We love potato dishes very much and experiment with them every day. We recently baked it in the oven, how delicious it is, I can’t describe it, the most tender and soft, incredible.

And if you take it and add the filling, you won’t be able to pull it off by the ears. I really love meat and potatoes with a cheese crust, and French pork, but this is completely different, the vegetables come out like they came from the fire.

Many people are afraid to bake because they don’t know how long to bake potatoes in foil in the oven? But there is no need to be afraid; root vegetables are baked depending on their size. The largest ones are 1.5 hours, but for medium ones an hour is enough.

You need to check the readiness with a toothpick by piercing the foil; if it fits in freely, then the pulp is ready. You can pour sour cream over the vegetables, sprinkle with herbs, and add your favorite salad on top.

The main thing is that it is not green, not damaged. The tubers are smooth and beautiful, it is advisable to take varieties that are crumbly inside, those that are suitable for puree.

Today I will share my favorite recipes that I cook for dinner and for the holiday table. They are not difficult to prepare, but most importantly, they are very nutritious and tasty.

Oven baked potatoes whole in foil

I would like to point out right away. Many people have a question: is it possible to eat potatoes with skins? Yes, you can, if you are sure of the quality of the fruits, they have not been stored in the sun or light. The skin is not damaged, not green, and so on. The baked peel is healthy, it contains many minerals, the main thing is that it is washed well, and all factors are taken into account.

This simple recipe is prepared in my friend’s family; they love oven-baked dishes, so whenever we gather at the holiday table, they serve this delicacy.

Ingredients:

  • 2-3 medium sized potatoes
  • 1 gram thyme
  • 1 gram rosemary
  • Salt and black pepper
  • 2 tablespoons olive or vegetable oil
  • foil

Wash the tubers, dry them, now we need to take a toothpick and make punctures in different places of the vegetable, 6-7 is enough. We pierce the toothpick all the way through.

Choose undamaged, non-green potato tubers; they should be smooth, without dents or rot.

We cut off a piece of foil so that we can wrap it freely. One piece, one vegetable. We place herbs, either fresh or dry, and water with olive oil (it can be replaced with vegetable oil).

Salt and pepper to taste, you can add a little garlic if you like, dill, parsley, whatever you want. If you don't like herbs, use only salt and pepper.

We wrap it in foil like an envelope, the most important thing is that the tuber is covered with foil on all sides.

Place on a baking sheet or mold and place in the oven to bake at 200 degrees until done.

We check the readiness with a toothpick; if it fits in freely, then the vegetables are ready.

After we take it out of the oven, serve it hot, cut it into 4 parts with a sharp knife, and push the pulp up a little from below, you get this beauty.

You can top it with sour cream or sour cream and mayonnaise sauce, or any other sauce you like.

While the vegetables are hot, add a small piece of butter; it will melt and soak the vegetables. Served hot, it is incredibly tasty and very simple.

Oil and salt before baking

There is no need to grease the potatoes with oil and rub them with salt before baking; you need to do this at the end of cooking. This is when these ingredients will provide the most benefit in terms of texture and flavor. If you coat the potatoes too early, the skin may not become crispy. Salt can also dry out potatoes when baking.

Instead, you need to quickly add the oil and salt after the potatoes reach 95°C: after removing the pan from the oven. After this, the baking sheet is placed in the oven for another 10 minutes - the temperature of the potatoes during this time will not rise by more than 2 or 3 degrees. The oil will crisp up the skin, which has been dehydrated during long baking, and the salt will add a delicious flavor.

Baked potatoes with filling in the oven, it turns out like crumble potatoes

There is a chain of fast foods “crumbs and potatoes” where you can quickly and tasty eat, but I suggest preparing such a delicious dish at home to please your family and guests.

You can use different fillings, your favorite ones, for example (Olivier salad, crab salad, pickled mushrooms, cucumbers, etc.).

Ingredients:

  • 3-5 potatoes
  • 20 grams butter
  • 100-150 grams of hard cheese
  • foil

Filling 1:

  • 3 sausages
  • 2 tbsp. spoons of mayonnaise
  • 1/3 part mustard
  • Filling 2:
  • 200 grams of soft salted cheese
  • 1 teaspoon dried dill
  • 1 tablespoon olive (vegetable) oil

Filling 3:

  • 200 grams chicken fillet
  • 1-3 pickles
  • ground black pepper
  • 2-3 spoons of mayonnaise

We choose tubers weighing at least 300 grams, like in your favorite cafe. Maybe 200-250. Wrap it in 3 layers of foil and put it in the oven to bake.

Large potatoes are baked for 1 hour 20 minutes, maybe 30; if they are standard size, then 50 minutes is enough. Temperature 180-200 degrees.

While the potatoes are baking, you can make the filling. We remove the sausages from the film and cut them into cubes, mix with mustard and mayonnaise.

