On the eve of Maslenitsa week, I would like to write as much as possible about pancakes. After all, this dish is relevant not only at the end of winter, but throughout the year. For example, we often cook them on weekends. And my daughter, if you put a stack of pancakes and sour cream in front of her, she won’t eat any other food at all. Therefore, I have collected a large collection of dough recipes made with milk, kefir, and water. But today we will talk about fillings.

And there are a great many of them! And everyone will find something they like. Stuffed pancakes are more satisfying. The filling can be either sweet or not. Therefore, you will have time to try preparing several options and choose the best among them.

By the way, pancakes don’t have to be thin and lacy; you can make pancakes for variety. They are generally very easy to make. They are very fluffy and baked in a dry frying pan. In general, I recommend trying it.

Cottage cheese filling for pancakes

The most delicious filling, in my opinion, is curd. It is very delicate in consistency. This dish goes well with delicious, freshly brewed tea. Overall, this is a great snack or breakfast for the whole family, and it’s also very healthy.

We will need:

  • pancakes;
  • cottage cheese - 200 g;
  • sour cream - 2 tablespoons;
  • sugar - 50 g;
  • vanilla sugar - 1 teaspoon.

Preparation:

1. Knead the cottage cheese with regular and vanilla sugar.

Then add sour cream and mix everything well.

You can use a blender, then the consistency of the filling will be more homogeneous and without grains of cottage cheese.

2. Place a tablespoon of cottage cheese on the pancake and wrap it in the desired way.

This is such a fantastic dessert with lots of sweet, creamy filling!

In the above recipe, only eggs and mayonnaise are used when kneading the dough. That's why the pancakes turn out more like a thin omelette. But the dough for the next snack is prepared a little differently. We’ll tell you exactly how in the following step-by-step instructions:

  • Beat eggs (2 pcs.) with kefir (4 tbsp), a pinch of salt, starch and flour (1 tsp each).
  • Bake 6-8 thin pancakes from the resulting dough.
  • Prepare the filling from soft processed or cream cheese (2 tbsp), mayonnaise (1 tbsp), a clove of garlic and finely chopped dill. Separately, coarsely chop 7-8 crab sticks. Wash spinach or lettuce leaves and dry on a paper towel.
  • Prepare a snack. To do this, grease the pancakes with sauce, place the filling of leaves and crab sticks in the center and wrap it in the form of a tube.
  • An appetizer of egg pancakes with filling, served cold. For convenience, long tubes can be cut into several parts.

    Delicious chicken liver filling

    For those who prefer meat fillings, I suggest stuffing pancakes with chicken liver. By the way, it can be either pork or beef, depending on which one you like best. This dish will definitely not damage your family budget!

    We will need:

    • pancakes;
    • chicken liver - 0.5 kg;
    • onions - 1 pc.;
    • salt pepper;
    • vegetable oil.

    Preparation:

    1. Peel and finely chop the onions. Fry in vegetable oil in a frying pan.

    2. Clean the chicken liver, rinse and cut into small pieces. We also send them to the onions to fry until tender. Salt and pepper.

    When everything is ready, remove from heat and leave to cool completely.

    3. Pass the filling through a meat grinder or blender.

    We will need:

    • Pancakes - 10 pcs.
    • Chicken egg - 2 pcs.
    • Onion - 1 pc.
    • Champignons – 300 g
    • Vegetable oil - 1 tbsp.
    • Salt and pepper to taste
    • Green onion - 2-3 feathers

    Preparation:

    Wash the champignons and dry them with paper napkins. Remove the film from the mushroom caps and cut into small cubes

    Peel the onion and cut into cubes. Heat the vegetable oil in a frying pan, fry the onions and mushrooms until tender, 5-8 minutes, stirring

    Add salt and ground black pepper to taste. Add finely chopped green onions to the pan and simmer the vegetables for a couple more minutes. Remove the prepared vegetables from the heat and cool for 10-15 minutes.

    Mix the filling, taste for salt, add more salt if necessary. Place 1 tbsp on one edge of the pancake. filling and roll it up into an envelope or tube in a convenient way for you. We do this with all the pancakes. From the prepared amount of filling we got 10 pancakes with mushrooms and eggs

    I froze some of the pancakes with champignons and fried the rest of the pancakes in a dry grill pan for 2-3 minutes on each side. Serve pancakes stuffed with mushrooms and eggs, with sour cream. Bon appetit!

    Meat filling for minced pancakes

    Another option for savory filling. And probably the most common. After all, everyone loves pancakes with minced meat. This snack will definitely satisfy your hunger for a long time. Add more of your favorite spices, and then the dish will acquire even greater taste and aroma!

    We will need:

    • pancakes;
    • minced meat - 300 g;
    • onions - 1 pc.;
    • vegetable oil.

    Preparation:

    1. Fry the minced meat in a frying pan in vegetable oil, adding salt and pepper.

    Then we clean and finely chop the onion. Fry it together with the minced meat until cooked.

    2. Fill the pancakes with filling and wrap them in the desired way. A very satisfying dish that will probably be more loved by men!

    Curd filling with raisins

    If your children don’t particularly like cottage cheese, then add raisins to it. And if you also wrap such a delicious dish in a pancake, then I’m sure your little one will eat this dish even before you serve it on the table. Adjust the amount of sugar as desired.

    We will need:

    • pancakes;
    • cottage cheese - 300 g;
    • raisins - 50 g;
    • sugar - 2 tablespoons.

    Preparation:

    1. Pour boiling water over the raisins and leave for 5 minutes. Then drain the water and squeeze out the raisins.

    2. Mix raisins with cottage cheese and sugar. The filling is ready!

    Test composition:

    200 ml hot water

    • 2 eggs
    • 200 ml milk
    • 280 g wheat flour
    • 1/3 tsp. salt
    • 3 tsp Sahara
    • 2 tbsp. vegetable oil

    For the filling you will need:

    • 170 g lightly salted salmon or salmon
    • 250 g cream cheese

    Step-by-step preparation

    1. Pour milk and hot water into a bowl. Beat the eggs, add salt and sugar. Whisk the mixture vigorously. Then add the sifted flour little by little without ceasing to stir. At the end, pour in a small amount of vegetable oil.

    I really love the ham and cheese filling. Firstly, it is very fast, and secondly, it is delicious. Especially if you heat the pancakes in a frying pan or in the microwave, where the cheese will melt and begin to stretch when eaten.

    • ham - 250 g;
    • cheese - 250 g.

    Preparation:

    1. Cut the ham into cubes or strips, and grate the cheese on a coarse grater.

    • boiled rice - 200 g;
    • onion - half a head;

    Preparation:

    1. Chop the onion and fry in a frying pan in oil. Then add minced meat to it and cook for another 20 minutes, adding salt and adding your favorite spices as desired.

    Leave the finished minced meat to cool. And then mix it with boiled rice.

    This is not just a chicken filling, it’s just a real pancake pie under a cheese cap. This dish will surprise even the most fastidious gourmets. And your family will definitely be delighted with it. Tomatoes, herbs, cheese - it’s just incredibly delicious!

    We will need:

    • pancakes;
    • chicken breast;
    • cottage cheese;
    • canned corn - 150 g;
    • cherry tomatoes - 10 pcs.;
    • greenery;
    • salt and pepper;
    • vegetable oil for frying.

    Preparation:

    1. Fry the chicken breast in a frying pan until cooked on both sides. Don't forget to add salt and pepper.

    2. Then we chop it either with a knife, or simply disassemble it into fibers with our hands. Place in a deep bowl.
