A simple recipe for barley with vegetables

For a long time, pearl barley porridge occupied a place of honor on the table. It was called royal and was prepared with great pleasure. By adding vegetables to pearl barley, you can significantly diversify its taste.

The simplest recipe:

  • pearl barley – 350 g;
  • onions – 2 pcs.;
  • small tomatoes – 2 pcs.;
  • bell pepper – 1 pc.;
  • parsley – 1 bunch;
  • spices, salt - to taste.

You can significantly reduce the cooking time for pearl barley if you rinse and soak the barley in warm water for 7-9 hours beforehand, preferably overnight.

Cooking option:

  1. Drain the water in which the pearl barley was infused and rinse. Pour it into a saucepan, add a liter of water and salt.
  2. Bring to a boil, simmer for 30-40 minutes over low heat. Afterwards, drain the cereal in a colander to remove excess liquid.
  3. Prepare vegetables. After removing the seeds, finely dice the pepper. Chop the onion into thin half rings. Chop the tomatoes into medium cubes. Finely chop the parsley.
  4. Fry the peppers and onions in a well-heated frying pan with vegetable oil for 10-15 minutes. Add pearl barley to them and fry for another 5 minutes. Don't forget to stir constantly!
  5. Add tomatoes and parsley to the porridge. Season with black pepper and other spices to taste. After 2-3 minutes, remove from heat. Pearl barley porridge with vegetables is ready.

The prepared dish will become an indispensable breakfast for the whole family. Tender, melt-in-your-mouth porridge will provide useful elements and fill you with energy for the whole day.

Before preparing pearl barley with vegetables and beef, you need to prepare the ingredients. First of all, you should boil the pre-washed and soaked cereal. When it is ready, it is removed from the heat and wrapped in a blanket.

Pre-washed and chopped meat is fried in vegetable oil. When it is covered with a golden crust, it is salted, seasoned with spices, filled with water and simmered over moderate heat until cooked.

After this, washed and chopped champignons are added to the meat. Mix everything carefully and simmer for about a quarter of an hour. Then put diced onions and shredded carrots into a container with beef and mushrooms. Literally ten minutes later, pre-thawed green peas are sent to the softened vegetables and almost immediately the whole thing is combined with boiled pearl barley. Mix everything carefully and remove from heat after a couple of minutes.

With chicken in the oven

Pearl barley porridge is a universal product. It goes well not only with vegetables, but also with meat. It’s very tasty if you bake it in the oven with chicken.

Product composition:

  • whole chicken – 1.5 kg;
  • pearl barley – 1 tbsp.;
  • carrots – 1 pc.;
  • onions – 1-2 pcs.;
  • prunes – 9-10 pcs.;
  • spices, salt - to taste;
  • sleeve for baking.

Preparation:

  1. Pour 4 cups of cold water over the raw cereal and cook for half an hour. Drain the water, cool slightly.
  2. Cut the onions and carrots into cubes. Pour boiling water over prunes. Mix everything with pearl barley. Add salt and spices to taste.
  3. Rinse the chicken, rub the inside and outside with salt and pepper. Fill with a mixture of pearl barley and vegetables.
  4. Place the chicken in the sleeve along with the rest of the porridge. Bake for an hour in an oven preheated to 180 degrees.

Prunes add an interesting, sweet note to the dish. It will decorate the holiday table and delight you with its unusual taste.

With greens

This dish is prepared from pearl barley, vegetables and herbs.

The dish contains the following ingredients:

  • 1 multi-cup pearl barley;
  • 2 tomatoes;
  • 1 onion;
  • 1 carrot;
  • 2.5 multi-glasses of water;
  • 25 g of greens;
  • sunflower oil;
  • table salt.

Main stages of preparation:

  1. First, you will need to rinse the pearl barley several times until the water is clear, then fill it with heated water and wait 5-8 hours for it to swell. Then you need to peel the onion, wash it and chop it into cubes.
  2. Afterwards, wash the carrots, peel and grate using a grater with a coarse grid. Tomatoes need to be poured with boiling water, peeled and cut into small cubes.
  3. Next, you need to start the “Frying” program, pour sunflower oil into the multicooker bowl, warm it up, then put chopped vegetables in it and fry them for 5 minutes.
  4. Then you need to add pearl barley, mix well, pour in water, add a little table salt and mix everything. Afterwards, you need to turn on the “Porridge/Rice” mode and cook the dish for 40 minutes.
  5. Now you can rinse the greens, dry them using paper towels, and chop them into small pieces. In 10 min. until ready, add chopped herbs and stir.

Ready.

Nourishing dish in pots

Pearl barley porridge is great for Lenten dishes. If you add mushrooms, you can cook delicious barley in pots.

Recipe composition:

  • pearl barley – 1 tbsp.;
  • fresh champignons – 250 g;
  • onions – 2 pcs.;
  • carrots – 1 pc.;
  • dried parsley – 1 pack;
  • vegetable oil – 3-4 tbsp. l.;
  • salt - to taste.

Cooking process:

  1. Soak the cereal overnight, then drain the water and rinse thoroughly.
  2. Finely chop, then fry the onion. Cut the carrots into small cubes and the champignons into thin slices. Mix everything with pearl barley.
  3. Place into pots. Add half a teaspoon of salt to each, then a tablespoon of vegetable oil. Crush with dried parsley.
  4. Pour in hot water to cover the porridge by 2 cm. Place in the oven, preheated to 200 degrees, for an hour and a half. Garnish with fresh dill sprigs.