The second filling is as simple as shelling pears. Mix soft salted cheese with butter and dried dill. Mash the cheese with a fork. We combine everything and the filling for the potato crumbs is ready. The result is a delicate and soft consistency.

The third filling is also easy to prepare. Place the raw chicken breast in boiling salted water, boil until tender, and cool. Cut the cucumbers and chicken into strips, pepper and season with mayonnaise, mix everything.

When the potatoes are completely cooked, remove them from the oven, carefully, they are completely hot, cut them in half directly in the foil with a sharp knife. Knead the inside with a fork, add a piece of butter and a little grated hard cheese. The butter immediately melts and the cheese too, stir everything so that the pulp is mixed with the cheese and butter, you can sprinkle with dill.

And now we put three fillings in a row at once: chicken and cucumbers, cheese and sausages. That's all, you can enjoy the result, and of course, try it.

The main thing is that the filling is chilled, then it’s generally great, hot potatoes and cold salads.

No salt needed, everything is balanced, very tasty and very simple. This is a classic, a dish for the ages.

Of course, it is best to bake potatoes on hot coals or in an oven, but in modern living conditions it is not always possible to make this cooking method a reality. But for the oven, you can choose thin-skinned potatoes, which is very useful for vegetarians and people who fast.

In addition to potatoes, to prepare the dish you need sunflower oil and fresh rosemary. While the preparatory process is taking place, the oven should preheat to 200 degrees.

The tubers must be washed well with a stiff brush, then greased with vegetable oil, wrapped in foil, adding a little rosemary. Potatoes in foil can be placed directly on the mesh in the oven, baking them for an hour. Usually it takes 40 minutes until it is fully cooked, but the skin only browns well when baked for a long time.

When the potatoes have cooled a little, serving should be accompanied by sprinkling with coarse salt and pouring a small amount of vegetable oil. Homemade pickles will be an excellent addition to the dish.

Potatoes in the oven with lard, to taste like from a campfire

This is a very satisfying dish that you are not ashamed to serve to guests and feed your family. It’s simple and easy to prepare, I always have lard in the freezer and potatoes in the cellar, you can cook it every day. For a piquant taste, I suggest adding bacon.

This dish is prepared in the oven, and its aroma and taste are reminiscent of a summer fire. Indeed, if in winter you want to feel nostalgic and remember summer gatherings, don’t worry so much, cook this dish, for me it’s exactly the same as cooked at the stake.

Ingredients:

  • 6-8 pcs. potatoes
  • 200 grams of lard (bacon)
  • 4-5 cloves of garlic (optional)
  • salt
  • vegetable oil
  • foil

Vegetables can be washed well using a brush. They must be clean. You can take a kitchen sponge and wash it well, then rinse.

You can use fresh or salted lard; if you use salted lard, you don’t need to salt the potatoes; if it’s fresh, add some salt.

We cut the garlic into slices, I cut it thinly so that it can be conveniently placed in the cuts.

We make 4-5 cuts, but not all the way. Place it on a spoon and cut it, so you won't cut through it. This is like an accordion, only here the cuts are larger.

Season with salt and pepper, put a piece of lard and garlic inside each cut. Lubricate with vegetable oil and salt, as I wrote above, if the lard is not salted, and you don’t need to do this if it is salted, otherwise it will not be possible to eat it. It is better to add salt to taste when prepared.

We place it on a piece of foil, it is better to tear it off in advance, you need such a piece so that the tubers are well wrapped. Try not to leave any gaps; if this happens, wrap it in another piece.

Place on a baking sheet and put in the oven, again, the time depends on the variety, size, and temperature. I bake for an hour at 200 degrees. You can take one out, unwrap it, and try it.

If desired, sprinkle fresh dill or parsley on top, or dry herbs. If you like, sprinkle with grated hard cheese. Best served hot.

The most common mistakes when baking potatoes

This is my mother's recipe, although she started adding herbs recently. This is a delicious, budget-friendly dish that is easy to prepare. These are uniforms in the oven, the unsurpassed aroma and taste attracts everyone to the table. Serve with pickles, cabbage, tomatoes; no meat is needed, and you don’t always want meat.

Try this option, many may know this method of preparation, but many do not, I will be glad if you like the recipe and take note of it. There is no shame in serving these vegetables both for holidays and on weekdays.

Ingredients:

  • 2 kg. raw unpeeled potatoes
  • 3 bay leaves
  • 5 pieces. black peppercorns
  • 3 pcs. allspice peas
  • salt
  • ground black pepper to taste
  • 100 g frozen butter
  • 1 tsp. herbs de Provence seasonings

Cook the vegetables until almost done, I cooked for 20 minutes from the moment of boiling. They definitely need to be cleaned; I cut the large one in half. I add boiling water to make the water boil faster on the stove. Salt to taste. You don’t have to add spices and bay leaves, they will still give a spicy taste, and not everyone likes this.

