I decided to post a recipe for making kefir shortcakes. They go great with tea, as an afternoon snack, and as a light snack too.
Cooking process
It should be said right away that we will be making choux pastry.
To begin, lightly beat the eggs with granulated sugar in a deep bowl. Then add melted honey and baking soda. Mix everything thoroughly. Add softened goose fat or butter. Stir again. Then put a large cup with a small amount of water on the fire and bring the water to a boil, reduce the heat to medium and place a container with the main ingredients on top (on top of the large cup).
With constant stirring (to prevent lumps from forming), brew the dough in a water bath for 15 - 20 minutes. About 10 minutes after placing the dough in a water bath, add a pinch of nutmeg, this will make the baked goods even more fragrant.
After the specified time, remove the cup from the water bath. You should end up with a viscous mass reminiscent of caramel in both color and consistency.
Now you need to add one glass of sifted flour and mix the dough. Set the cup with the dough aside; you need it to cool to a comfortable temperature for your hands.
Then, adding flour, knead the dough. It should not be too tight, otherwise the finished honey cakes will not be crumbly. But at the same time it must be elastic. I will say that I am not a fan of kneading by hand, but I really liked working with honey dough, it is warm, aromatic and very pleasant to the touch.
All that remains is to roll it into a ball, cover with a napkin and let it lie on the table for 10 - 15 minutes.
Roll out the layer no more than 1.5 cm thick, otherwise you will end up with gingerbread cookies. Now, using a glass or any cutters, cut out the shortcakes. Involve the kids in this activity as they love helping in the kitchen.
Place the prepared shortcakes on a greased baking sheet and place in an oven preheated to 160 - 180 degrees for 15 - 20 minutes.
During this time, you can beat egg whites with powdered sugar to decorate the shortcakes or make chocolate. We did both. We brushed the slightly underbaked shortcakes with egg white glaze and put them back in the oven for literally 5 minutes. During this time, the glaze will harden and will not smear from the finished baked goods.
And you need to dip ready-made baked goods in chocolate.

Step-by-step preparation
- Pour 250 g of white sugar into a deep container.
- Add 50 g of butter to the container with sugar and rub thoroughly until smooth. Please note that the oil should be at room temperature. You can remove it from the refrigerator in advance or soften it by putting it in the microwave for a few seconds.
- Beat 1 medium-sized chicken egg into the resulting mass. If the eggs are very small, you can use 2 pieces. Mix thoroughly.
- Next, pour 250 ml of warm kefir into the container. Mix.
- After this, add a small pinch of salt and 1/2 tsp. baking soda without a slide. Mix thoroughly.
- Pour 500 g of wheat flour into the resulting mixture. You can sift the flour several times beforehand. Let's start kneading the dough. Knead thoroughly so that there are no lumps of flour left in the dough.
- Then add another 250 g of flour to the dough, mix and after the dough becomes too thick to knead with a spoon or spatula, put it on the work surface and begin to knead the dough with your hands. Please note that depending on the thickness of the kefir and the size of the eggs, you may need a little more or a little less flour. The dough should be soft, elastic, and not stick to your hands.
- Round the finished dough and then roll it out into a thin layer using a rolling pin.
- Sprinkle the top of the dough with a small amount of flour and use cookie cutters to squeeze out shortbreads from the rolled out dough. Crumple the remaining dough into a ball, roll it out again and cut out the shortcakes. Repeat until all the dough has been used.
- Next, grease the baking sheet with sunflower oil. The most convenient way to do this is with a silicone brush, but you can also get by with a napkin. Place the shortbread pieces on a greased baking sheet at some distance from each other.
- Preheat the oven to 180 degrees. In a separate bowl, beat 1 chicken egg and brush the top of the shortbread with it.
- Place the baking sheet with the shortcake preparations into a well-heated oven and bake for 10-15 minutes.
- Place the finished shortcakes on a plate and let them cool. If desired, they can be sprinkled with powdered sugar. Bon appetit.
Marble kefir cakes in a frying pan
These shortcakes are called marble because they have a marble pattern; they are often baked in the oven, but they also turn out tasty in a frying pan and do not lose their color. To prepare them you will need the following ingredients:
- flour - 700 grams;
- kefir - 150 grams;
- water - 100 grams;
- eggs - 3 pieces;
- spread - 120 grams;
- sugar - 150 grams;
- cocoa - 50 grams;
- soda - 30 grams;
- vanillin - 5 grams;
- salt.
It takes an hour and fifteen minutes to prepare.
Calorie content is 2956 kcal.
Mix flour, soda, vanillin and salt, divide into two parts and add cocoa powder to one. In a separate bowl, mix liquid ingredients. First, beat the eggs, add sugar, kefir, water and softened spread. Divide the liquid component of the dough into two parts.

