  • 1 onion;
  • 1 carrot;
  • 450 g mackerel;
  • 1 zucchini;
  • 15 g tomato paste;
  • 1 tomato;
  • 30 ml oil.

Cooking:

  1. Wash the mackerel thoroughly, remove the entrails, tail, fins and head;

  2. Next, the fish must be washed from the inside, cut into pieces;
  3. Peel the onion, chop it finely and place in a bowl;
  4. Place it in a saucepan and set aside for a while;
  5. Wash the tomatoes, cut into cubes and add to the onion;
  6. Peel, wash and chop the carrots too;

  7. Peel the zucchini if ​​desired, cut the fruit into rings or grate;
  8. Pour oil into the ingredients, place the container on the stove;
  9. Stirring, simmer for three minutes, add tomato paste;

  10. After this, add spices and mix everything with a spatula;
  11. Pour in a little water and bring the mixture to a smooth consistency;
  12. Add the fish to the mass and cook for ten minutes;

How to cook

  1. First, clean and prepare all your vegetables. Grate the carrots on a coarse grater, finely chop the onion, cut into pieces, and cut the zucchini into cubes.
  2. Pour boiling water over the tomatoes, then remove the skins from them, and turn them into puree using a blender.
  3. Fry the onions in a frying pan in vegetable oil along with carrots. Then add the chopped zucchini and bell pepper to them.
  4. Next, pour the previously made tomato puree over the vegetables. Plus salt everything, add sugar, paprika, pepper and add aromatic herbs. Simmer it all for about 12 minutes under the lid.
  5. Then add chopped herbs to the vegetables. Simmer for a couple more minutes and remove from heat.
  6. Now let's take care of the fish. Clean it, cut off the head and fins, and then cut the mackerel into fillets, which then cut into portions.
  7. Next, place the chopped fish meat on top of the vegetables stewed above in the frying pan, drowning it slightly in them.
  8. Cover the pan with a lid and return to low heat. Simmer the fish with vegetables for about 25 minutes.

You can serve this wonderful dish with fresh herbs, boiled rice or potatoes.

Mackerel marinated in a special way - even tastier than red fish

Lemon often emphasizes the taste of noble varieties of fish. But mackerel also goes well with it. If you add it to the marinade, the brine will turn out very tender, with pleasant sour notes.

Ingredients:

  • mackerel - 2 pcs.;
  • sugar - 1 tbsp. l.;
  • salt - 1 tbsp. l.;
  • grain mustard - 1 des. l.;
  • juice of ½ lemon;
  • lemon zest - 1 tsp;
  • vegetable oil - 0.25 tbsp;
  • dill - 1 bunch.

How to cook:

Prepare the fish - remove the fins, tail and head. Using a knife, carefully scrape off the black film that will cause bitterness. Combine salt and sugar in a bowl. Gradually add the remaining ingredients and prepare the marinade.

Mackerel in tomato, baked in the oven

Baked fish in the oven always looks beautiful on the table and looks appetizing.
And the sauce is so tasty that you can dip bread in it and get just as much pleasure. You will need:

  • Mackerel - carcass.
  • Onion – 2 heads.
  • Carrots - a couple.
  • Tomatoes – 2 pcs.
  • Tomato paste - large spoon.
  • Lemon – 1/3 of the fruit.
  • Sugar - a small spoon.
  • Sunflower oil.
  • Salt - a small spoon.
  • Paprika, black pepper, hot red pepper - a pinch each.

