Making Indian jalebis at home is actually quite easy. These are small spirals fried in oil and then topped with aromatic sugar syrup. This sweetness will surely appeal to not only children, but also adults. The highlight of Indian cuisine on your table without much hassle is quite possible. And although the process takes quite a lot of time, it is worth it!

Indian carrot halwa is a very popular national dessert. Imagine a milk pudding made from sweet carrots and cashews. It is worth bringing nuts from India, especially cashews. They are larger and cheaper than those sold in Russia. Nuts will be useful for preparing traditional Indian desserts or dishes. It also makes sense to buy a couple of jars of ghee in India - it is a very useful thing.

Ingredients:
- Flour – 240g;
- Corn flour – 20g;
- Semolina – 20g;
- Starch – 15g;
- Sour cream – 2 tbsp;
- Water – 350ml;
- Baking powder – 6g;
- Salt - a pinch;
- Vegetable oil.
Syrup:
- Sugar – 250g;
- Water – 120ml;
- Lemon peels (they can be replaced with 1 tsp citric acid) – 1 tbsp.
Classic Jalebi recipe
In appearance, this Indian sweet looks like a fried “spiral” coated with golden caramel. Surprisingly, the jalebi recipe is very simple, and we don’t need fancy ingredients to make it.
For the test we will need:
- 2 tbsp. wholemeal wheat flour;
- 100 g sour cream;
- 2 tbsp. water;
- 2 teaspoons semolina;
- ¼ teaspoon of soda;
- refined sunflower oil for frying.
For sugar syrup we need:
- 2 tbsp. sugar;
- 1 tbsp. water;
- 1 tbsp. a spoonful of lemon juice;
- a pinch of salt.
Step-by-step description of the preparation process:
- The dough is very easy to prepare. Sift the flour into a deep bowl. Add sour cream, soda and semolina to it. In order to knead it all, add some water and whisk the resulting mass until it has a homogeneous consistency. This mixture must ferment a little. Therefore, cover the bowl and put it in a warm place for at least 2 hours. The mass, ready for frying, resembles thick sour cream in appearance.
- While our dough is fermenting, prepare the caramel syrup. Mix water and sugar and put them on the fire. Stir our sugar mass frequently and skim off the foam until it boils. As soon as it boils, add a pinch of salt and lemon juice. Thanks to salt and lemon juice, our dressing will not become sugary. Stir our syrup one last time, reduce the heat slightly and cook for another 10 minutes with the sugar mixture gently but visible boiling. We put our finished caramel aside, it should cool to room temperature. Properly prepared caramel will gently coat our Jalebi and not turn it into a soft lump.
- When the dough has reached the state we need, we can start cooking it. Since this cookie is deep-fried, we will need a frying pan with a thick bottom and high sides. Pour refined oil into a bowl, about 3 cm high, and place on medium heat. We need to form spirals from the thick mass as in the photo. To do this, we will need a pastry bag with a small diameter nozzle or a thick bag with a corner cut off. With its help, we squeeze the future sweetness directly into the heated bowl. Brown our yummy on both sides. Remove from the pan and remove excess fat (you can put it on a napkin or use a wire rack). Next, dip the pieces of delicacy into our golden caramel for 5-10 seconds and place on the wire rack.

5. Then add a little more flour and mix again.

7. For convenience, I recommend pouring the dough into a ketchup jar. You can also use a pastry bag or a plastic bag, for example.
8. To prepare the sweet syrup, place sugar, saffron and water in a small saucepan. Put it on fire.
9. Cook the syrup after boiling over low heat.
10. At the end, add a little lemon juice and remove from heat.
11. Now you can start frying Indian jalebis at home. Heat vegetable oil in a frying pan.
12. Pour the dough into small spirals into the heated oil.
13. Fry until golden brown. Then carefully remove from the oil.
14. And transfer to syrup. It is important that the syrup remains warm at all times.
15. Dip the spirals on all sides in syrup and place on a prepared baking sheet lined with foil. That's the whole secret of how to make Indian jalebis. Interesting and not at all difficult, right? Help yourself.

I've tried almost everything in our kitchen, it's time to move on to something new. I would like to know a little about the cuisine of the peoples of the world. I propose to prepare an Indian sweet, which is very popular in this country. In India, jalebis are sold on every corner. These are crispy spirals soaked in sweet syrup.
This delicacy can be prepared at home. It's not difficult at all. It contains the simplest ingredients that can be found in every home.
Ingredients:
Dough:
- Water 170 ml
- Kefir 1 tbsp. l.
- Semolina 0.75 tbsp. l.
- Wheat flour 150 g
- Soda 0.25 tsp
Syrup:
- Water 250 ml
- Sugar 500 g
- Lemon juice 1 tbsp. l.
- Imeretian saffron 0.1 g
For frying:
- Refined sunflower oil 200 ml
How to cook:

Sift the wheat flour into a deep bowl.

Add semolina to the sifted flour. Stir.

Add kefir, soda, water. Whisk until smooth.

I would like to invite you to try an unusual pastry - the Indian sweet “jalebi”. Jalebis turn out incredibly tasty, crispy, very sweet and quite high in calories. Of course, you won’t cook this every day, but sometimes you can enjoy such a wonderful dessert.
Ingredients
To prepare jalebi you will need: flour - 2 cups; sour cream - 1 tbsp. l.; semolina - 1 tbsp. l; soda - 1/4 tsp; water - 1.5 cups. For syrup: water - 0.5 cups; sugar - 1 cup; lemon juice - 1 tsp; refined vegetable oil (for frying) - 0.5 liters. Glass - 200 ml.
Orange glaze
With this syrup, cookies will appeal to those who do not like very sweet pastries.
To prepare it we need:
- 2 oranges;
- 150 g powdered sugar.
- Squeeze the juice out of the oranges and mix it with powdered sugar, adding it until our glaze looks like thick sour cream. We won’t cook this sauce so as not to lose all the beneficial vitamins that are in orange juice.
- We take our Indian cookies and dip each one in orange syrup, hold it for 5 seconds, take it out and put it on a wire mesh so that they dry a little.
Chocolate glaze
This option is perfect for chocolate fans.
To prepare chocolate topping we will need:
- 4 tbsp. spoons of cocoa powder;
- 4 tbsp. spoons of sugar;
- 100 g milk;
- 100 g butter.
- Pour the milk into a saucepan and bring to a boil. Mix cocoa with sugar and pour into boiling milk. Cook the resulting chocolate mixture for 5 minutes (it should boil slightly). Set aside the glaze and stir in the butter. After it has completely dissolved, our chocolate topping is ready.
- Take the fried cookies and dip them in chocolate for a few seconds. To prevent the chocolate from sticking to your hands, place each piece separately on a mesh and put it in a cool place for a few minutes.
