We also purchase vacuum-packed suluguni cheese in advance so as not to crowd in line on the last day.
Everything is available, the mood is excellent and we start preparing a delicious salad with cheese for the New Year's table. To do this, wash and dry the vegetables. We clean the bell pepper from unnecessary insides. Cut all the vegetables into small cubes and pour into a salad bowl.
It only takes us a few minutes!
We also quickly prepare the dressing for our salad with tomatoes and cheese.
Combine soy sauce, vegetable oil, pressed garlic and pepper and mix thoroughly. The gas station is ready!

Prepare all ingredients. Wash the chicken fillet thoroughly under running water. Wash and dry the greens and cucumbers.
Pour 0.5 liters of water over the chicken fillet, bring to a boil and cook over low heat for 25-30 minutes until cooked. Cool the finished fillet. If time permits, this can be done without removing it from the broth.
Boil the eggs hard for 8-10 minutes. Then cool by pouring cold water.
Unravel the braid of suluguni cheese and separate it into thin fibers. The finer the fibers, the better.
Cut the cucumber into thin slices, and green onions into small rings.
Peel the boiled eggs and cut into small cubes.

Boil the eggs hard. Cool, peel and cut into small pieces. Cut the ham (and it can be replaced with boiled sausage) into strips. We separate the cheese (as in previous cases, we take a “pigtail”) into separate fibers. They should also be shortened. The length of the cheese straw should be the same as the ham.
Drain excess liquid from a can of canned corn. Mix all prepared ingredients in a deep bowl. Season with mayonnaise and mix thoroughly. Just before serving, sprinkle the salad with croutons and finely chopped herbs.
For this snack, it is best to take square-shaped wheat croutons. They can also be prepared at home. To do this, just cut a couple of pieces of loaf or wheat bread into small squares. They should be dried in the oven or in a frying pan, but without adding oil. Afterwards, sprinkle the finished crackers with any seasonings or mix with garlic, which has been passed through a special press.
You will be confident in the quality of these crackers (as opposed to store-bought ones).

Cut ripe tomatoes into thin slices and place on a plate.
Grate the cheese on a coarse grater, cut the peeled apple into strips, and finely chop the dill.
Mix cheese, apples and dill, add soy sauce and olive oil and mix everything.
In a blender, prepare a sauce from nuts, herbs (I used parsley and tarragon), olive oil and spices (dry herbs, pepper).
Place the cheese salad in a mound on top of the tomatoes and pour over the green sauce. Bon appetit!
Preparation:
Grind 100 grams of walnuts in a mortar. Mash thoroughly and turn the nut into a paste.
Cut two large cucumbers into large pieces. Cut two tomatoes into random pieces. Cut the hot pepper into rings. In a bowl, mix vegetables, hot peppers and walnuts. Salt, add a teaspoon of garlic oil and half a teaspoon of hops-suneli. Khmeli-suneli gives a characteristic taste to Georgian salad. Add aromatic vegetable oil and coarsely chopped herbs: several sprigs of cilantro, dill, parsley and red basil.
Place a small piece of butter in a frying pan. While the butter is melting, cut the suluguni into pieces approximately one centimeter thick. Suluguni is salted, do not add salt, but add a little pepper. Roll the cheese in flour and fry in very hot oil. We don’t fry for a long time, literally 30-40 seconds on each side.
Add one tablespoon of red wine vinegar to the bowl with vegetables and herbs and mix thoroughly.
Place the salad on a plate and fried suluguni on top.
Salad with suluguni cheese and tomatoes

- Beijing cabbage – 100 g.
- Suluguni cheese – 100 g.
- Sweet pepper – 1 pc.

Step-by-step recipe for salad with suluguni and tomatoes
First step. I chop the Chinese cabbage into strips and put it in a salad bowl with the corn.
Tip: you can use canned corn or boil fresh corn as I do, and then cut it from the corn with a sharp knife.
Second step. I cut the tomato into pieces and put it in the salad bowl.
Third step. Peel the cucumber and chop it into half rings.
Advice: if the cucumber skin is not bitter, then you don’t have to peel it.
Fourth step. I clean the sweet peppers from seeds and cut them into strips.
Those who don’t want to give up mayonnaise will love the salad with arugula, spinach and melted cheese.
Fifth step. I cut suluguni cheese into cubes.
Sixth step. I tear large spinach leaves into two or three pieces by hand, and finely chop the parsley. Then I add everything to the salad bowl and salt to taste.
Seventh step. I season the suluguni salad with a small amount of olive oil.

Here the meat is replaced by hot fried suluguni. The recipe is given for 2 servings.
You will need:
a small bunch of lettuce leaves a bunch of tarragon 2 ripe tomatoes (preferably Baku) 1 small head of red onion a few sprigs of parsley 200 g suluguni 100 g liquid yogurt 100 g breadcrumbs or wholemeal flour vegetable oil for frying 2-3 tbsp. l. vegetable oil for dressing
How to cook:
Cut the suluguni into layers about a centimeter thick. Pour liquid yoghurt into one bowl (we use it to replace the egg), and pour breadcrumbs or wholemeal flour into another. Dip each piece of cheese into yogurt, then into breadcrumbs, repeat this procedure twice. Heat the oil in a frying pan and fry the cheese on both sides until golden brown.
Tear the lettuce leaves with your hands and place in a bowl or plates for serving. Remove the tarragon leaves from the sprigs and add to the salad. Cut the tomatoes into slices about the size of your cheese slices. Peel the red onion and thinly cut into half rings, add to the salad and tomatoes. Season the vegetables and herbs with oil, place hot fried suluguni on top and garnish with parsley sprigs.

How to prepare “Salad with fried suluguni”
Take suluguni and cut it into portions. Shape them into a rectangle. The thickness of the pieces should be at least one centimeter, otherwise the cheese will fall apart. In order to fry cheese in a frying pan, you need to bread it. One of the components of the breading, which takes place in three stages, is a beaten egg. This is where you will dip the cheese. Simply crack a fresh chicken egg into a bowl and beat it well with a whisk or fork. Now you need to immerse each piece of cheese in a beaten egg. There is no need to add salt, because Suluguni is a salty cheese. Make sure the cheese is evenly coated with the beaten egg. Place breadcrumbs into a wide plate. If you don’t have any ready-made ones, just dry the bread in the oven or toaster to make croutons. Then grind the bread in a blender. Dip the pieces of cheese into breadcrumbs and roll on both sides. Now carefully remove the cheese from the breadcrumbs so that they do not fall off. Dip each piece of suluguni again into the beaten egg on both sides. Now put the cheese into the breadcrumbs again, rolling it thoroughly into them. This double breading will firmly hold the spreading and melting cheese during frying and will form an excellent crispy crust. Since the cheese should be served as hot as possible, we will put it aside for now to prepare the salad. To do this, take lettuce leaves, wash them and tear them with your hands. Place on a serving platter and add chopped onions and tomatoes. Sprinkle everything with olive oil, lightly salt it, add spices. When the salad is ready, you can start frying the cheese. To do this, heat a frying pan, pour a sufficient amount of oil into it and fry breaded suluguni pieces on both sides over high heat. Each side will take two to three minutes. Place the finished slices of breaded and fried suluguni cheese on a plate with salad. Serve immediately while the cheese is hot. If it cools down, it will no longer be liquid, and the crust will not be crispy, as it quickly becomes damp.
