Crispy chickpeas with spices in the oven. Step by step recipe.

Snacks

Oven baked chickpeas with spices and four ingredients. The chickpeas are actually crispy! Simple methods, GREAT flavor, so crispy and delicious! Plus plant-based and gluten-free. .

Ingredients (For 4 people)

1 425g can chickpeas (drained very well) 15ml avocado or other neutral oil (if you're not using oil, don't rinse the chickpeas from the can - just drain) 1/2 teaspoon sea salt 1 teaspoon seasoning of choice

Step-by-step cooking recipe

  1. Soak peas overnight or for 8-12 hours. Change the water as often as possible.
  2. Boil for 1.5-2 hours. I have a multicooker + pressure cooker, so in 30 minutes I got masterfully soft Turkish peas.
  3. Mix all spices and vegetable oil with chickpeas.
  4. Place on a baking sheet or in a mold. I used a silicone mat.
  5. Bake at 220 degrees for 20-30 minutes. Depends on how crispy you want it to be.

Fried or baked chickpeas are ready! Depending on the spices you will get different tastes. If you add barberry, for example, you get a sour taste.

Of course, you can’t call it popcorn, but it’s perfect as a snack for watching a movie at home.

Baking chickpeas correctly is not a matter of skill, but of your taste. If you want it crispy, bake it longer. Softer - less.

The only thing is that the peas must be boiled. I used to make this recipe by soaking it in water for 24 - 48 hours. Still, it turns out to be rough and tough. If you cook it even halfway, you definitely won’t regret it.

How to cook chickpeas in the oven

To make chickpeas crispy and taste like nuts, you need to prepare them properly. The product should be purchased in packaging with a transparent window. The beans should have a uniform color and be free of sticky lumps and debris. You cannot use the product if:

  • there are dark inclusions on the surface;
  • dried beans;

The product can only be stored in a dark and dry place. If you leave it in the sun, the chickpeas will become bitter.

Before baking, the chickpeas are soaked overnight. Then dry and sprinkle with a prepared mixture of herbs and spices. To make it crispy and resemble nuts, bake it in the oven for about an hour.

Rinse the chickpeas and soak in clean cold water for 10-15 hours, changing the water 1-2 times. After this, cook the chickpeas until tender, but do not allow them to become overcooked. When the chickpeas are ready, drain the water and dry the peas a little. To make a sweet version of this snack, sprinkle the chickpeas generously with cinnamon. For a spicy option, sprinkle with curry, paprika or any other spices.

After this, place the peas in one layer in a mold, place in an oven preheated to 190 degrees and bake for about 40 minutes. If the warm air in the oven is distributed unevenly, then the chickpeas need to be stirred several times so that the peas cook at the same time.

As a result of cooking, the peas should become empty inside and crisp. After this, if desired, the sweet version can be sprinkled with powdered sugar. You can store prepared chickpeas in a jar, but you need to put the peas in a bowl when they have cooled down.

Spicy chickpea nut recipe.

Chickpeas, chickpeas, lamb peas, sheesh peas, bladderwort, nakhat, hummus (lat. Cicer arietinum) is a plant of the Legume family, a leguminous crop. Chickpea fruits (beans) have a diameter of 0.5 to 1.5 cm and are a food product.

The culture grows in 30 countries of the world. 90% of the total area is in tropical and subtropical Asia - in India, China, and Pakistan. In Africa (Morocco, Tunisia, Ethiopia) and America (Colombia, Mexico), crops occupy small areas.

Meaning, uses and history of chickpeas

Apparently, in the Middle East, chickpeas began to be eaten 7,500 years ago. Chickpeas came to the territory of Greece and Rome in the Bronze Age. At the same time, the Romans already knew several varieties of chickpeas. At the beginning of the 9th century AD, Charlemagne calls it a ubiquitous culture.

In antiquity, chickpeas were associated with Venus and were believed to promote sperm production and lactation, stimulate menstruation, be a diuretic, and help treat kidney stones. Culpeper Nicholas in the 17th century considered chickpeas less “chicken” than peas and more nutritious. Modern researchers believe that chickpeas help lower blood cholesterol levels.

Chickpeas have been grown since ancient times in India, Pakistan, Ethiopia and other countries. Nowadays it is grown mainly in Turkey, northern Africa, Mexico, India, and Pakistan.

Chickpeas are a food product common in the countries of Western and Central Asia, northern Africa, and North America. It is used to make hummus and falafel snacks. Chickpeas are widely used in vegetarian cuisine and Indian cooking. Traditional consumption of chickpeas is also in the Mediterranean region.

Chickpeas are used to produce chickpea flour, which is used particularly in Indian cuisine. And, for example, in Italian cuisine it is used to prepare flatbread - farinata, but the volume of chickpea cultivation in Italy itself is insignificant.

White-seeded varieties are mainly used for food. Heat treatment takes much longer than for lentils and peas.

Chickpeas contain about 20-30% protein, 50-60% carbohydrates, up to 7% fat and about 12% other substances - the essential amino acid lysine, vitamins B1, B6, folic acid, as well as minerals.

The stems and leaves contain significant amounts of oxalic and malic acids.

Now about the recipe itself for the so-called “chickpea nuts”.

Ingredients: - chickpeas - 300 g - vegetable oil - 25 g - mixture of spices to taste (Tandoori Masala) - 2.5 tsp. - salt - 2 tsp.

Per 100 grams of finished product: 356 kcal, 20 grams of proteins, 11 grams of fats, 47 grams of carbohydrates.

Making chickpea nuts

chickpeas in plenty of water for 10-15 hours. Change the water and cook until done. The chickpeas should increase by about 2-3 times. Check for readiness by tasting like any legume. Pour out the water, spread the chickpeas on a towel and dry completely (!).

In a large container, mix oil, salt and spices - these can be any spices (paprika, garlic...cinnamon, vanilla (in the sweet version, replace the salt with sugar or honey). I just prepared it according to these two options. Put the whole chickpeas and mix well so that the chickpeas are all covered with this mixture. Cook on a baking sheet in the oven preheated to 180 ° C for 40-50 minutes. Turn off the oven, leave the chickpeas in it for a while. If the finished “nuts” are not quite crispy - you can fry them in a dry frying pan, like raw seeds or nuts.

About the taste, I will say that the chickpeas had a pea taste only after cooking. And after baking, the chickpeas were completely saturated with spicy aromas, became crispy and tasty and... Well, almost nuts... made from chickpeas!

Fried chickpeas in a frying pan

  • 200 g chickpeas (chickpeas)
  • 1 tsp paprika
  • 1 tsp sea salt
  • ½ liter cold water
  • half a glass of olive oil

1. Soak chickpeas in cold water overnight.

2. Check the chickpeas for cloves: if they burst easily, then you can start frying. Don't forget to drain the water.

3. Pour olive oil into a small frying pan with a double bottom (you can also use odorless sunflower oil), heat it up and add the soaked chickpeas. Fry for a few minutes until lightly golden and the chickpeas float in the oil.

4. Using a slotted spoon, place the chickpeas on a plate covered with napkins to absorb excess oil, sprinkle generously with fine sea salt and paprika. Remove the oily napkins and transfer the fried chickpeas to a clean, dry snack bowl.

Some housewives claim that chickpeas do not explode at high temperatures, unlike ordinary peas. Where they got this information from is unknown, because personally, my chickpeas began to explode within a couple of minutes, as soon as they turned golden. By the way, the first pea “explosions” in your kitchen signal that the chickpeas are ready. Therefore, do not try to fry chickpeas the same way you would fry real nuts; you will not get cooked sides.
