Fresh homemade cheese is called paneer in Hindi, and in Slavic countries it is called compressed cottage cheese. No other cheese can compare with it in terms of versatility, taste and benefits.

Culinary subtleties:

  • To make cheese, use milk with a medium fat content. Then the product will be tender and incredibly soft in taste.
  • When you add the egg mixture to the milk, be sure to stir the mixture all the time. To do this, it is better to use a wooden spatula or spoon.
  • As soon as the cheese mass heats up, it will acquire a viscous structure. The easiest way to stir it is with a masher with holes.
  • You can complement the taste of the cheese with spices, herbs, vegetable pieces or olives.
  • You can check the readiness of the cheese like this: try a small piece. If the cheese, as they say, sticks to the teeth, the product is ready.
  • Homemade cheese in a slow cooker is made from natural cottage cheese. The so-called curd product is not suitable for this purpose.
  • From 1 kg of cottage cheese, the output is about 0.6 kg of cheese.

Advice! Do not rush to pour out the whey that remains after making the cheese. It makes delicious pancakes and buns. It will also be an ideal base for making okroshka.

Tips and tricks

  • It will take no more than half an hour to prepare this dish. Although some experienced chefs advise leaving the cheese in the refrigerator for 12 hours.
  • You can use a container or an enamel tray as a form for a fermented milk product.
  • It is worth remembering that it is best to make homemade cheese from cow's or goat's milk; sheep's milk will not be as tasty.
  • Give preference to homemade milk, it is fattier, so the finished product will have a rich taste.

Processed cheese in a slow cooker

Delicate processed cheese in a slow cooker will be an ideal base for sandwiches. All your household will be delighted with such a delicacy.

On a note! You can reduce the energy value of cheese if you use low-fat cottage cheese as a basis.

Compound:

  • egg;
  • 0.4 kg cottage cheese;
  • ¼ tsp. soda;
  • salt;
  • 50 g soft butter;
  • freshly ground red pepper;
  • Chile;
  • dried basil;
  • turmeric.

Preparation:

  1. We will prepare the products we need. Lightly mash the cottage cheese with a fork. Melt the butter in any convenient way.

  2. Place the cottage cheese in a deep container, add butter, egg, soda, as well as salt and the seasonings listed in the composition.

  3. Stir the mixture thoroughly.

  4. Place the curd mixture into a multi-cooker container.

  5. Set the “Baking” option.
  6. When the multi-cooker container warms up, start stirring the mass from time to time.
  7. Cook until you get a liquid cheese mass, as in the photo.

  8. We will prepare any form. Cover it with cling film so that you can easily remove the cheese later.

  9. Pour the cheese mixture into the mold.
  10. When it has cooled completely, move it to the refrigerator.
  11. After two to three hours, you can remove the cheese from the mold.

  12. Cottage cheese in a slow cooker is ready!

On a note! You can store homemade processed cheese for no longer than four days in the refrigerator.

  4. Set the “Baking” option. Cook for 20 minutes.
  5. During this time, whey is formed.
  6. Place a colander on a large saucepan.
  7. Cover it with gauze (its ends should hang down).
  8. Pour the contents of the multicooker container into a colander.
  9. Wrap the edges of the cheesecloth and place the cheese mixture in a deep container.
  10. We will build a not too heavy press on top.
  11. Leave the cheese mixture like this for a couple of hours. Ready!

On a note! The longer you keep the cheese under pressure, the drier it will be.

  3. Let's beat the eggs.
  4. Add the egg mixture to the multibowl.

  5. Switch the appliance to the “Baking” program.
  6. Cook, stirring, the mixture for twenty minutes.
  7. Let's prepare a pan with a colander. Cover it with gauze.
  8. Pour the contents of the multi-bowl into it.
  9. We wait for the whey to drain.

  10. Wrap the cheese mass in gauze and keep under pressure overnight.

  11. Then combine filtered water and salt and stir until all the crystals dissolve.
  12. Place the cheese, cut into pieces, into the salty solution.

  13. In three to four hours the cheese will be ready!

Healthy cottage cheese

We figured out how to cook cheese in a slow cooker. However, you can also make delicious cottage cheese in it. For this we need only two ingredients - sourdough and milk.

Compound:

  • 2 liters of milk;
  • 1 PC. sourdough (dry).

Preparation:

  1. Pour milk into a multicooker container.

  2. In any program, we heat it to a temperature of 40 degrees.
  3. Add 1-2 tablespoons of milk to the jar with the starter, shake and pour the mixture into the multi-bowl.

  4. Turn on the “Yogurt” option. We keep the milk mass for 8-9 hours at a temperature of 35-40°.
  5. After this time, pour the mixture into a large saucepan.
  6. Simmer it on the lowest burner level for 30 minutes. Do not let the mixture boil, stir it continuously.
  7. The curd will be ready when the whey separates from the grains.
  8. Cool the curd mass.

  9. Place the cottage cheese in a sieve.
  10. Then move the sieve to another pan. This is necessary so that the curd does not touch the whey.

  11. Squeeze out the whey using gauze. Ready!

On a note! You don’t have to squeeze out the whey if you don’t like dry cottage cheese.

Cheese, as you know, is a very healthy product that is almost completely absorbed by our body. Processed cheese contains vitamins A, E and D, phosphorus and calcium, which in turn help strengthen bones, hair and nails.

All these beneficial properties indicate that it is advisable to include cheese in the daily diet of children and adults. Processed cheese will acquire a special taste and benefits if you prepare it at home yourself. This cheese is tasty and nutritious, and it consists only of natural and healthy products.

Today in stores the quantity and variety of processed cheeses is off the charts, so you can buy any cheese without straining. Cookies, mayonnaise, and frozen dough can be bought in the store. But the quality of such products remains a mystery.

I suggest preparing processed cheese in a slow cooker. The cheese turns out soft, tender and very tasty. If desired, you can add chopped fresh herbs, chopped garlic, and your favorite herbs or spices to this cheese.

Ingredients:

  • Cottage cheese - half a kilogram;
  • Butter – eighty grams;
  • Egg - one;
  • Milk – 50 milliliters;
  • Salt – half a spoon (teaspoon);
  • Soda - half a spoon (teaspoon).

Preparation:

To prepare cheese in a slow cooker, prepare all the products listed in the recipe.

Combine cottage cheese, egg, room temperature butter, baking soda, milk and salt in the bowl of a blender or food processor.

Beat everything until smooth. The mass should be fairly homogeneous, always without lumps.

Transfer the mass to a glass saucepan, which we place in the multicooker into a steaming container. Don't forget to pour water into the bowl.

Cook in “Steam” mode, stirring constantly, for about ten minutes. When the mass melts and then begins to thicken, turn off the multicooker.
