This is now my favorite salad! This is a simply delicious combination of baked chicken, canned beans, sweet peppers and cucumber! The salad is both hearty and light. This is delicious!

When and who invented the Raffaello salad will probably forever remain a mystery. We can say for sure that this tasty and satisfying snack appeared relatively recently - at the very end of the last century. It was then that world-famous candies with the same name were launched into mass production. Apparently this dessert inspired some housewife to decorate her simple salad with candy-like balls. Perhaps it was different: one of the chefs immediately decided to make a salad appetizer in the form of balls rolled in grated cheese. But in any case, the name stuck to the snack. However, it's not the name that matters. The main thing is that this salad consists of quite ordinary products, is very easy to prepare and has a lot of varieties. This is what we will talk about.

With pickles

This salad is suitable for lovers of spicy snacks. It prepares quickly, literally in a few tens of minutes.

To prepare the food you should take:

  • boiled chicken – 200 g;
  • pickled cucumbers – 120 g;
  • cheese (you can use mozzarella, hard, suluguni or any other) – 120 g;
  • sour cream – 120 ml;
  • canned red beans - 1 can;
  • a couple of garlic cloves.

Chicken traditionally needs to be boiled in salted water and separated into fibers (can be cut). Cucumbers, depending on their size, are cut into cubes or rings. The garlic and cheese are grated and placed in a container with the rest of the products. Beans are sent next, everything is kneaded and seasoned with sour cream.

With smoked chicken

You can surprise and delight the whole family by preparing a salad with beans and smoked chicken. Thanks to the multi-colored ingredients included in the composition, the dish is not only tasty, but also beautiful.

To prepare the food you should stock up on:

  • smoked chicken – 550 g;
  • canned red beans – 1 can;
  • boiled chicken eggs - a couple of pieces;
  • boiled carrots – 250 g;
  • hard cheese – 180 g;
  • mayonnaise – 130 ml;
  • fresh herbs;
  • salt and pepper.

There are 2 options for preparing the dish. In the first, it is recommended to chop all the finished products, mix and season with sauce. In the second option, you can cut the declared components and then lay them out on a dish in layers, smearing each with mayonnaise. Both versions of the dish will turn out tasty and beautiful.

Other popular German salads

Bavarian chicken salad is one of the most favorite dishes not only in Germany, but throughout Europe. There is nothing special about this recipe; it is distinguished by the availability of ingredients and ease of preparation. A high-calorie and tasty dish can be prepared at any time of the year. An obligatory ingredient is toasted Bavarian buns.

Berlin salad is another traditional German dish. Today there are many variations of it. The classic recipe includes smoked sausages, boiled meat, ham, ham, and pickles.

Recipe 2 Munich salad with tongue and beans

We will need:

  • Beef tongue – 300 grams;
  • Hard cheese – 120 grams;
  • Canned red beans – 1 jar;
  • Fresh carrots – 1 pc.;
  • Sunflower oil – 2 tbsp. l.;
  • Onion – 1 pc.;
  • Bay leaf – 3 pcs.;
  • Peppercorns – 5 pcs.;
  • Greens (mixture) – 50 grams;
  • Mayonnaise – 4 tbsp. l.;
  • Salt.

Preparation:

  1. Heat the water, salt it, add bay leaves and peppercorns. Then we throw the tongue in there, cook until soft;
  2. Cool the meat ingredient, cut into thin strips;
  3. We clean the onion and rinse it. Chop into medium cubes;
  4. We wash the carrots from the soil and clean them. After this, we rub it on the largest holes of the grater;
  5. Heat some sunflower oil in a frying pan and add the vegetables. We sauté them a little;
  6. Rinse the greens and dry them. Then chop it finely and finely;
  7. Grate the cheese into thin shavings;
  8. Salt the beans with brine, and then start assembling our salad;
  9. Combine the chopped tongue with cooled vegetables, add beans, as well as a little mayonnaise;
  10. Mix everything, add grated cheese on top;
  11. To finish, let’s decorate our incredibly tasty treat with chopped herbs.

