You can mix all types of currants, fresh strawberries, raspberries or other berries. Wash them, put them in a bowl, knead them slightly, add 2 tablespoons of sour cream and 1 teaspoon of sugar (powdered sugar). This light dessert is familiar to many from childhood.
Red, white and black currants grow in many summer cottages in Russia. It is used to make preserves, marmalade, jelly and baked goods. Place 200 g of frozen blackcurrants in a saucepan with 4 tsp. sugar and 1 tbsp. l. white wine vinegar. Cook over low heat until the sugar has completely boiled and dissolved (about 3 minutes):
• remove to cool. Add a handful of finely chopped mint leaves; • 400 g peeled and diced tomato pulp; • finely chopped green onions; • combine the ingredients and stir, let it brew for at least 30 minutes. Add salt and pepper to taste. Garnish with fresh chopped mint and serve.

Variability of “Chinese gooseberry” varieties
– Abbot, Alison, Jenny, Zespri-Gold, Monty, Bruno, Hayward;
– Ambrosia, Bruno, Issai, Matua.
Female varieties of berries are larger and fleshier, unpretentious to care. It is these relatively large berries (weight 70-150 grams) that belong to dessert varieties and have pulp of different colors: green, salad, golden yellow, pink and coral.
Male varieties cannot boast of a solid weight (50-70 grams) and variability in the color of the pulp. But these berries contain more tannins and vitamin C.

Ingredients: • 100 g frozen black currants; • 250 ml of good quality red wine; • 3 juniper berries, lightly chopped; • 6 fresh thyme stalks; • 500 ml beef broth; • 100 g black currants; • 1 tsp. corn flour.
Preparation
1. Mix black currants, juniper, thyme in a blender. 2. Add beef broth and simmer over low heat, skimming frequently as it rises to the surface. 3. Boil until reduced by half, then thicken slightly with cornmeal previously diluted in a little water. 4. Strain through a fine sieve into a clean small saucepan. Add salt and spices to taste.

Dough:
• skim milk 220ml; • butter 50g; • white flour 450g; • instant yeast 7g; • sugar 1 tbsp. l., salt 0.5 tsp; • poppy seeds 2 tbsp. l.; • juice of half a lemon.
For filling:
• black currant, 450g; • butter 50g; • sugar 50g.
Heat milk and butter in a small saucepan. Place the flour in another large bowl, add the yeast, sugar, salt and most of the poppy seeds (reserve 1/3 for sprinkling). Pour in the warm butter and milk (it shouldn't be hotter than your little finger can handle) and add the egg yolk.
Mix thoroughly, then knead the dough for 8 minutes. Place the dough in a bowl, cover with cling film and leave in a warm place for an hour until it has doubled in size. Place the dough on a floured board and roll out into a rectangle 1 cm thick.
Mix black currants with butter and sugar. Spread the currant mixture over the dough. Roll the dough into a roll, cut into equal parts and place on a baking sheet covered with parchment. Place the buns in a warm place, covered with cling film for about 30 minutes, until they have risen and touched each other.
Set the oven to 200C. Bake the buns for 35-40 minutes until well risen and golden, then remove from the oven, brush with milk and sprinkle with the remaining poppy seeds.

Blackcurrant mojito
Ingredients: • 2 tbsp. l. fresh black currants; • fresh mint leaves; • fresh limes; • crushed ice; • 100 gr. rum of your choice; • 1 tsp. powdered sugar; • 150 gr. mineral water or tonic.
Preparation
In a blender, mix 1-2 mint leaves + berries + 50 g. mineral water or tonic. Strain the mixture through a large strainer into a Collins glass. Fill the glass halfway with crushed ice and pour rum over the ice.
Mojito with blackcurrant and lime
Add crushed ice to the brim, add mineral water or tonic. Garnish with a lime wedge, powdered sugar and a sprig of mint. Enjoy!

Currant vinegar
There are two ways to prepare berry-vinegar infusion. The most common way is to use fresh berries. Another way is to use the remaining berry pulp from making jelly. The berries (or berry pulp) are infused in vinegar for 2-6 weeks, giving the vinegar a beautiful berry color and rich berry flavor.
What you need: • 4 cups of berry pulp, crushed in a blender, from making jelly; • 1 liter of white wine vinegar; • 750 gram jars with a plastic lid – 2 pcs.
Preparation Divide the berries/berry pulp evenly between two jars. Pour in vinegar, close the lid and shake. Store in the refrigerator for 2-6 weeks, shaking occasionally. At the end of the allotted time, strain the contents through cheesecloth. Pour the vinegar into a saucepan and boil for 3 minutes, skimming off any foam.
How to Store Once the vinegar has cooled, store it in a glass jar or bottle with a non-metallic lid in a dark place, preferably in the refrigerator.
How to use Use as a dressing in green and vegetable salads by mixing one part vinegar with two parts olive oil. Use as a marinade for fish, pork, lamb, duck or chicken.
Duck in orange glaze
Oranges go well with meat, such as pork. And almost perfect with poultry. Duck coated with orange glaze at the end of baking - everyone should try this. Squeeze the juice from a couple of oranges into a saucepan and place on the fire. Once it boils, add a spoon or two of honey and a little soy sauce. Reduce heat and simmer until the contents of the saucepan thicken slightly. Add a pinch of Chinese five-spice mixture (star anise, fennel, cinnamon, cloves, Szechuan pepper) and a little grated ginger, mix everything well, remove from heat and let it brew for a while. And 10-15 minutes before the duck is ready, brush it with glaze and send it back to the oven.
Berry-infused vodka or liqueur
Both fresh and frozen black currants are used in preparation. What you need: • 3 cups of berries; • 3 glasses of 80 proof vodka; • 2 liter jar with a plastic lid; • sugar (if making liqueur).
Preparation: Break the berries in a blender, transfer to a jar, add vodka, cover with a lid and shake well. Infuse in a dark cabinet, shaking occasionally for 5 days to 4 weeks. At the end of the allotted time, strain the contents through cheesecloth. If you're making infused vodka, you're done!
Preparing the tincture
If you are making liqueur, the next step is to add sugar. It is better to dissolve the sugar by heating it over low heat, stirring constantly, without bringing it to a boil.
This is just a small list of what can be prepared with blackcurrants. Dishes with berries are especially piquant and tasty, and not only berries are used in folk medicine.
