The grill is heated and the grate is greased with oil. The beef is salted, peppered, and fried covered on a wire rack for 8 to 12 minutes. Then let it cool on a plate under foil and cut into slices.

The plates are decorated with arugula leaves. Tomatoes, meat and berries are laid out on them. Sprinkle it with soft cheese and drizzle with raspberry dressing.

Millefeuille

Preparing a French multi-layer dessert from crispy dough with cream is an analogue of “Napoleon”.

You will need:

  • puff pastry - 0.2 kg;
  • cream 33% -200 g;
  • berries (blackberries, strawberries, blueberries) - 50-100 g;
  • powdered sugar - 1.5 tsp.
  • vanilla to taste.

The oven is heated to 180-200 degrees. Divide the puff pastry sheet in half. The cakes are baked for 10-15 minutes under pressure so that they remain thin and do not swell. All layers are cut into 3 parts. The mille-feuille plates are laid out on a flat dish.

Chemical composition

The beneficial and medicinal properties are determined by the components in the chemical composition of common raspberries. Fresh raspberries contain nitrogenous, protein, pectin (up to 0.9%), tannin (up to 0.3%) and coloring substances; malic, citric, formic, caproic, tartaric and salicylic acids; wine and isoamyl alcohols; ketones (acetoin, diacetyl, β-ionone), catechins (d-catechin, l-epigallocatechin), cyanine chloride, benzaldehyde, β-sitosterol, anthocyanin, fiber, mucus, essential oil, as well as fructose (up to 8.1%), glucose (up to 4.3%), sucrose (up to 6.5%). Vitamins are represented by carotene, a small amount of ascorbic acid, traces of B vitamins are present. Potassium and copper are found among macro- and microelements.

The chemical composition of raspberry leaves is as follows: phytoncides, tannins, and ascorbic acid (up to 300 mg%). Of the macro- and microelements, potassium (19.3 mg/g), calcium (10 mg/g), magnesium (3.4 mg/g), as well as manganese (340 µg/g), boron (77.2 µg) were found /g), aluminum (67.6 µg/g), zinc (28.9 µg/g), strontium (8.48 µg/g), copper (7.8 µg/g), nickel (1.44 µg /g), lead (1.1 µg/g), molybdenum (1 µg/g), etc.

Tart with raspberries and rhubarb

For the French open pie you will need:

  • flour - 300 g;
  • l/butter - 200 g;
  • s/powder -50 g;
  • s/sand - 150 g;
  • yolk - 2 pcs.;

  • cold water - 3 tbsp;
  • raspberries - 400 g;
  • rhubarb - 200 g;
  • zest of 1 lemon;

You will need:

Collection and preparation

For medicinal purposes, berries are harvested, as well as leaves, flowers, young shoots, and less often roots.

Raspberry berries are harvested as they ripen, in dry weather, not too early, after the dew has dried. Remove the raspberry stalks and place them in shallow baskets or small buckets.

Drying of the collected raw materials should be started quickly. The berries are first cleaned of leaves and other debris and carefully inspected, removing unripe and overripe, as well as wrinkled and spoiled specimens.

The drying process should also not be delayed, otherwise the berries may become moldy and become unusable. Therefore, it is best to use special dryers or ovens for this at a temperature of 50-60°C.

You can also do the following: the berries are first dried in the sun for several days, spread out in a thin (2-3 cm) layer, and then dried in the shade, under a canopy with good air ventilation, not forgetting to turn over often.

Blackened specimens are removed from dried berries. The raw material is considered ready if the hands do not become stained when kneading. Smell: specific, pleasant. Taste: sweet and sour.

The collection of raspberry leaves and young shoots is carried out in June-July, flowers - during flowering, roots - in autumn. Dry as usual, outdoors or indoors with good air ventilation.

Many homemade raspberry recipes involve a mixture with other berries. Such dishes are not only very tasty, but also very healthy.

You will need:

  • gooseberries - 0.8 kg;
  • raspberries - 0.25 kg;
  • fine sugar - 0.64 kg.

Gooseberries can be cooked with tails. The berries are pureed and cooked until they are completely soft. Then raspberries are added there and brought to a boil again. Count to 30 seconds and remove from the stove.

Origin

Although the plant has been known and widely used by humans for a very long time, the selection of cultivated forms of common raspberries began relatively recently, only about 130 years ago.

The ancestor of all varieties of garden raspberries is the common wild raspberry, as well as a closely related species, the black-haired raspberry (Rubus melanolasius), sometimes considered as a subspecies. Many hybrids of these two species have also been bred.

As for cultivated raspberry varieties, several hundred of them are known.

Ordinary raspberry. Latin name : Rubus idaeus L.

Ordinary raspberry. Other names : privet berries, berry ephedra, wallflower, red raspberry.

Chocolate ice cream with raspberries

Homemade raspberry ice cream recipes are very varied. For this you will need:

  • condensed milk - 1 b.;
  • h/chocolate - 300 g (for melting).;
  • raspberry flavor 100 g chocolate (cut into pieces);
  • raspberries - 1 tbsp (can be frozen);
  • salt - a pinch.

The cream is heated, but not boiled, the chocolate is sent there. The result should be a homogeneous, smooth mixture. Add salt. The mixture should cool overnight.

Then beat the cooled cream and add condensed milk. Raspberries and pieces of chocolate are also sent there. Place in a tray and leave in the freezer until hardened.

Homemade raspberry wine recipe

You will need:

  • unwashed raspberries - 1 liter;
  • water - 1 l.;
  • granulated sugar - 500 g.

Raspberry puree is prepared. Transfer to a stainless steel pan. The syrup is prepared in a separate bowl. Mix half the granulated sugar with water. The syrup is not boiled, just waiting for the sugar to dissolve.

The syrup should be cooled to 23 degrees (no more and no less) and added to the berry puree. Leave the raspberries for a week in a dark place with 20 degrees indoors.

Important! Be sure to stir the mixture during this time. Then after 8 days, pour into another pan. Then prepare the syrup again with the other half of the granulated sugar and add to the wine mixture.

Mix again and leave for a week. Then, when the mixture stops fermenting, pour the drink into glass bottles. Cover with lids with a water seal and leave the wine for a month and a half in a cool place.

During this time, the sediment will sink to the bottom and the drinks will become clear. The wine is bottled, corked, and infused in a cool place for another 2 months.
