What to cook from gooseberries for the winter - 9 incredibly tasty rolls

Gooseberry and kiwi jam

To prepare this unusual jam you will need: 1 kg of gooseberries, 1 kg of kiwi, 8 cups of sugar, 4-5 tbsp. lemon juice.

Wash and peel the kiwi, cut into small pieces. Wash the gooseberries, dry them and grind them in a blender until pureed. Place the kiwi pieces and gooseberry pulp in a saucepan or basin, add 8 cups of sugar and heat over low heat. Once the mixture boils, cook for another 5-10 minutes and remove from heat. Let the jam cool completely, then return to the heat and cook for another 5 minutes. Then cool the jam again and pour into jars.

Shelf life

How long gooseberries can be stored in the freezer depends on the temperature. If the freezing temperature is about −18°C, the shelf life is six months. With low-temperature storage, you can get a huge supply of time and store the berries for 24 months.

Advice. If the refrigerator operates intermittently or is not able to maintain a constant temperature, it is better not to risk it and keep it frozen for no more than 3 months. The product must not be re-frozen.

Gooseberry jam “Royal”

To prepare this jam, you will need: 1 kg of gooseberries, 100 g of cherry leaves, 1 kg of sugar, 50 ml of vodka, 1 tsp. citric acid, 1/2 tsp. vanilla.

Wash the gooseberries thoroughly, cut off the stems, cut each berry in half and remove the seeds. Place the resulting halves in a large bowl, cover with cold water and leave in a cool place for 5-6 hours. At this time, place cherry leaves in a saucepan, pour 5 glasses of water over them, add citric acid, bring to a boil and cook for 5-10 minutes. Then add sugar to the cherry broth and cook until the sugar dissolves. Once the syrup boils, add vanilla and vodka. Pour the berries into the boiling syrup, after draining the cold water from them and boil for 25 minutes. Pour hot jam into jars.

Pickled gooseberries

To prepare such a wonderful snack you will need: 1-1.5 kg of gooseberries (depending on the size of the berries), 400 g of sugar, a cinnamon stick, 100 ml of vinegar, 5-6 peas of allspice, the same amount of cloves, 1/2 liter of water .

Pour water into a saucepan, add sugar, pepper, cloves and cinnamon. The marinade is prepared for 30 minutes. Then cool it and add vinegar. Pierce ripe gooseberries with a toothpick and place in pre-sterilized jars. Pour marinade over them and close the lids.

Gooseberry jam with walnuts

To prepare this unusual jam, you will need: 1 kg of gooseberries, 500 g of walnuts, 2 kg of sugar, 1 liter of water, star anise.

Wash the berries and remove the stems and seeds with pulp. Then comes the most painstaking part of the cooking process: stuffing each berry with a walnut.

Pour water into a saucepan, add sugar and cook over low heat until it is completely dissolved. Pour the resulting syrup over the berries and let them soak for 8 hours. After putting the gooseberries and syrup on low heat, throw in the star anise and cook until it boils. Then remove the jam from the heat, remove the star anise and once it has cooled a little, put it in jars. Store in a cool place.

Preparing berries for freezing

The collected gooseberries should first be sorted and peeled. You can cut off the sepals and remaining stalks with a knife or ordinary kitchen scissors. The second option will help you cope with this task much faster.

Also, before freezing, it is necessary to get rid of spoiled berries or those that have been affected by powdery mildew.

The sorted gooseberries should be rinsed in cool water, drained in a colander, and then spread out on paper towels. The fruits should be completely dry, so the washed crop can be blotted with a paper towel and on top.

Gooseberry jam with vanilla

To prepare this jam you will need: 1 kg of gooseberries, 500 ml of apple juice, 1 kg of sugar, vanilla pod.

Wash the berries and remove the stems. Place the gooseberries in a saucepan, pour in the apple juice and cook for 15 minutes. Then remove from heat and cool slightly, add sugar and wait until it dissolves in the warm jam. Then cook over low heat for another 30 minutes after boiling. 10 minutes before the end of cooking, add the vanilla pod, after removing the seeds from it. Let the jam cool and pour into pre-sterilized jars.

Gooseberry wine

You can make this wonderful wine from: 2 kg of gooseberries, 2 kg of sugar, 1.5 liters of water.

Carefully sort the berries, put them in a saucepan and mash. Then transfer the resulting mass into a bottle or jar. Sprinkle sugar on top and pour warm water. Cover the top with gauze and leave to infuse for a week. Afterwards, remove the gauze and close the jar with a lid. Cut a small hole in the lid into which to insert a rubber tube. Place its other end in a jar of water. As soon as bubbles stop coming from the tube, strain the wine through cheesecloth, pour into a bottle and place in a cool, shaded place for 10 days. Then strain again, without touching the sediment formed at the bottom. Now the wine can be sent for storage.

Mojito

Of course, you can make delicious drinks from gooseberries. And in this case we are not talking about compotes. These berries can be used to make an excellent mojito. So, you need to take:

  • gooseberries – 250 g;
  • mint – 2 sprigs;
  • lime – 1 pc.;
  • ice – 100 g;
  • soda – 0.5 l (Schweppes or Sprite will do).

Lightly mash the gooseberries along with mint sprigs. Then squeeze a lime cut in half into the resulting mixture. Stir the mixture and pour into glasses, add ice and top with soda.

Even children can drink this cocktail, and if you add light rum to it (80-100 ml for the specified amount of food), then adults will not refuse it either. Bon appetit and have fun!

Gooseberry and cherry juice

To prepare this original drink you will need: 1 glass of gooseberries, 1 glass of cherries, 1 liter of water, 1/3 glass of sugar.

Wash the berries thoroughly, remove the pits from the cherries and the stems from the gooseberries. Using a juicer, extract the juice. Pour it into a pan of hot water and boil for 3 minutes. Then add sugar and stir until it dissolves. Cool the finished fruit drink and pour it into pre-sterilized jars.

Preparatory process

According to reviews, yellow-green gooseberry varieties are best suited for freezing. The berries should not be overripe (soft) or, conversely, unripe (hard). The degree of ripeness is checked by lightly pressing the fruit - ideally it remains elastic.

You can freeze gooseberries for the winter in the freezer whole, or in syrup or puree. For the first option, varieties with thick skin and sweet flesh are best suited, for the second - thin-skinned ones.


Harvesting on your own plot is recommended to be done in dry, warm weather, in the morning in the absence of dew.

First, the raw materials must be sorted, removing debris, leaves and twigs. For fruits intended for dry freezing, the stems are left. Then they are placed in a colander or sieve and washed thoroughly under running water. After allowing the water to drain, the fruits are laid out on a cotton towel to dry. It is important that they dry completely, otherwise the workpiece will turn into a single lump of ice.
