What can you replace eggs with?

The chicken cutlets should be formed exactly as described above. Take the minced meat in your hands in the amount of two large spoons, make a ball out of it and flatten it. After this, the products are rolled in breadcrumbs.

Recipes without eggs
The absence of a binding ingredient does not impair the taste of the dish and does not affect the appearance. By choosing the right replacement and adding sauce, you can cook it so that you can “bite your tongue off.”

It is better to purchase sea fish fillets that have virtually no bones. You can grind any part into minced meat by passing it through a meat grinder several times, but if you miss even one small bone, there is a chance of pricking yourself.

- fillet - 500 g;
- onions - 2-3 pieces;
- semolina - 2 tbsp. l.
Additional ingredients: salt, pepper - or several types, in powder. For breading - flour, as much as needed, and for frying - refined sunflower oil.
Cooking algorithm:
- Peel the onion, finely chop and fry in vegetable oil in a frying pan until golden brown.
- The fillet with prepared onions is passed through a meat grinder. It is advisable to do this several times.
- Mix the meat dough with semolina and seasonings, let stand for at least 15 minutes so that the semolina swells.
- Flour is poured onto a flat plate.

Pork and beef cutlets
If you take only pork, the dish will turn out to be fatty, and if you take beef, it will be too lean. Therefore, the ideal combination is pork ham and thigh or veal shoulder. If you want to feel the freshness and aroma, you need to take care of the greens in advance: dill or parsley. You can take fresh or dried, it doesn't matter. Spicy herbs flavor well.
Required components:
- meat, pulp - only 1 kg;
- onion - 250 g;
- garlic - 2-3 cloves;
- bread - 130 g loaf with crusts or white beginning to go stale;
- milk - 100 ml;
- water - 100 ml;
- salt, pepper, spices.
The bread is soaked in milk diluted with water, first divided into small pieces and crushed so that everything turns into a viscous “porridge”. Finely chop the onion, garlic and herbs - it is better to use a blender, then you will get a sharp-smelling puree.
The meat is passed through a meat grinder or ground several times with a chopper (food processor). Add onions, peppers, bread porridge and onion-garlic puree. Mix thoroughly and then beat, tearing off small pieces and throwing them forcefully onto the countertop. This method was invented by American burger manufacturers - the minced meat is saturated with oxygen, but at the same time becomes homogeneous and viscous. The prepared product is placed on the refrigerator shelf for half an hour. The balls are formed with wet hands.

Ingredients:
- 400gr. minced beef or fillet (you can use another: idea, chicken, pork/beef, etc.);
- a piece of bread (white without crust) soaked in milk;
- 1 large onion;
- 1 chicken egg;
- 100-150 g grated cheese (Parmesan is suitable);
- 1-2 cloves of garlic;
- herbs, a mixture of peppers, salt - to taste.
For the sauce
- 700-750 grams of tomatoes in their own juice (1 can);
- 1-2 cloves of garlic;
- a pair of bay leaves;
- a couple of sprigs of dill;
- 3 tbsp. spoons of vegetable oil;
- 50 g cheese;
- seasoning mixture, fresh herbs, salt - to taste.
Making homemade ground beef meatballs:
- Let's make the sauce. Heat vegetable oil in a frying pan, add finely chopped garlic cloves. Fry the garlic until it begins to release its aroma into the oil. Crush the tomatoes with a fork and add them along with the juice to the garlic. Bring to a boil, covered, add a couple of bay leaves and dill sprigs. Close the lid and let simmer over low heat for 7-10 minutes. A few minutes before readiness, add spices and salt. Remove the bay leaf and leave the sauce covered to infuse.

When preparing steamed cutlets, it is better to put spices not in the minced meat, but on a special mesh, then the cutlets will be steamed with aromas and will be very tasty.