Tip: Cooking time for beef tongue depends on the age of the animal. It is enough to cook the tongue of a young calf for 60 minutes, if the animal is older, then about 2 hours.

Munich with smoked cheese and German sausages

Ingredients:

  • German sausages – 3-4 pcs.
  • smoked suluguni cheese – 100 g
  • gherkins – 7-12 pcs.
  • potatoes – 2 pcs.
  • canned peas – 100 g
  • bacon - 2-3 slices
  • vegetable oil – 2 tbsp. spoons

Cut cucumbers and sausages into rings. Boil the potatoes and cut into cubes slightly larger than the sausages. Cut the suluguni into fairly large pieces. Mix everything, season with oil and serve the salad, laying it out in a mound and wrapping it with slices of bacon. You can simply cut it into a salad, but it looks prettier this way.

Salad Old Munich recipe variations

There are more than 1,600 types of Munich meat salad in Germany, because almost every city has its own original variety of sausage, which is an obligatory product in this dish. Although sausages are often replaced with other meat products. In any case, the Old Munich salad turns out tasty and very nutritious.

Let's start with the classic version of the recipe. First, let's prepare the necessary products:

  • half-smoked sausage – 320 g;
  • hard cheese – 230 g;
  • red salad onion – 2 pcs.;
  • dill greens – ½ bunch;
  • French mustard – 1\2 tsp;
  • apple cider vinegar – ½ tbsp;
  • salad mayonnaise – 3 tbsp;
  • parsley – ½ bunch;
  • sour cream – 2 tbsp;
  • spices, salt - to taste;
  • pickled cucumbers – 3 pcs.

Let's look at how to prepare a dish from the above products.

  1. In a separate container, mix mayonnaise, vinegar, sour cream, mustard, spices and salt. The mixture must be thoroughly beaten so that the salt dissolves.
  2. Wash the greens well under running water. Dry and finely chop.
  3. Peel the onions and cut into half rings.
  4. Cut the cheese into small cubes.
  5. Chop the sausage and cucumbers into strips.
  6. In a salad bowl, mix red onion, cheese, sausage and cucumbers.
  7. Add the greens there and mix well again.
  8. Before serving, season the salad with dressing.

You can let the food soak a little before eating. However, you should not prepare the dish too much in advance so that the salad does not stack.

Option with chicken and beans

This version of chicken and bean salad can be a hearty appetizer for a family lunch or a spectacular dish on a holiday menu. If all the ingredients are present, the salad prepares very quickly. Most of its ingredients can be replaced. So, let's prepare:

  • chicken breast (boiled or baked) – 2 pcs.;
  • beans and corn - 1 can each;
  • Chinese cabbage – 1 head;
  • crackers – 50 g;
  • salad mayonnaise;
  • salt to taste.

Cooking steps:

  1. Shred the meat into strips.
  2. Shred the cabbage, mix with chicken, add beans, corn, mayonnaise, and salt.
  3. Before serving, the salad, laid out on a large plate, is decorated with croutons.

Chinese cabbage can be replaced with iceberg or other lettuce. If you do not use mayonnaise, mix sour cream with mustard and use the resulting dressing instead of this sauce.

Option with hunting sausages

We offer another version of this German dish. It will contain hunting sausages, so it will be more satisfying than the previous salad. From this amount of products you will get 4 servings of the original snack.

Required ingredients:

  • chicken meat – 200 g;
  • hunting sausages – 100 g;
  • pickled cucumber, apple, onion - 1 pc.;
  • mustard – 2/3 tsp.
  • lemon – 1\2 pcs.;
  • lettuce leaves – 6 pcs.;
  • beans;
  • salt, pepper and herbs - to taste.

Let's move on to cooking:

  1. We cut vegetables, fruits and meat into cubes, and sausage into circles.
  2. Mix all the ingredients in one large container and add lettuce and beans.
  3. To dress the salad, prepare the following mixture: combine lemon juice, oil, mustard, pepper and salt.