Drain the liquid from the vegetables and set them aside. Meanwhile, line a sheet (baking tray) with foil crosswise. I rub frozen butter onto the foil. I put potatoes on it, pepper them to my taste, if you add a lot, it will be spicy, remember this, but in any case, everything is to taste.

Rub more butter on top and distribute it over the entire surface. To make it easier to grate, place it in the freezer to freeze.

Wrap everything in foil on all sides. It is important to wrap it so that nothing spills or leaks during frying. I bake it in the oven, set the temperature to 200 degrees, and left it for 20 minutes.

Then I take it out, but very carefully, since everything is hot. I unfold the foil, we want the potatoes to brown on top. I'll send it for another 15 minutes.

These vegetables turn out like jacket potatoes, only in the oven. Believe me, it's very tasty. But preparing such potatoes is quite simple without peeling and baking. You need to wash the vegetables and bake each one separately in foil in the oven. This will take no more than 1.5 hours, depending on the size.

To cook new potatoes in the oven you will need:

  • small potato tubers - about 1 kg;
  • olive or sunflower oil – 4 tbsp. l;
  • ground sweet paprika – 1 tbsp. l;
  • ground chili pepper or black pepper – 0.5-1 tsp;
  • turmeric – 1/3 tsp;
  • Provençal herbs – 0.5 tsp (optional);
  • seasoning for Korean carrots or curry – 1 tsp;
  • salt - to taste;
  • freshly squeezed lemon juice - 1 tbsp. l.

Potatoes in the oven under foil

A very interesting version of potatoes, which you wouldn’t be ashamed to serve even on a holiday; the most important thing is that the root vegetables are smooth and beautiful, plus, without green spots, since we will eat them with the skin on. And it is cooked in a wonderful spicy sauce.

Ingredients:

  • Potatoes - 1 kg
  • Olive oil – 70 ml
  • Mustard - 2 tbsp. spoons
  • Sugar - 1 teaspoon
  • Water (broth) - 100 ml
  • Paprika and oregano (together) - 1 tablespoon
  • Salt pepper
  • Zest of 1 lemon

First, prepare the sauce, mix butter, seasonings and herbs, salt, sugar, mustard. Add lemon zest as desired; it will add a piquant, interesting taste and aroma.

Wash the tubers and dry. Take a glass (or any other form), lay out the potatoes, pour in the sauce, mix. I preheat the oven to 200 degrees and set it for an hour, a couple of times during this time I take it out and mix the vegetables.

Before putting it in the oven, I cover it all with foil; if you want a golden brown crust, remove the foil 20 minutes before it’s ready.

If you want it without a crust, don’t remove the foil, and you’ll end up with a crust like this. A very spicy and interesting sauce that is used to soak vegetables. It's worth a try.

How long to bake potatoes?

Surely not many people know that all the most useful things in potatoes are located immediately under the skin. That is, when cleaning tubers, housewives throw away 99% of the vitamins and micro- and macroelements they contain that are important for the body. If we talk about options for preparing potatoes in general, then when boiling most of the nutrients go into the water, while when baking they remain inside. Very tasty vegetables are obtained in the oven with sausage; in fact, this is a real accordion. Fragrant, fried and appetizing, it’s quick and not at all difficult.

Ingredients:

  • 5-8 pcs. root vegetables
  • 250 grams bacon
  • 200 grams of hard cheese
  • salt

We cut the potato by placing it on a spoon, or two sushi sticks, or a skewer, this will prevent you from making cuts until the very end. We make cuts with a sharp knife, literally 8-10, depending on the size of the vegetables. I grease the cuts with vegetable oil using a brush.

For baking, it is better to take vegetables of the same size.

Cut the cheese into thin strips and chop the bacon (it can be replaced with sausage). Place cheese and bacon in the pockets.

I also put thyme inside, but this is not necessary, either fresh herbs are used or dried. Salt to taste. We wrap the root vegetables in foil and bake for forty to one and a half minutes, it all depends on the size of the fruit. If you want a crispy crust, 15 minutes before it’s ready, unwrap the foil and you’ll get a fragrant and beautiful crust on top.

Tips for choosing potatoes

The fact that the taste of the dish will depend on the variety, quality and size of the tubers is not even discussed. And although, at first glance, there is nothing simpler than potatoes baked in the oven, without knowledge of the matter, a truly gastronomic masterpiece will not turn out.

For good, suitable potatoes:

  • dense, hard tubers;
  • smooth and even skin;
  • there is no green pigment in the color (it indicates that the fruits contain solanine - which negatively affects the taste and is not so harmless);
  • medium size (the small one has not yet become truly useful, and the too large one would not be able to grow so much without chemical influence);
  • the pulp is hard (if soft and even wet, the vegetable is “teeming” with nitrates).
