Sausages in potato dough make an excellent snack or afternoon snack. The beauty of this recipe is that you don't need to fry the sausages, just shape them and bake them in the oven. To give the sausages a beautiful golden color, brush them with an egg or a mixture of butter and egg, about 20 g of melted butter for about 1 egg.

So, today I want to share my favorite recipe for sausages in dough.
Dough based on mashed potatoes with the addition of semolina and flour. I like the taste of this potato dough better than the taste of jacket potato dough. And now about sausages: if the sausages are expensive, of good quality, in a thick casing, then they do not need any preparation. It is better to boil any other sausages for a minute in boiling water, this is necessary so that they do not tear during baking. And then continue with the recipe. Waffle option

First, thoroughly peel the potatoes and cut out the eyes. Next, we send it to boil in water, which we first salt. To make the potatoes cook faster, you can cut them in half. When ready, drain the water and use a potato masher to mash the potatoes.

Next, take a wafer, preferably a square one. You need to spread the puree evenly over the entire surface and leave it for a few minutes so that the waffle softens a little during this time, otherwise we will simply break it in the process. This should be done with all waffles.

After a few minutes, place the peeled sausage on the waffle, on the very edge, and wrap it so that the roll is tight. You can also add grated cheese, onions or spices there if you wish. Cut each roll into 4-5 circles.

Next, break the egg into a small deep plate, add salt and beat. You can add spices and milk.

Heat a frying pan with vegetable oil and place our circles on it, previously greased with egg. Fry them until golden brown.

How to cook “Sausages in potato dough”

1. Prepare your food. Let's get started.

2. Peel the potatoes, chop them coarsely, add water, add salt and cook until fully cooked.

3. Drain all the water from the finished potatoes and use a masher to turn the potatoes into mashed potatoes. Cool slightly until you can handle it with your hands.

4. Add butter at room temperature, egg, mix.

5. Place semolina and flour in warm puree. Mix the dough very well with your hands.

6. The finished dough should be soft, pleasant, and easy to come together.

7. Divide the dough into 10 parts.

8. Take one piece of dough in your hands and flatten it into an oval shape. Place the sausage in the center.

9. Pinch all around. Roll it on the table so that the sausage becomes smooth and beautiful. You don't need to press hard, just give it a shape and that's it.

10. Grease the parchment with vegetable oil. Place the sausages a short distance away.

11. Brush each sausage in the dough with an egg or an egg+butter mixture. Sprinkle sesame seeds on top, place in a hot oven (200 degrees) and bake for 25-35 minutes.

12. Remove the finished sausages from the parchment, cool a little and try!

Oven recipe

First, peel the potatoes, not forgetting to cut out the eyes. We wash it and start cooking it in salted water. To cook faster, you can cut it in half, so cooking will take about 15 minutes. As soon as the potatoes are ready, add all the liquid and thoroughly mash them into a puree and leave to cool.

After cooling, add the egg and butter, then knead the mass until smooth. Then add semolina, flour and salt. Knead the dough with your hands and divide it into parts, you will get about 12 pieces. We roll them out thinly on the table.

Meanwhile, cook the sausages in boiling water for about half a minute. Once finished, cool them and place them on potato dough cakes and make pies. Brush them with a mixture of egg and butter, and sprinkle sesame seeds on top.

Place the sausages in the oven on a greased baking sheet. You need to bake at 200 degrees for about 25 minutes. Then we take it out and sprinkle it with cheese, grated on a medium grater, then put it in the oven for another 10 minutes.

Once the specified time has passed, you can serve, but before that it is better to cool a little.

Sausages in dough with mushrooms and onions

Another great idea for making a delicious snack. The whole process is extremely simple, and there is a lot of pleasure.

Compound:

  • Sausages – 200 gr.
  • Mushrooms (champignons) – 200 gr.
  • Ready dough - 200 gr.
  • Bulb.
  • Ketchup – 100 ml.
  • Mayonnaise – 100 gr.
  • Egg.
  • Sesame – 2 large spoons.
  • Oil, salt, pepper.

Preparation:

  1. Chop the onion into small cubes and fry in a frying pan until translucent.
  2. Cut the mushrooms into slices and add to the frying pan. Continue frying until golden brown. Make sure all the liquid has evaporated.
  3. In a separate bowl, mix mayonnaise with ketchup and pepper the sauce.
  4. Unroll the dough and cut into squares of equal size.
  5. Visually divide each square in half. Make a cut in the middle on one of the halves.
  6. Spread a generous layer of sauce on the clean side. Place the mushroom filling and smooth it out. Place the sausage on top.
  7. Fold the cut part up, covering the sausage, and secure the edges of the workpiece. You should end up with a rectangle with a notch at the top.
  8. Brush the top of the products with yolk and sprinkle with sesame seeds.
  9. Bake the pies at 200 o C for 25-30 minutes.