How to cook:

  1. Gut the fish, cut off excess parts. Rinse thoroughly from outside to inside.
  2. Pour the juice squeezed from the lemon over the mackerel. Rub all sides with seasonings. You can add any spices you like, or use ready-made ones from a bag.
  3. Cut the onion into half rings, grate the carrots, cut the tomatoes into cubes. Vegetables can be pre-fried, but the original recipe does not provide for this.
  4. If you decide to fry the vegetables, which I advise you to do, add the tomato paste at the end and mix well.
  5. Add salt and sugar. Simmer for about 5 minutes.
  6. Place foil on the bottom of an ovenproof dish. Place the fish carcass. Pour in the sauce, bake in the oven at 200 o C. Cooking time: half an hour.
  7. If you decide not to fry the vegetables, then the sequence of actions is as follows: mix tomato paste with salt and sugar, grate the fish.
  8. Then place it in the mold on a bed of onions and carrots.
  9. Top with fresh tomato slices. Add a little salt and pepper on top. Bake at 200 o C for 30 minutes.

Stuffed peppers

Another unusual recipe using mackerel in tomato is stuffed peppers.

To prepare you will need:

  • bell pepper - 1 kg;
  • mackerel in tomato;
  • onions and carrots;
  • rice - 300 grams.

Let's divide the preparation of the dish into stages:

  • First, boil the rice and leave it to cool to room temperature;
  • then fry the onions and carrots;
  • add fried vegetables to the bowl with fish;
  • Place the rice in the same bowl and mix everything thoroughly;
  • peppers must be washed and the tail cut off;
  • add our filling to the peppers and transfer them to the pan;
  • The dish needs to simmer for 20-25 minutes until the peppers become soft.

  • 1 kg mackerel, peeled and cut into pieces;
  • 300 gr. champignons;
  • 200 gr. pickled cucumbers;
  • 75 ml oil;
  • 2 tablespoons sour cream;
  • 1 teaspoon flour;
  • 3 tablespoons of tomato puree;
  • salt pepper;
  • 2 cups hot water or fish broth.

We clean the fish, remove the head and tail, cut each carcass into 2-3 pieces across, depending on the size.

Advice! If desired, one glass of broth when preparing this dish can be replaced with a glass of white wine.

  • water 3 tbsp.
  • seasonings (ground black pepper is fine), I used curry;
  • vegetable oil 6 tbsp.

1. So, if you are using fresh fish and not fillets, then cut off the heads, tails and fins, be sure to remove the black film, this film adds bitterness to the finished dish. Wash the fish and cut into pieces.

Simple, tasty, healthy and fast - this is how you can describe the dish that we will now prepare. Mackerel stewed with vegetables in a frying pan will definitely win the hearts of your household.

Compound:

  • 2 mackerel carcasses;
  • 2 carrots;
  • green onion feathers;
  • 2-3 tbsp. l. tomato sauce;
  • 2 tbsp. l. soy sauce;
  • vegetable oil;
  • ground black pepper.

Preparation:

  • First, let's prepare the fish: wash it and remove the backbone. Cut the fillet into small pieces, separating it from the bones.

  • If you don't have green onions on hand, you can replace them with regular onions. Use both varieties if desired.
  • We wash and chop the green onion feathers.
  • We clean and chop the carrots using a special knife (you can simply cut them into strips).

  • Lightly fry the onion in vegetable oil, and then add the carrots to it. Sauté everything together for a few minutes and add soy sauce. Simmer on medium burner level for 5-7 minutes.

  • In the meantime, let’s fry our fish separately in vegetable oil. The burner level must be strong. The golden hue of the crust will tell us about its readiness.

  • All we have to do is combine the vegetables with the fish, season with pepper, stir and simmer over medium heat until cooked. Salt the dish if necessary, although soy sauce often provides enough salt.

  • 2 mackerel;
  • 3 potatoes;
  • 0.5 red onion;

Pour the tomato sauce into the pan; if it is too thick, add a little water. Place the fish pieces and simmer covered over low heat for 10 minutes. Serve sprinkled with fresh herbs.

  • 0.7 kg mackerel;

  7. Simmer the dish on a low burner for half an hour, covering the pan with a lid.

When choosing fish, we recommend choosing a carcass that has a head. You can always tell the real expiration date of a product by looking at it. The eyes should be bulging, clear, bright and moist. If they are dry, sunken, or at least cloudy, then, alas, the mackerel has been around for more than one day.
