Preparation of the main ingredient

Today in stores and on the market you can find already peeled tripe. Such a purchase will allow you to avoid unpleasant odors in the house and difficulties in preparing it. Any tripe treat begins with boiling it over low heat for several hours. A properly prepared gizzard should be chewable. And in order for this to happen, you must adhere to technology.

The first step is to properly prepare the tripe. It is necessary to completely cut off the fat, which is not eaten due to the unpleasant odor. Keep in mind that if you remove it only partially, then the salad you make will simply be ruined. After the fat is cut off, the tripe should be washed well under running water.

After the manipulations have been completed, the stomach must be placed in a weak solution of potassium permanganate, leaving it there for 2-3 hours. You can replace it with vinegar diluted with water. After this, the tripe must be thoroughly washed again.

Now the stomach should be thoroughly rubbed with salt on all sides and left like that for half an hour. And only after that you need to rinse it again, and then proceed directly to cooking. Only through proper preparation can you get rid of the unpleasant odor inherent in tripe.

With onion

Korean tripe (its recipe will appeal to all lovers of savory snacks) can be added to the menu even during a diet. After all, such an offal contains no carbohydrates, but contains more than 96% proteins. To make the tripe snack even healthier and tastier, you can combine it with onions. What ingredients will you need?

For the dish you need to take:

  • beef tripe (already cooked) – 900-950 g;
  • white onion – half a kilo;
  • filtered water – 3 l;
  • bay leaf – 5 pcs.;
  • black pepper – 1 tsp. (peas) + 1 tsp. (ground);
  • mixture of aromatic herbs for second courses - 1 tbsp. l.;
  • vegetable oil – 60 ml;
  • red hot pepper – ½ tsp;
  • sweet paprika – 3 tsp;
  • coarse salt, classic soy sauce and white sesame seeds - 2 tbsp each. l.;
  • table vinegar (70%) – 1.5 tbsp. l.;
  • garlic – 3 cloves;
  • curry – 1 tsp.

From the specified amount of products you will get approximately 10-12 servings of snacks. When cooking tripe, you should add bay leaf, peppercorns, a mixture of aromatic herbs, and salt.

In this form, cook the product for about 2 hours over low heat. Be sure to constantly remove foam from the surface of the liquid.

Step-by-step cooking process

Stages:

  1. When the tripe is cooked until soft, it must be cooled completely and cut into small, neat strips.
  2. The onion needs to be peeled and then chopped into thin half rings.

  3. After which, pour in vinegar so that it covers all the pieces, and leave in this form for about a quarter of an hour.
  4. In the next step, you can mix pieces of completely cooled tripe with already pickled onions and chopped garlic. The latter must first be peeled and then chopped into miniature cubes. All ingredients must be mixed very thoroughly.
  5. Next, in a dry frying pan, you need to heat the sesame seeds so that they slightly change color, and pour them into the tripe with the onions. Afterwards, fry the spices in oil in the same bowl. They should warm up well.
  6. All that remains is to pour boiling oil with seasonings over all the mixed ingredients, and also add soy sauce. The latter can be taken longer to suit your taste.

The almost finished appetizer should be kept cool for at least 2 hours. Next, you should serve it to the table.

Rules for serving dishes, decoration

This recipe makes a complete ready-made salad. You can serve it as an independent snack, for example, with soft bread or golden brown croutons. Another option is to wrap the tripe salad in pita bread and lightly fry on both sides in a dry frying pan.

Recipe for “Korean-style beef tripe”:

Cut the pre-washed, cleaned tripe into wide strips. I only buy cleaned tripe, so I cannot describe the process of processing beef stomach.

Boil tripe in 4 liters. water for 3 - 4 hours, removing foam. To remove a specific odor, add onion, carrots, parsley roots and dry dill to the water.

Rinse the cooked tripe under warm water and dry on a paper towel. Cut into bars.

Cut the washed peppers and cucumbers into medium strips.

Peel the garlic, chop it or use a garlic press. Wash the parsley, dry it, chop it finely. Wash and chop the garlic arrows. Without garlic shoots, increase the amount of garlic.

Place vegetables and herbs on the tripe.

Add sugar, hot red and black ground peppers, ground coriander, vinegar, and soy sauce.

Peel the onion and cut into half rings. Heat the vegetable oil, add the onion and, stirring, cook in the oil until transparent. This will take 3 – 4 minutes.

Add hot oil with onions to the mixture, sprinkle with sesame seeds, stir. Let cool. It is better if you leave the salad for 3 – 5 hours or overnight. All the flavors will combine, the vegetables will give up their juices, and in return will be soaked in soy sauce and garlic.

  • cilantro and sesame seeds - a large pinch each;
  • soy sauce – 2-3 tbsp. l.;
  • red hot pepper - to taste;

  • oil, salt, fresh herbs.

Step-by-step cooking process

The cooking process includes several stages:

  1. First, the tripe must be thoroughly cleaned of all excess and rinsed under running cold water. Next, the offal should be placed in a saucepan, filled with water and left to simmer over a slightly lower than medium heat. The tripe will take approximately 80-90 minutes to prepare. As a result, the tripe should become very soft and tender. If necessary, you can increase the time.
  2. Already prepared tripe should be cut into small strips and placed in a large bowl convenient for mixing.
  3. White onions need to be peeled, washed, and then cut into thin half rings. The resulting vegetable pieces are placed in a separate bowl and sprinkled with vinegar essence. You need to take a little of the latter so that it is all absorbed into the onion.
  4. In the next step, the oil is heated in a saucepan. Chopped garlic, ground cilantro and sesame seeds, and red hot pepper are poured into it. The amount of the latter is determined according to taste, so that the treat does not turn out too spicy. The spices will need to be slightly warmed in vegetable fat.
  5. All that remains is to mix the pieces of offal with chopped onions, chopped herbs, pour over heated oil with spices, and soy sauce.