Sausages with cheese in puff pastry, baked in the oven

Once you learn how to make simple puff pastry rolls, you'll know it's time to expand your culinary aspirations. I offer a great appetizer in French. I don’t know where the name comes from, since the filling contains Korean carrots and quite Russian pickled cucumbers. But it's very tasty, believe me. The pie will turn out tender, piquant, slightly spicy. another simple recipe with cheese on another page, I invite you.

Required:

  • Puff pastry (yeast, yeast-free, whatever) – 500 gr.
  • Cheese – 200 gr.
  • Egg.
  • Sausages – 10 pcs.
  • Korean carrots - a handful.
  • Medium-sized pickled cucumbers – 5-7 pcs.
  • Flour for sprinkling.

How to bake:

  1. Thaw the puff pastries at room temperature.
  2. Dust the work surface of the table with flour and lay out the layer. Cut into strips 2 centimeters wide.
  3. Remove the film from the sausages.
  4. Cut the pickled cucumbers lengthwise into 4 or more pieces.
  5. Cut a piece of cheese into cubes, similar in length to sausages.
  6. Fold the sausage with a block of cheese and cucumber. Carefully wrap the strip and secure the edges well.
  7. Place the pieces in rows on a baking sheet, brush with beaten egg.
  8. Bake on the middle level of the oven, at a temperature of 180 o C. Cooking time 30 minutes. After a quarter of an hour from the start of baking, carefully turn the semi-finished products onto the other side.

Sausages in puff pastry, fried in a frying pan

If you're in a hurry, fry the sausage puffs in a frying pan. A little unusual, but still delicious. Adding Korean carrots to the filling will add spiciness and piquancy to the snack. As a rule, the preparations are made in the form of pies or puffs.

We take:

  • Yeast-free dough – 250 gr.
  • Sausages – 2 pcs.
  • Korean carrots – 100 gr.
  • Sunflower oil.

How to fry:

  1. Defrost the layers, roll them out, but not too thick.
  2. Drain the marinade from the Korean carrots and chop into small strips.
  3. Divide the dough into pieces suitable for the size of the pies.
  4. Place the sausage and a handful of carrots along it. Seal the edges and pinch securely.
  5. Fry in plenty of oil until nicely browned. First place the finished pies on a paper towel to absorb excess fat.

Puff pastry pie with sausages

Don’t think it’s difficult; with a little practice, you’ll soon be making this pie for breakfast. You can use regular sausages, but the pie will taste better with smoked sausages.

We take:

  • Semi-smoked long sausages – 12 pcs.
  • Ready puff pastry – 500 gr.
  • Yolk.

How to bake a pie:

Thaw the layers by removing them from the refrigerator in advance. Roll out if necessary.

Divide the large layer into rectangular pieces. The width of the layer should be equal to the length of the sausages. Length doesn't matter.

Cut the layer into 2.5 cm wide strips.

Fold every second (even) strip up halfway, as shown in the photo.

Place the sausage exactly in the middle, return the folded strips back, they should be on top of the sausage, look at the photo on how to do this.

Cover the sausages in the opposite direction with the odd strips that we did not raise to the top.

Place the next sausage next to it, and return the odd-numbered ribbons.

Proceed in this way to form the cake.

It’s difficult to tell, but if you understand the principle, then everything will go easily. Be sure to securely seal the edges of the pie.

Brush the pie with beaten egg. Place in the oven at 190°C for 25-30 minutes.

Tips for cooking sausages

Despite the fact that ready-made ingredients are used in cooking, there are several secrets to properly baking a dish:

  1. The puff pastry should be salty. Keep an eye on this when choosing, since a sweet base for making sausages is not suitable.
  2. If you like a crispy shell, take the yeast-free package. The yeast mass produces tender, airy, melt-in-your-mouth baked goods.
  3. Thaw the layers on the refrigerator shelf. If there is no time, then on the kitchen table. Extreme methods such as microwaves are unacceptable in this case.
  4. Do not roll out the layers too thin so that they do not tear during baking.
  5. Do not boil the sausages, but be sure to remove the film. To make the sausages swell less, make several light cuts on both sides before wrapping.
  6. To keep the pies in shape, make several punctures on top with a fork, then the heat will be distributed evenly during baking.
