Place a pan of water on the fire; it should be high the entire time the crayfish are boiling. Throw in MORE dill (you can use dry, you can use fresh). For 1 kg of crayfish, add 100 g of salt (it is difficult to over-salt crayfish, since it is difficult for salt to penetrate the crayfish meat through the shell). If desired, you can add lemon at the rate of ½ lemon per 1 kg of crayfish, or bay leaf to taste. Wait until the water comes to a boil. After this, we throw live crayfish into boiling water, the water should cover them by one phalanx of a finger (approximately). Now wait until the water with the crayfish boils, let them boil for 10-15 minutes. Then turn off the heat and let them steep in the brine. Crayfish are ready! We take it out and place it beautifully on a plate. You can serve crayfish in a tureen, filled with the brine in which they were boiled. Crayfish boiled in beer

Cooking crayfish in this way requires initially keeping them in boiled and cooled milk for 5 - 10 minutes, after which the milk must be drained and the crayfish boiled in water in the usual way with the addition of a large amount of salt and dill. When the crayfish are almost ready, the broth is drained again and replaced with the milk remaining after soaking the crayfish. The milk is brought to a boil, after which the crayfish are cooked for another 3 - 4 minutes. Then they can be fished out of the milk and placed on a dish. Required products: 20-25 live crayfish, 1 large onion, cut into slices, 2 lemons, cut into slices, salt (to taste), 6-9 medium potatoes, 3-4 small ears of corn, 50 g red pepper, 2 stalks of celery, (to optional) dill 2 heads of garlic, peeled and divided into cloves. Preparation:

Wash the crayfish in clean water. Boil water in a large saucepan and add seasonings (onion, dill and other herbs to taste). Boil for 15 minutes. Add 6-9 small potatoes. Boil again for 10 minutes. Add corn cobs and live crawfish. Boil again for 10-12 minutes. Remove from heat and keep the crayfish in the broth for 5-7 minutes. Then remove the crayfish, potatoes and corn from the broth and serve on a large platter. Stewed crayfish


Necessary products: crayfish 35 - 40 pcs., butter 150 g, parsley, celery, dill, 3 tbsp. l. sour cream, 1 glass of grape wine, salt to taste. Preparation: Place butter in a saucepan and add thoroughly washed crayfish. Add a few sprigs of herbs and salt. Cover the dish with a lid. Simmer for 10 minutes, then pour in dry white grape wine and sour cream, and simmer for another 10-15 minutes. Serve with the strained sauce and garnish with herbs.

Crayfish soup


Required products: 20-30 crayfish 200 g rice 1 large onion large bunch of fresh dill 50 ml heavy cream 1 tbsp. spoon of butter 1/2 tbsp. spoons of flour 5-6 black peppercorns 2-3 large pinches of coarse sea salt Method of preparation: 1. Preheat the oven to 200 C. 2. Peel the onion. 3. Boil water in a large saucepan, lower the crayfish, add the onion, a bunch of dill, salt, and a few peppercorns. Bring to a boil again and keep on fire for another 15 minutes. 4. Boil the rice according to the instructions on the package. 5.Remove the finished crayfish from the broth and break in half. 6. Clean the tails (necks) of the crayfish, divide them in half, and remove the small intestine. 7. Grind the backs of the crayfish along with the claws and shell in a blender. 8.Place the resulting mass in a saucepan, add butter and flour, put on fire and fry lightly. 9.Pour in the broth in which the crayfish were cooked, stir and bring to a boil, and then rub this mass through a very fine sieve. 10.Pour cream into the resulting soup, add peeled crayfish necks and rice.
