These dumplings are a universal dish that can exist as a separate dish or be part of others. Today we will prepare a delicious and simple soup with dumplings. They say that the history of making Ukrainian soups began with them.

Poltava is considered the birthplace of dumplings. Initially, this was the food of rural residents, since there was no time for preparation during the sowing season or during harvesting. Nowadays, any restaurant in the city will offer you a signature dish of dumplings. The town even erected a monument to their favorite food! As usual, the dish has relatives in other countries. In Italy it’s gnocchi, for Belarusians it’s dumplings or jackdaws.

How to cook dumplings for soup

What are dumplings made from? Traditional kneading of dough using flour. Potato dumplings made with semolina and buckwheat flour are no less delightful.

Ukrainian girls rolled out the dough into strips, pinched off pieces and threw them into the water. Nowadays, many people cut them to give them an even shape. But many housewives don’t bother too much - they don’t form dumplings at all, simply throwing pieces of dough into the soup with a spoon.

If you decide to follow the folk tradition, then roll out the dough into a layer approximately 1.5 cm thick. Cut into straps up to one and a half centimeters wide, and divide the strips into squares. Or roll the dough into a rope and then also cut into pieces.

Experienced housewives allow the preparations to sit for a while before cooking - to “weather”, then they keep their shape well. There are many recipes, as I already said, keep the simplest and most popular one.

You will need:

  • Flour – 250 gr.
  • Butter – 50 gr.
  • Egg.
  • Water – 50 ml.

Pour water into the flour, add an egg, salt, and knead the dough. Roll into a thin sausage and cut into pieces.

Attention! Do not make large preparations, as the dumplings increase in size when cooked.

Soup with dumplings in chicken broth, just like in kindergarten

I make this delicious soup with dumplings and chicken most often. This is one of the easiest recipes that any cook can handle. As with any other first course, all the ingredients are very simple and straightforward. And you probably already have it at home.

We will need:

  • chicken (any part of it, I have breast);
  • potatoes - 3 pcs.;
  • onion - 1 pc.;
  • carrots - 1 pc.;
  • vegetable oil;
  • Bay leaf;
  • salt and pepper.

For the dumplings:

  • egg - 1 pc.;
  • flour - 3 tablespoons;
  • boiled water - 2 tablespoons;
  • salt and pepper.

Preparation:

1. Take any part of the chicken. I prefer to make soups from breast meat, it makes them lighter. We wash it and put it in a pan. Fill with cold water and set to boil on the stove.

If you cook the first courses, just like me, using second broths, then after boiling, take out the meat, rinse it and the pan. Fill everything with clean water again and put it on the stove to cook. Salt, add bay leaf.

If you prefer to cook soups with the first broth, then remove the resulting foam after boiling, and then add salt and bay leaf.

2. Peel vegetables: onions, carrots and potatoes. Finely chop the onion and sauté in oil in a frying pan. After a couple of minutes, pour in the grated carrots. Fry until soft.

At this time, cut the potatoes. When the chicken is cooked (20 minutes after the start of cooking), take it out onto a plate and add the potatoes to the broth.

Let the meat cool slightly so that it is comfortable to cut it into pieces. Then we chop it and send it back to the broth.

3. When the potatoes are half ready, pour the sautéed vegetables into the pan.

4. And immediately start preparing the dumplings. It's very simple! Mix flour, water and egg. Add a little salt and pepper. Mix everything well.

You can adjust the density of the dumplings yourself. If you want them to be denser, add more flour. For the gentle ones - less.

5. Take a small spoon and dip it in our hot soup (this will help the dough come away from it better). Now take the dough and drop it into the broth. Please note that the dumplings will instantly expand in size, so do not spoon them in with a large spoon.

When all the dough is finished and the dumplings float to the surface, let the soup boil for another 3-5 minutes. Then turn off the stove and pour it into plates. You can serve sprinkled with fresh herbs.

Chicken soup with cheese and garlic dumplings - step by step recipe

The most popular cooking recipe is with chicken broth. The dish is light, almost dietary.

You will need:

  • Chicken – 300 gr.
  • Water – 2.5 liters.
  • Bulb.
  • Carrot.
  • Potatoes – 4 tubers.
  • Sunflower oil - a large spoon.
  • A clove of garlic.
  • Cheese – 50 gr.
  • Egg.
  • Flour – 5 large spoons.
  • Bay leaves - a couple, pepper, salt.