Salad with bacon and sausages

Ingredients:

  • bacon – 200 g
  • hunting sausages – 200 g
  • potatoes – 4 pcs.
  • pickled cucumbers – 2 pcs.
  • eggs – 2 pcs.
  • sauerkraut – 200 g
  • lettuce leaves and greens – 100 g
  • red onion – 1 pc.
  • garlic – 3-4 cloves
  • mustard beans – 1 teaspoon
  • olive oil – 4 tbsp. spoons
  • ground pepper and salt – 0.5 teaspoon
  • lemon juice – 1 tbsp. spoon
  • greenery
  • sugar – 0.5 tsp

Cut sausages and bacon into thin slices. Cut the onion into half rings, sprinkle with sugar and salt, pour in lemon juice, add mustard, butter, black pepper and leave to steep for half an hour. Meanwhile, boil the potatoes and eggs and cut them into cubes. We cut the cucumbers into cubes. Mix everything, add sauerkraut and pour onion and marinade. Add chopped garlic to the salad. Top with herbs and pieces of eggs. If desired, cabbage can be replaced with olives or daikon radish.

Cooking with corn

You can prepare such a dish using boiled or smoked meat. As for the sauce, the recipe calls for mayonnaise, but it can easily be replaced with healthier sour cream.

To prepare the salad you need to stock up on:

  • chicken fillet – 280 g;
  • beans – 125 g;
  • canned corn - 1 can;
  • pickled cucumbers – 2-5 pcs. (depending on size);
  • garlic - a couple of cloves;
  • greens;
  • sour cream – 50 ml;
  • salt, ground black pepper;
  • rye crackers - 1 tbsp.

Pre-soaked beans overnight should be boiled and then remove excess moisture using a colander. The fillet is boiled, cooled and cut into small cubes. The crackers are rubbed with garlic, sprinkled with oil and dried a little in the oven. The cucumbers are chopped, and all products are mixed, including corn, and seasoned with sauce. The only thing that is not added to the salad at this stage is crackers.

After the dish has stood and soaked, you can add crackers to it, mix everything and serve. In summer, instead of pickled cucumbers, you can take fresh tomatoes, add mustard to sour cream, and use boiled corn.

Most often, Munich salad serves as a snack for beer, which is why it is very popular in bars and cafes. The main fans of this dish are usually men. However, women will definitely like this salad too. In addition, it is extremely good as a dinner, as a snack, and as a component of a gala banquet.

As a rule, Munich salad is prepared from smoked meats - brisket or hunting sausages, however, if necessary, the recipe can be slightly modified by adding products at your own discretion. For example, if you wish, you can add beef tongue or baked chicken to this dish.

Munich salad was first prepared in Germany, but a lot of time has passed since then, and it reached Russia, where it became very popular.
This dish is most often consumed as an appetizer for foamy drinks; it is especially often ordered and prepared in sports bars and beer restaurants. And his main fans are, as a rule, men. However, women will also like it; in addition, it is good on its own for dinner or as a snack at a festive feast, as it is spicy and very filling. Munich salad is traditionally prepared with smoked meats - hunting sausages or brisket, but its recipe can be changed in favor of certain products. Chicken or beef tongue can also be added to it. We offer you three options to choose from - classic (with bacon and sausages), as well as original ones.

What you need for a dish with Munich sausages

Many chefs prefer to prepare Munich salad with sausages. Here is the list of required ingredients:

  • 180 g Munich sausages;
  • 120 g Riesenburg sausages;
  • lettuce mix;
  • 250 g cheese;
  • two pickled cucumbers;
  • two red onions (small);
  • eight cherry tomatoes;
  • green onions;
  • paprika and other spices.

By the way, the salad requires a special dressing that you can prepare yourself. To do this, you will need 100 ml of vegetable oil, 15 ml of wine and balsamic vinegar, 10 g of Dijon mustard, 25 ml of dry white wine, a little chopped red onion and a few slices of pickled cucumber.

Recommendations for preparing the salad

Experienced chefs recommend preparing the dressing first - to do this, all the above ingredients need to be placed in a blender and mixed until a homogeneous paste is obtained.

