped lettuce on a salad bowl. Finely chop the green onions.
- Tomatoes should be cut in half. All prepared salad ingredients must be combined. For the dressing, whisk together lemon juice or lime and olive oil. First, sprinkle the salad with seasonings, salt and pepper, and then pour over the prepared dressing.
Salad “Vitamin mix” with eggplants and Fetax cheese
Ingredients:
- Eggplant - 1 pc.
- Cherry tomatoes -6 pcs.
- Fetax cheese -100 gr.
- Bell pepper – 1 pc.
- Garlic – 2 cloves
- Parsley - to taste
- Olive oil – 3 tbsp.
- Black pepper - to taste
- Salt - to taste
Preparation:
Cut the eggplants into slices and cherry tomatoes in half. Soak the eggplants for 10-15 minutes. in salted water, and then fry on both sides in sunflower oil. Place the eggplants on a paper napkin and then into a salad bowl. Squeeze the garlic and chop the parsley. Wash the bell pepper, peel and cut into strips. Add cherry tomatoes. Add salt and pepper to taste. Cut fetax cheese into cubes. Drizzle the salad with olive oil and garnish with a sprig of basil. Bon appetit!
Simple Caesar salad with shrimp and fried chicken - a classic recipe

Ingredients include:
- mixture of lettuce leaves (arugula, romaine, iceberg) – 300 g;
- olive oil – 30 ml;
- raw shrimp (for convenience, you can use peeled ones) – 600 g;
- chicken fillet – 400 g;
- hard cheese – 100 g;
- Cherry tomatoes (or small in size) – 300 g;
- lemon – ½ citrus;
- mayonnaise – 200 ml;
- garlic – 2 cloves (large);
- bun (unsweetened) – 100 g;
- pepper mixture – 10 g.
How to prepare Caesar salad, the cooking process is described in 9 detailed steps:
- Peel the shrimp and place in a deep dish. Squeeze the garlic cloves into them, squeeze out the lemon juice, pour in olive oil, and stir. Leave to marinate for 20-30 minutes.
- Cut the loaf or roll into portions. In a frying pan, heat the oil with a paste of one garlic clove, fry the bread cubes until golden on both sides.
- In the same oil, fry the diced chicken breast.