Champignons can be replaced with any other mushrooms, and fresh ones with dried ones. If desired, sprinkle with grated cheese 10 minutes before readiness.

Recipe for pearl barley porridge with meat and vegetables in the oven

In this example, pork is used; this meat is quite fatty and softer than beef. Again, if you wish, you can cook this dish with chicken, turkey, or beef tenderloin - it all depends on personal preferences, the general essence of the recipe will remain the same.

Ingredients:

  • Meat (for example, pork) – 500 g.
  • Pearl barley – 300 g.
  • Onions – 2 pcs.
  • Carrots – 1 pc.
  • Bell pepper – 0.5-1 pcs.
  • Vegetable oil (unflavored) – 3 tbsp. spoons;
  • Butter – 30 g.
  • Ground turmeric – 1 teaspoon;
  • Ground paprika – 1 teaspoon;
  • Dried garlic – 1 teaspoon;
  • Salt – 0.5-1 teaspoon (to taste);
  • Black pepper - optional;
  • Green onions for decoration;
  • Water;

How to deliciously cook pearl barley with meat in the oven

Step 1. The first thing you need to do is prepare the cereal. We sort the barley from pebbles and other debris, rinse it with water, then fill it with clean cold water and leave it for 8-10 hours. To save time, this is usually done in advance. We soak it from evening to night, and the next day you can immediately start preparing the dish.

Step 2. Cut the pork meat into small pieces. In cubes or cubes, slices - at your personal discretion.

Step 3. Clean and finely chop the onions. Also grate three large carrots. Well, you can immediately peel the seeds and finely chop the bell pepper.

Step 4. Heat about 3 tbsp in a frying pan. spoons of vegetable oil, add the onions first. Fry over low heat until the onion becomes translucent as in the photo below.

Step 5. Now add pieces of meat to the onion, fry and stir for a few minutes. The meat should lighten in color.

Step 6. Add grated carrots to the same pan, mix and fry for another 2-3 minutes. Then add the sweet peppers and let them simmer for another 3 minutes.

Step 7. The meat changed color, the vegetables became softer and turned red in places. At this stage, add spices. Add turmeric, ground sweet paprika, salt to taste and add a teaspoon of garlic powder for additional flavor. Stir, fry for 2 minutes, and then turn off the heat.

If you don't like turmeric or any other spice on this list, you don't have to add it. In this case, use the spices that you like best. You can take a closer look at the ready-made mixtures, which have names: “for meat”, “for chicken”, “for pork”, etc.

Step 8. The pearl barley was infused in water in advance and noticeably swollen. Drain off the remaining water. Distribute the cereal along the bottom of the mold. Place the roasted vegetables and meat evenly on top.

Step 9. Carefully pour in about 600 milliliters of hot water. And spread out the pieces of butter.

The oil is here for the aroma and additional juiciness and richness of the pearl barley. As they say, you can't spoil porridge with butter. But if you don’t want to, you can bake it without oil, it will be less caloric.

Step 10. That's it, now cover the top tightly with foil and place in an oven preheated to 180 degrees for about 50-60 minutes. Everyone's oven is different, so be guided by your own conditions. But no less than 40 minutes for sure, because... pearl barley requires a long heat treatment compared to buckwheat.

Time is up, note that all the liquid has been absorbed into the cereal. Vegetables and meat were steamed well. The aroma is simply wonderful!

Before serving, decorate with fresh chopped herbs, in this example we used green onions, but dill, parsley, basil, cilantro, etc. would also work.

Salad with pearl barley and vegetables for the winter

Housewives often use porridge for canning. It’s not difficult to prepare a winter salad from pearl barley and vegetables. It compensates at least a little for the vitamin deficiency in winter.

The recipe consists of:

  • tomatoes – 5 kg;
  • onions – 1 kg;
  • carrots – 1 kg;
  • pearl barley – 2 tbsp;
  • bell pepper – 7 pcs.;
  • vegetable oil – 1 l;
  • sugar – 1.5 tbsp;
  • salt – 4 tbsp. l.

Cook sequentially:

  1. Chop vegetables. Tomatoes - in medium-sized pieces, peppers - in small cubes, and onions - in thin half rings. Grate the carrots on a coarse grater.
  2. Rinse the pearl barley and mix it with vegetables in a deep saucepan. Pour in the oil, add salt and sugar.
  3. Wait until it boils, then simmer over low heat for 2 hours. Stir so that the salad does not stick to the bottom and does not burn.
  4. Place the finished dish into jars and seal tightly.

It is important to remember that you need to preserve only in sterilized jars, after careful heat treatment!

When serving, you can season with black pepper for spiciness. This salad will add bright colors to gray winter days.

Step-by-step technology

Onions and garlic are peeled, chopped and placed in a frying pan greased with heated vegetable oil. After a couple of minutes, add finely chopped carrots and large pieces of zucchini. Mix everything well and continue cooking over moderate heat. Literally a minute later, add salt, spices and pre-washed cereal to the frying pan. Then they put it all into portioned pots, pour boiling water over them, cover with lids and put them in the oven. Barley with vegetables is prepared, the recipe for which is presented just above, at one hundred and eighty degrees. After about an hour, it can be removed from the oven and served.