The salad itself is easy to prepare. Cheese, sausage, cucumbers, red onions need to be cut into strips. Pour all these ingredients with the prepared dressing. However, you can make an original product yourself. This will be discussed below. In the meantime, about the other ingredients that will be required for this version of Raffaello salad:

  • red fish – 400 g;
  • eggs – 4 pcs.;
  • Estonian cheese – 200 g;
  • garlic – 4 cloves;
  • shelled walnuts – 200 g;
  • black pepper – 0.5 teaspoon;
  • mayonnaise - to taste (optimally 100 grams).

The technology for preparing this version of the salad is no different from all previous ones. Cut the fish into small pieces. Grind the cheese and eggs on a grater. Mix the prepared products, crush the garlic, add pepper and mayonnaise. Mix everything and form balls that need to be rolled in chopped walnuts. Place the balls on a plate and serve. Now, briefly about Estonian cheese, or rather syre (in Estonian). To prepare it, you need to boil milk (1 liter), add half a kilo of low-fat, coarse-grained cottage cheese and cook over low heat until whey forms. After this, place the cheese in a colander and let it drain. The resulting dense mass will be Estonian cheese. By the way, during the cooking process, Estonian housewives add salt and cumin to the pan. It turns out even tastier.

It is impossible not to notice that Raffaello salad can be prepared from a wide variety of products. The main thing is to get a mass from which balls are then molded and rolled in grated cheese, crushed nuts or coconut flakes. So don’t be afraid of experiments and... bon appetit!

Everyone knows this salty cheese, which changes absolutely the entire taste of a delicious bean salad. Want to try? Don't waste time, start right away. Tender chicken, crunchy peanuts, salty cheese, meaty beans, juicy lettuce and a dressing that can drive you crazy. You are ready?

Grocery list:

  • 2 chicken fillets;
  • 50 grams of beans;
  • 1 head of lettuce;
  • 150 grams of feta cheese;
  • 100 grams of peanuts;
  • 30 ml honey;
  • 10 ml mustard;
  • 15 ml sunflower oil;
  • 30 ml olive oil;
  • 15 ml lemon juice.

How to prepare bean, chicken, cheese salad:

  1. Wash the fillet and remove films and fat, cut into cubes.
  2. Combine honey with mustard. Mix well, turning the mass into a homogeneous mixture.
  3. Pour the chicken pieces with the resulting mixture. Leave for a quarter of an hour.
  4. After fifteen minutes, heat a frying pan with sunflower oil and put the chicken pieces in there and fry until golden brown. Then cool.
  5. Rinse the beans well.
  6. Cut the cheese into small cubes.
  7. Fry the nuts until golden brown in a dry frying pan, grind in a mortar.
  8. Wash the lettuce leaves well to remove sand and dirt, dry them, and tear them into small pieces.
  9. Combine all ingredients in a salad bowl.
  10. Combine lemon juice and olive oil. Season with pepper and salt and mix well.
  11. Pour the resulting dressing over the salad and serve.

Important: if feta cheese is added to a dish, it can always be replaced with feta cheese. They are almost identical. The only difference is that one is prepared only from the milk of goats and sheep, and the second from the milk of goats, sheep, and sometimes cows.

With Parmesan

In this salad with beans and cheese, you can find both a set of incredibly healthy ingredients and high-calorie foods that will drive you crazy with their aroma and delicious taste.

  • 70 grams of beans;
  • 50 grams of parmesan;
  • 50 grams of pine nuts;
  • 80 ml olive oil;

  • bacon – 200 g;
  • smoked sausages – 180 g;
  • potatoes – 4 pcs.;

  • sauerkraut – 180 g;
  • chicken egg – 2 pcs.;
  • lettuce – 50 g;
  • red salad onion – 1 pc.;
  • garlic – 4 cloves;
  • vegetable oil – 4 tbsp;
  • mixed greens – 60 g;
  • French mustard – 1 tsp;
  • lemon juice – 1 tbsp;
  • black pepper – ½ tsp;
  • salt and sugar.