Step by step recipe:

Everyone knows how to cook chicken broth, so I won’t go into detail. Throw chicken meat into cold water and cook after boiling for half an hour if the chicken is store-bought. For poultry, increase the cooking time.

Remove the meat and then use it as you wish. You can chop it into pieces and return it to the pan. Or use it as a second course.

Peel the potato tubers and chop into large cubes. Throw into the broth.

Next, send the bay leaf. I would like to warn you that, as a rule, bay leaves are not added to chicken soups, so this procedure can be omitted.

Chop the onion. Coarsely grate the carrots.

Start frying with onions, after 2-3 minutes add carrot shavings. Fry together until beautifully browned.

Make dumplings: pour vegetable oil into a ladle with water and place on the burner. When the water boils, salt it and remove from heat.

Start adding flour while quickly stirring the contents. It will turn out something like porridge.

Squeeze the garlic into the mass, beat in the egg. Continue stirring the contents of the saucepan.

Add a little more flour and stir. Add grated cheese. Mix the mixture again and the dough is ready.

Add roasted vegetables to the soup.

The last step is dumplings. Make them using two small spoons, it will be more convenient. Moisten them with water, grab a little dough with one, and help throw it into the pan with the other.

Cook for 7-10 minutes, turn off the stove and start helping yourself.

  • Minced chicken – 500 gr.
  • Eggs – 5 pcs.

Cook:

  4. Saute it until golden brown. For frying, you can use lard, butter, sunflower or olive oil.

  5. Place the potatoes into the boiling broth and cook until half cooked, about 5-7 minutes.

  6. Let's move on to preparing dumplings. To do this, boil 90 g of water and add 60 g of wheat flour to it, stirring constantly so that lumps do not form.

  7. Cool the resulting dough and add 0.5 beaten chicken egg to it.

  8. Mix the resulting mixture with a mixer. And knead the dough for dumplings, adding flour.

  9. The dough should be very thick, but it will stick to your hands.

  10. Dip a spoon into cold water, then use it to form dumplings.

  11. And we put them in a saucepan with broth and potatoes.

  12. Add one bay leaf, 4 black peppercorns and sauteed onion to the soup.

  13. Boil covered over low heat for 10 minutes. Add salt at the end to taste.

Serving options

How to make chicken soup with dumplings

  1. Let's prepare the broth. We took 2 chicken thighs, they make the soup rich. If desired, you can use other parts of the carcass - wings or breast. The broth cooked with them will be more dietary.

  2. Place the washed meat in a pan, fill it with water, and put it on the stove. Bring the liquid to a boil, remove the foam, reduce the heat, and cook the broth for an hour. At the end of cooking, add salt.
  3. While the broth is cooking, prepare the dough for the dumplings. Break an egg into a bowl, add a pinch of salt, and add a little flour.

  4. Mix. Add flour until the dough is thick and tight. Roll the workpiece into a ball. Let sit until the gluten in the flour dissolves - this will make the dough more elastic.

  5. Cut off part of the dough and roll it into a thin sausage (about the thickness of your index finger).

  6. Cut the sausage crosswise into small (see photo) pieces. The dumplings are ready. From the specified amount of ingredients you get a lot of them, which will make the soup thick. It’s not possible to make less; we already used one egg. For a pan with a volume of 3-3.5 liters, one handful of dumplings will be enough. Keep in mind that if you are preparing the soup more than once, then after standing in the broth, the egg balls will increase slightly in size. This is fine. Therefore, you should not put a lot of dough in the soup.

  7. Remove the chicken from the finished broth. When the boiled bird has cooled sufficiently, separate the meat from the bones and cut it into pieces.

  8. Peel the potatoes, wash them, cut them into cubes or cubes. Place the vegetable in a saucepan with boiling broth. Immediately add the bay leaf.

  9. Finely chop the peeled onion, grate the carrots on a coarse grater or cut into small pieces.

  10. Pour oil into a frying pan and heat it up. Place carrots and onions into hot fat. Sauté vegetables until soft.

It is not necessary to cook with the pulp, just a marrow bone is enough, and the soup will turn out very satisfying.

We take:

  • Pork – 500 gr.
  • Potatoes – 4 tubers.
  • Eggs – 4 pcs.
  • Onion.
  • Carrot.
  • Flour – 200 gr.
  • Salt pepper.

