Have you ever tried making homemade bagels or bagels? It's very simple! And the result is simply excellent! In addition, home-made bagels have other advantages - you can put the products you want in the dough, decorate the products to your liking and choose the toppings. So, let's start getting acquainted with the recipes, tips and nuances of making homemade bagels in the oven.
Cooking secrets
We start cooking by choosing products. We only take quality ones. We especially monitor the type of wheat flour - we only need the highest grade. But there is one trick here. If you take flour of a slightly lower grade, you should add a little potato starch to it. Then the “strength” of gluten and, accordingly, the quality of flour will increase.
The “strength” of flour is the ability of its gluten to absorb moisture. This property is a mandatory rule for a good yeast or yeast-free dough.
What products are needed?
You should take:
- 300 g of premium wheat flour.
- 1 tbsp. l. lean (vegetable) oil.
- 150 ml of boiled chilled water or milk.
- 1 tbsp. l. Sahara.
- A couple of pinches of salt.
- 1 tsp. (bag) baking powder for dough.
Also use something to brush the raw dough, such as a beaten egg. You will also need some sprinkles. It can be regular powdered sugar or sugar (including brown), cinnamon, poppy seeds or something else.
Confectionery with sesame seeds
To prepare the dish you will need the following products:
- About 300 grams of wheat flour.
- 150 milliliters of warm milk.
- 2 small spoons of granulated sugar.
- 100 g sesame seeds.
- 150 milliliters of water.
- A tablespoon of molasses.
- 2 tsp. sugar sand.
- A small amount of turmeric.
- 50 g butter.
- A small spoon of table salt.
- 7 grams of dry yeast.
These bagels are called Turkish.

Bagel recipe
Mix the liquid and bulk ingredients of the recipe separately. In one bowl there will be vegetable oil, lukewarm water, salt and sugar. The last two ingredients should dissolve. In another bowl, sift the flour and baking powder - then pour the mixture into the liquid. Knead the dough.
After this, leave the lump in the bowl, covered with film, for 30-40 minutes so that the dough “ripens”.
Dough for bagels at home can be prepared not only with baking powder, but also with yeast. Original bagels are made from puff pastry, including store-bought dough.
Form the dough into a sausage and cut it into pieces. Roll them into strips and make a donut out of each one. Place the pieces on a baking sheet on baking paper at a short distance from each other. Keep in mind, they will expand slightly in size as they bake.
Then follows the process of lubricating each workpiece, but you can do without it. For lubrication, it is permissible to take the following products:
- slightly beaten egg;
- one egg yolk;
- yolk with milk or cream;
- milk or cream only;
- vegetable oil;
- melted butter.
Sprinkle each piece with a pre-prepared additional ingredient - just sugar or confectionery topping, spices or seasonings, ground nuts or seeds.
Then place the baking sheet in a preheated oven to bake at a temperature of 180-200 ° C for 35-40 minutes.
After a while, pull out the baked products and remove them from the baking sheet.
How to cook bagels so that they are not sticky? Cool them on a wire rack. This way they won't get damp. Under no circumstances should hot bagels be placed in plastic bags or under kitchen towels.
With milk
Drying (the recipe for making it at home with milk allows you to get a more golden brown crust) turns out tender and does not go stale for a long time.
What ingredients will you need?
To prepare the sushi you will need:
- Milk – 100 ml.
- Chicken eggs – 1 pc.
- Flour - 400 g.
- Sugar – 100 g.
- Sunflower oil – 50 ml.
- Vanillin (added as desired).
Step-by-step cooking process
Drying is prepared as follows:
- The flour should be sifted and combined with the dry ingredients.
- Add egg, butter, milk to the flour mixture and knead into an elastic dough. If it sticks to your hands, you need to take more flour.
- The prepared dough should be cooled in the refrigerator for about half an hour.
- Next, roll out the dough into a thin sausage and cut into small pieces.
- Each slice must be rolled into a thin rope and its ends connected, giving it a drying shape.
- The dryers should be placed on a baking sheet pre-greased with sunflower oil and brushed with egg on top. If desired, the drying can be sprinkled with sugar on top.
- Prepared dryings should be baked in the oven for 15-20 minutes at a temperature of 200 0C.
Nutritional and energy value
The nutritional value and calorie content of baked products directly depend on the selected product composition for them. Particular attention is paid to the lubricating ingredient, topping and dough composition. What kind of dough you prepare - this is how you will get the drying. Calorie content is greatly increased by butter or margarine in the dough.
Let's say that to the dough recipe (see above) you add a lubricant in the form of one egg and a sprinkle of sugar and cinnamon. Half a teaspoon is enough for the last product, and take two tablespoons of sugar. This type of drying will have a calorie content of 274 kcal per 100 g. The nutritional value is as follows:
- proteins - 5.8 g;
- fats - 3.4 g;
- carbohydrates - 56.1 g.

- Knead the dough from the selected ingredients. It is better to do this with your hands so that you can feel the unkneaded parts of the dough. It should be smooth and tender. Cut pieces from it and make strips, then form bagel blanks. Then the preparation changes slightly.
- In this case, the recipe for bagels is slightly different from the previous one. First boil the shaped products in boiling water for a couple of minutes. Then carefully pull it out so as not to break the shape, and first lay it out on a dry, clean cloth. Then onto a baking tray lined with thin baking paper. Recipe with condensed milk
Ingredients:
- 200 g sweetened condensed milk;
- two egg yolks;
- 1 tsp. butter;
- a pinch of vanillin (or a drop of extract);
- 320 g of premium wheat flour;
- a pinch of salt.
Recipe:
- In a bowl, mix condensed milk with butter and one yolk, salt and vanilla. Then add flour. Knead the dough by hand or in a special dough mixing machine - such tabletop units are very convenient for housewives who like to do home baking and often deal with kneading dough.
- Then let the dough rest for about a quarter of an hour. To do this, place the lump in a bag or cover with a clean kitchen towel and leave it on the table.
- After some time, cut the dough into small pieces of equal weight (a small kitchen scale can be useful for this). Roll each piece into a sausage on the table and mold it into a circle. Don't make the bagels thick. Use up all the dough.
- Brush all the circles with the remaining egg yolk.
- Place the pieces on a baking sheet on baking paper and bake in the oven at 180°C until golden brown.
Baking with condensed milk
The dish consists of the following components:
- Eggs in the amount of 2 pieces.
- Half a small spoon of soda.
- Packaging of condensed milk.
- Salt.
- Three glasses of wheat flour.
- A few poppy seeds.
Condensed milk should be combined with eggs. Add baking soda and table salt to this mixture. The products are ground using a mixer. Then wheat flour is poured into the bowl. The dough is formed into rings, which must be placed on a baking sheet greased with cow butter. According to the recipe with condensed milk, poppy seeds are placed on the surface of the bagels. The egg should be beaten. Cover the pastries with it. The bagels are cooked in the oven for about 15 minutes.
Additional dough ingredients