Afterwards, you need to leave the treat in a cool place for 25 hours. Then you can serve it to the table.

7. Cook over low heat for four hours from the moment it boils. No need to add salt. Remove the tripe from the pan and place it on a plate. Let it cool. Cut the offal into thin strips and place in a deep salad bowl.

8. Peel the onions and cut them into thin half rings. Remove seeds from bell peppers and wash under running water. Cut the pepper into strips. We also peel the garlic and pass it through a press.

9. Add onions, bell peppers, and garlic to the salad bowl. Season with spices for Korean carrots, add apple cider vinegar and salt to taste. Mix.

10. Pour vegetable oil into a saucepan. We put it on the fire and heat it up. Pour hot oil into a salad bowl with the main ingredients. Mix thoroughly.

11. Cover the salad bowl with a lid and place in the refrigerator for 2 hours. You can leave it for longer if time permits.

  • fresh garlic – 3-4 cloves;

  • table vinegar/rice (6%) and sesame seeds - 1 tbsp each. l.;
  • oil (any vegetable) – 3 tbsp. l.;
  • sesame – 1 tsp.

For such a snack, you can choose any vegetable oil. Sunflower is good.

The cooking process includes several stages:

  1. Beef tripe will first need to be cleaned of all excess and rinsed with running cold water. Afterwards, cut into small, neat and approximately equal-sized strips.

  2. The prepared pieces of tripe are placed in a pan with plenty of water. Next, they need to be sent to cook over low heat for approximately 3.5-4 hours. This is enough for the offal to be soft and tender. During the process, be sure to periodically remove any foam that appears from the liquid.
  3. To get rid of the unpleasant odor of the product, you should add additional ingredients to it when cooking. This is a whole onion, carrot, parsley root and dill. Vegetables must first be peeled and washed.
  4. When the tripe is completely cooked, it is placed in a colander and washed with warm water. All that remains is to dry the product with paper towels.
  5. Next you can do the vegetables. All vegetables need to be washed and cut. For example, a cucumber (together with a dense dark peel) - in thin cubes. Sweet pepper - remove stems, seeds, membranes and cut into cubes. Peeled onions - thin half rings.
  6. You need to peel the garlic and chop it very finely with a sharp knife. Do the same with pre-washed, dried parsley.
  7. Afterwards, all chopped components, except onions, should be sent to the offal pieces.
  8. All that remains is to pour in classic soy sauce, vinegar, and add all the dry ingredients. The composition of spices in the recipe can be changed to your taste.
  9. The onion is first fried in a hot frying pan with oil and only after that is added to all foods.
  10. All that remains is to thoroughly mix the combined components and let the treat brew for about a quarter of an hour.

Cooking shrimp with wine

Thaw the ingredients and leave on a paper towel to absorb excess water.

Add 2 glasses of wine to 2000 ml of water, any will do, so take the one you like best.

Then you need to wash one carrot and grate it on a fine grater or chop it with a blender, put it in water with chopped garlic. 3-5 cloves will be enough, depending on your preference.

Add spices to taste and wait until the water boils. Boil the shrimp for a few minutes, drain the water, and leave the seafood for half an hour to steep.

Preparation:

  1. It is good to clean beef tripe with a knife, especially if there are dirt particles stuck in the fleecy part of the tripe. Wash the tripe under running water. Place in a cup of cold water until it completely covers the tripe. Add vinegar essence, stir and leave for at least 3 hours to soak and remove the characteristic odor and bitterness.
  2. After soaking, rinse the tripe, cut into palm-sized pieces and place in a pan. Pour water into a saucepan and place it over high heat. Bring the water to a boil, let it simmer for 5 minutes, then drain the water. Repeat this manipulation 2-3 more times. The specific smell of the tripe should disappear.
  3. Pour plenty of clean water over the tripe, add bay leaves and black peppercorns. Bring water to a boil over high heat, then reduce heat and simmer until tender, about 4 hours, adding water if necessary. Don't add salt! Check the readiness of the tripe with a fork; if you can easily pierce the tripe with it, it is ready.
  4. Remove the finished tripe from the water onto a plate and cool.
  5. Then cut into thin strips and place in a clean cup.
  6. Peel the onions, rinse under running water and cut into thin half rings.
  7. Peel the carrots, wash them, grate them into long strips.
  8. Peel the garlic, wash it, grate it on a fine grater. You may need some experience with storing garlic.
  9. In a cup with tripe cut into thin strips, add onions, cut into half rings, carrots grated into long strips, finely grated garlic, seasoning for Korean carrots, add apple cider vinegar, salt to taste, mix well.
  10. Pour the required amount of vegetable oil into a small saucepan and heat it until “white” smoke.
  11. Pour hot oil into a cup with tripe and vegetables, stir thoroughly. It is recommended to sample several times while mixing to add salt or seasoning if necessary.
  12. Cover the cup with the prepared tripe and place in the refrigerator for at least 2 hours.

The longer the tripe is marinated, the tastier and softer it is.

  4. Next, all the components prepared in step 3 are fried in a couple of tablespoons of vegetable oil with red pepper to taste. When the pieces of food have already become soft and slightly browned, you can add them to the chopped tripe.
  5. All that remains is to heat the remaining vegetable oil with Chim-Chim seasoning in a frying pan. When the mixture begins to actively boil, it should be poured into a bowl with the remaining ingredients and mixed thoroughly. If necessary, you can add salt to the treat.

The snack should be infused in a cool place for about 25 hours. After that, you can take a sample from it.