Preparation:

  1. Boil the pork broth, remove the bone and strain.
  2. Make vegetable frying.
  3. Knead the dough, mix flour with one egg. Roll the dough into a sausage, cut into pieces.
  4. Place the dumplings into the boiling broth and cook until they float to the surface.
  5. Whisk the remaining eggs in a separate bowl. Pour into the broth in a thin stream, while quickly stirring with a spoon.
  6. Add seasonings, adjust the taste of the soup with salt. Cook for 5 minutes, remove from the burner.

Chicken broth soup with dumplings

Dumplings for this soup should be prepared from a cheese-garlic mixture. Actually, this is the whole peculiarity of such a first course.

Ingredients:

  • Chicken broth - 3 l.
  • Potatoes - 6 pcs.
  • Carrots - 1 pc.
  • Onion - 1 pc.
  • Black peppercorns - 10 pcs.
  • Bay leaf - 1 pc.
  • Chicken egg - 1 pc.
  • Garlic - 1 clove
  • Olive oil - for frying
  • Hard cheese - 150 gr.
  • Flour - 1 cup
  • Salt - 1/2 tsp.
  • Greens - to taste

Preparation:

Pour the broth into a saucepan and put on fire. While the broth is boiling, peel the potatoes, wash them and cut them into medium-sized cubes.

Peel the onion and finely chop it. We peel the carrots, wash them and grate them on a coarse grater.

Fry the onions and carrots in vegetable oil for several minutes until golden brown.

When the broth boils, add salt, bay leaf, black peppercorns and potatoes. When the potatoes are almost ready, add the tea leaves to the pan.

Peel the potatoes, wash them, cut them into medium-sized cubes and add them to the boiling broth.

We immediately send the bay leaf and black peppercorns there.

While the potatoes and frying are boiling, you can start preparing the dumplings. To do this, pour 500 g into the container. water, olive oil.

Add salt there and mix everything thoroughly. Then we put the container with the contents on the fire and heat it thoroughly.

When the contents of the container are warm enough, gradually pour flour into it, stirring everything regularly.

When all the flour has been used and the contents of the container have acquired a homogeneous consistency, remove everything from the heat and let it cool slightly.

While the dumpling dough is cooling, grate the cheese on a coarse grater and beat the egg in a small plate.

Add cheese and egg to the slightly warm dough and mix everything thoroughly. The resulting dough is completely ready for making dumplings.

Using a teaspoon, add dumplings from the prepared dough to the soup. This should be done when all the vegetables are completely ready.

Together with the dumplings, simmer the soup for a few more minutes until they float to the surface. Before serving, add chopped herbs to bowls of soup.

Simple soup with dumplings without meat - water recipe

The recipe contains plenty of vegetables. Additionally, you can add green beans, tomatoes, broccoli, lentils, eggplant, and cauliflower to the soup.

Ingredients:

  • Potatoes – 3 tubers.
  • Bell pepper.
  • Carrot.
  • Cauliflower – 400 gr.
  • Garlic – 2 cloves.
  • Tomatoes – 3 pcs.
  • Onion.
  • Flour – 2 large spoons.
  • Salt, herbs, pepper.

How to cook:

  1. Make dough for dumplings from potatoes, eggs and flour cooked the day before.
  2. Fry the chopped garlic cloves and onion. Add grated carrots, diced tomatoes (scald them and remove the skin). Simmer the vegetables for 10 minutes.
  3. Let the water boil. Cut the sweet pepper into small cubes and separate the cauliflower into florets.
  4. Place in boiling water, cook for 15 minutes.
  5. Make dumplings and leave to cook. After 5 minutes, add the stewed vegetables.
  6. Boil at a low simmer for another 5 minutes, remove from heat.

  3. Onions and carrots should also be washed, peeled and chopped - chop the onion and grate the carrots.
  4. The wheat flour must be sifted, then add salt to it, break the egg and knead the dough.
  5. After the specified amount of time, the pork must be removed from the water, cooled and cut into cubes. At this time, dumplings should be placed in the broth.
  6. After 15 min. You need to add potatoes and carrots and onions pre-fried in vegetable oil to the broth.

  2. Chop the onion. Divide the lard into small cubes.
  3. Place lard in a frying pan and fry. When the fat is released, add the onion slices.
