Cooking . Sort the berries, rinse and dry well. Place the prepared berries in sterilized jars in layers, alternating with sugar. Shake the jar periodically to compact the layers.   • Before cooking, rinse the berries with running water and dry them by spreading them in an even layer on a clean towel.
  • Then pour the berries into a saucepan with a high side and, using a potato masher (a special kitchen tool), begin to crush and crush the berries.
  • This can be done immediately with the entire amount of lingonberries or in portions. Each time filling the jar with pulp and juice.
  • The filled jar should be covered with a layer of gauze, folded several times (over the neck) and covered with a lid with holes. Store in the cellar or refrigerator.

Boil syrup from sugar and water, place berries and pears in it, stir, bring to a boil and remove from heat. Leave for at least 2 hours or overnight.   • Lingonberries – 450-500 g (selected and washed)

Pleasant sourness neutralizes fat content and makes the process of digesting even the heaviest meat easier. You will need : 1 kg of lingonberries, 2 tbsp. sugar, 2 tsp. salt, cinnamon sticks, vanilla pods, clove stars, peppercorns to taste.

Cooking . Place the selected, washed and dried berries in an enamel or glass container. To make the brine, boil water, add sugar, salt and spices, cool and pour over the berries. Cover the container with gauze and leave for several days in a cool, dark place. Then place the berries along with the brine in jars and seal.

How to cook soaked lingonberries

Urine is an ancient method of culinary processing of fruits, berries and some types of vegetables in order to prepare them for the winter. This method of conservation is especially widespread in the northern part of Europe and Siberia. The technology for harvesting fruits by soaking has remained unchanged to this day.

Add salt and sugar to water and boil. Add spices and apple slices to the resulting solution, boil for several minutes, and then cool. Fill a container with pre-washed berries with this filling, cover with a linen cloth, cover with a lid or a wooden circle, and place under pressure. Maintain for about 10 days at a temperature of up to +20° C, then transfer to the cold for 1 month. Use the prepared snack as an addition to meat and vegetable dishes, cereals, casseroles, and desserts.


You can also soak lingonberries in a plastic container.

Attention! When preparing urine, you can add a few lingonberry leaves and honey to the berries for more flavor.

Lingonberries in their own juice have a tart, sour taste. It can be used by people with high blood sugar, obesity or overweight. In winter, canned food is served in several variations. For turkey, duck or any other poultry dishes, you can prepare berry sauce with wine. Rinse a glass of berries, add water and boil until softened. After draining the water, grind the berry mass into puree, adding 1 tbsp. l. sugar, 4 tbsp. l dry white wine of the Aligote type, salt and pepper. Boil the resulting mixture over low heat for about 2 minutes. Serve the bird cold.

Attention! Lingonberry sauce can be prepared differently each time if you add garlic, mustard, balsamic vinegar, honey, cranberry puree, or a few juniper berries to the recipe, and replace white wine with red.

Lingonberry jelly for the winter

You can make a delicious jelly from lingonberries with a pleasant taste and unique aroma.

You will need : 8 cups of lingonberries, 4 cups of sugar, 50 g of gelatin, 3 cups of water.

Cooking . Pour boiling water over the selected berries, discard in a colander and mash using a potato masher. Then squeeze the resulting berry mass through cheesecloth. Add sugar to the resulting juice and cook over low heat, stirring until it dissolves. Bring the mixture to a boil, add gelatin, stir and cook for a couple more minutes. Place the finished jelly into jars, sterilize and roll up.

Lingonberry wine at home

Lingonberries make a good berry wine that can be served with dessert.

You will need : 2 kg of lingonberries, 900 g of sugar, 2 liters of water.

Cooking . Grind the unwashed berries into a puree and place in a jar. Add water and 300 g of sugar, mix, cover with gauze and leave in a dark, warm place for 3-4 days. During this time, stir the berry mixture twice a day. When the mixture has fermented, strain it into a clean container (bottle), squeeze out the berry mass through cheesecloth. Add another 300 g of sugar, mix, close the bottle with a water seal or a rubber glove with a hole made by a needle and place in a warm, dark place for 5 days.

After the specified time, add the remaining sugar, stirring it into 0.5 liters of liquid drained from the bottle. Close the water seal again and leave to ferment for another 2-4 weeks. When fermentation is complete, carefully drain the wine from the sediment. If desired, add more sugar and vodka (alcohol) for strength. Pour the wine into a clean container, cover with a lid and leave to mature in a cool, dark place. Once every 2-3 weeks, remove the wine from the sediment and pour it into a clean container. After 2-3 months, bottle the wine, cork it and store it in the cellar.

Homemade lingonberry tincture with vodka

A strong, aromatic liqueur made from lingonberries is a good aperitif before a rich feast.

You will need : 0.5 kg of lingonberries, 4 tbsp. sugar, 1 liter of vodka.

Cooking . Sort the berries, rinse and dry. Then put them in a glass jar, mash them lightly with a potato masher, add vodka and sugar. Stir, cover and place in a cool, dark place for 1 month. Shake the jar occasionally to mix the contents. Then strain the mixture through cheesecloth, pour into a clean container and leave in a cool place for a couple of days. When the tincture becomes clearer, pour it into bottles and store it.

Fruit and berry treat

This recipe produces lingonberries in syrup with a rich taste and spicy aroma. It is perfectly stored not only in a cool place, but also at room temperature.

Products:

  • lingonberries - 500 g;
  • clean water - 250 ml;
  • granulated sugar - 750 g;
  • cloves - 3 inflorescences;
  • apples - 130 g;
  • lemon peel from 1 fruit.

Next we do this:

  1. Sort out the main ingredient, wash and dry. Rinse the apples, remove the seed box and the place where the stalk is attached. Cut into small slices.
  2. Pour the specified amount of liquid into an enamel pan and add granulated sugar. Bring to a boil with regular stirring, reduce heat and continue cooking until thick.
  3. Then add the apple and chopped citrus zest. Stir and continue cooking for another quarter of an hour.
  4. Add lingonberries to the syrup, stir and heat for 5 minutes. Just before turning off, add cloves.
  5. Pack into sterile jars, seal tightly and store in a cool place after cooling.

Lingonberry liqueur

The aromatic sweet lingonberry liqueur will appeal to lovers of strong, sweet drinks.

You will need : 0.5 kg of lingonberries, 100 g of sugar, 1 liter of vodka.

Cooking . Place the selected berries in a jar, fill with vodka, stir, close the lid and place in a warm, dark place for 1 month. Shake the jar periodically. Then strain the liqueur through cheesecloth, add sugar, mix well and bottle.