Step-by-step recipe for kefir cakes in the oven:
- Grind the butter (which has slightly melted after being out of the refrigerator for two hours) with sugar and a pinch of salt.
- Separate the white and yolk. Protein is needed to make the dough. The yolk is necessary for greasing the baked goods before placing them in the oven.
- Thoroughly mix the butter, sugar, protein and add to them the full amount of honey and kefir. Cover the entire poppy seed. Now mix the dough ingredients again.
- The time has come to introduce flour and baking powder. Sift the flour through a sieve, so it will acquire better qualities and the baked goods will rise more beautifully. At the same time, sift the powder along with the flour and knead the dough. The dough should not be very dense, but elastic - approximately like a cookie. Let the finished dough “rest” in the refrigerator for about five minutes and now begin to form the shortcakes.

Cakes and gingerbread have been baked in Rus' since ancient times. But their difference is that gingerbread always contains honey and various spices. And cakes are a simpler and fresher version of baking.

Let's start the process
- First of all, put the melted butter in a container and add granulated sugar. Mix everything well and beat in the egg. Using a mixer, beat everything and pour in kefir. We continue the beating process.

Pour sifted flour and chopped walnuts into the resulting mixture and leave the dough for 45 minutes in a warm place, covering the top with a towel. Now we divide the dough into several equal parts, rolling each into a cake about 1 centimeter thick. Sprinkle the top of the cake with cinnamon, and then use a mold to cut out our future cakes.
Then grease the baking sheet with margarine and sprinkle it well with flour. Place the shortcakes and place them in an oven preheated to 180° for 10 minutes, then reduce the heat slightly and bake for another 10 minutes. To check the shortbread for doneness, lightly press the surface with your finger. If it has returned to shape, then it’s time to remove it from the oven. All the delicious kefir shortcakes are ready. You can serve them either warm or cooled!

Ingredients:
- chicken egg – 1 pc.;
- kefir – 150 ml;
- granulated sugar – 100 g;
- vanillin – 3 g;
- soda – 0.5 teaspoon;

Preparation

- sugar – 3 tbsp. spoons;
- salt - a pinch.
Preparation
Mix flour with soda and sift thoroughly through a sieve. Lightly melt the butter and knead until all lumps disappear. We wash the raisins under warm water, drain them in a colander, dry them, and then pour boiling water over them for 10 minutes so that they swell a little. Next, drain the water, wipe the raisins with a towel, put them in a bowl and fill them with liquid honey. Pour kefir into a saucepan, add sugar, add a chicken egg, and a pinch of salt. Mix everything thoroughly and knead a homogeneous soft dough that does not stick to your hands. Cover it with a towel and leave for 30 minutes in a warm place. I mash the egg separately with a fork, then pour it into the dough. I stir. I melt the butter and pour it into the mixture.
I add vanillin and wheat flour. I knead the dough thick, but it sticks. And to check its correctness, you need to put it in a spoon and put it back. If the mass does not immediately spread, it means that the desired density has been achieved.
Place a parchment sheet on a baking sheet and coat it with oil. I take a tablespoon and lay out the shortcakes. They will then blur a little and the surface will become smooth. Sometimes I sprinkle some sugar or seeds on top.
I preheat the oven to 190 degrees. I place the pieces in it and bake for 24-27 minutes. I serve warm shortcakes with your favorite drink. The composition of the ingredients is the simplest and most affordable, and the baked goods are soft and very aromatic. They can even be cut into two halves and coated with boiled condensed milk. We buy kefir - I usually ask, give me the old one, it’s not the freshest, it’s better for baking. It doesn’t matter what fat content, I took 1%.
Pour kefir into a bowl, quench the soda in it, if it is well sour, if not, quench the soda with vinegar. Add salt, add oil.
Add sifted flour little by little and stir. When the dough stops sticking to your hands, but is soft and elastic, leave it to rest for a while.
Then divide the dough into equal two parts. Cut into pieces.
Either roll it out with a rolling pin, or simply flatten it into a circle with your hands. Pierce it a little with a fork.
The frying pan should already be warmed up by this time. Pour literally a spoonful of butter into it, and put the shortcakes to bake.
