If you ask any child what meat dish he likes best, you will probably hear in response that it is a cutlet. It’s not for nothing that kids love hamburgers so much, but today we won’t talk about harmful “fast food”, but about how to make healthy and very tasty chicken zrazy with cheese. Everyone, or at least many, know that zraza is an original cutlet with filling, and there are incredibly many options for fillings for such meat balls.

Recipe 1: chicken zrazy with egg (step-by-step photos)

You need much less minced meat than for cutlets, but in the end the plate contains quite impressive “cutlets” with a hearty and tasty filling.

To prepare 16 times:

  • 1 kg minced meat (chicken, turkey, pork, beef)
  • 6 boiled chicken eggs
  • 2 large onions
  • Salt pepper
  • Rusks for rolling

Preparation:

  1. Fry the onion until golden brown. Onions fried in butter are much tastier. To prevent the butter from burning, add a little olive or vegetable oil to it.
  2. Finely chop the boiled eggs and mix with onions. Salt and pepper. The filling is ready. I don’t add salt to the filling; I like its slightly sweet taste in the zrazy.
  3. Wet your hands with cold water and form the minced meat into a flat cake. Place the filling in the middle (put more or less of it - decide according to your taste).
  4. Pinch the edges. If a “hole” has formed somewhere, patch it with a small piece of minced meat. Don't forget to lightly wet your hands with cold water - this will make working with minced chicken much easier.
  5. Roll each one immediately in breadcrumbs. Then there are several cooking options: 1) fry the zrazy in a frying pan; 2) bake zrazy in the oven; 3) first lightly fry (until golden brown, literally a few minutes on each side), and then place in the oven and finish cooking in it. I cook the third way.
  6. I lightly fried the zrazy, and then put it on parchment or a silicone mat and put it in an oven preheated to 180 C for 30-40 minutes. Chicken zrazy cooks a little faster (30 minutes is enough for them), and beef or pork take 40 minutes.
  7. Following family tradition, I serve these zrazy exclusively with mashed potatoes :)!!! Delicious! Enjoy your meal!

Meat zrazy with potato filling in the oven

I can’t resist including this recipe, even though it has other fillings. But at the same time, it is so delicious that I still want to share it with you. Although you can also add a boiled egg here. I described a more simplified version, with water. But you can also make a full-fledged sauce: mix tomato paste plus sour cream or mayonnaise, and also add some spices. Pour in water and stir.

Ingredients:

  • Minced chicken – 1 kg
  • Bell pepper - 1 pc.
  • Tomato - 1-3 pcs.
  • Boiled potatoes - 1-3 pcs.
  • Onion - 1 pc.
  • Parsley and dill - a bunch
  • Salt, pepper and seasonings (for chicken, khmeli-suneli) - to taste
  • Garlic - 3 cloves
  • Water - 1.5 cups

Preparation:

1. Finely chop the onion and garlic, or grind in a blender. Finely chop the greens. Add all this to the minced meat. Put salt, pepper and seasonings there. Mix well and beat (lift the minced meat over a bowl or table and throw it back with force) 10-15 times.

2. For the filling, cut boiled potatoes and tomatoes into slices. Peel the bell pepper from seeds and cut into medium pieces.

3. Now take a portion of minced meat, form a ball and make a depression in the middle. Place a piece of pepper there, then a piece of potato and a slice of tomato. Fill the top and align it into an oval shape. Place the preparations on a baking sheet. Pour about 1.5 cups of water into the pan to cover 1/3 of the sheet.

4. Preheat the oven to 180 degrees and place a baking sheet there. Bake for 30-40 minutes. At the same time, make sure that the water does not evaporate completely. And then put it in a dish and serve. The aroma will be simply amazing. And the taste of the zrazy is such that you can swallow your tongue.

Recipe 2, step by step: chicken zrazy with mushrooms

Let's prepare chicken zrazy. We will offer a classic version of the recipe - minced chicken zrazy with the addition of boiled eggs and mushrooms.

  • Chicken breast - 5 pcs. medium size
  • Onions - 2 pcs.
  • Mushrooms - approximately 200 g
  • Eggs - 4 pcs.
  • Cream - 3 -5 tbsp.
  • Vegetable oil - for frying
  • Salt - approximately 2/3 tsp.
  • Spices (mixture of peppers, turmeric, coriander) - to taste

Ingredients for the sauce:

  • Water – 600 ml
  • Sour cream – 200 ml
  • Soy sauce - 1 tbsp. l.
  • Salt and spices - to taste

Preparation:

  1. Pass the chicken breast through a meat grinder. Add one onion to the minced chicken.
  2. For juiciness, add cream to the minced meat. Now the minced meat should be salted and seasoned to taste.
  3. Mix well and beat out the minced chicken. Fry the chopped mushrooms in vegetable oil until half cooked.
  4. Add chopped onions to the mushrooms. Cut the eggs boiled for 7 minutes into cubes.
  5. In a plate, combine fried mushrooms and onions with eggs. Salt the filling. Now the filling should be seasoned with spices.
  6. Mix and taste what you get. Let's prepare a baking dish and a plate of water. Dip your palm in water. With a damp hand, take some minced meat, the size of a ball, and spread it into a flat cake.
  7. Put a little filling into the flatbread, about 1.5 tsp. We connect the edges of the zraza and hide the filling inside. With wet hands we smooth out the unevenness and complete the appearance of the product.
  8. One by one, place the zrazy in the mold and sprinkle with the remaining filling, if any. Now let's start preparing the sauce - prepare the necessary products.
  9. Pour 600 ml of water into a ladle and place it on the stove. When the water boils, add sour cream. Add a tablespoon of soy sauce.
  10. Add spices to taste. If necessary, you can add more salt to the sauce. Bring the sauce to a boil. As soon as the sauce boils, pour it into the baking dish.
  11. Preheat the oven to 180 degrees. Place the zrazy in the preheated oven. As soon as the zrazy and sauce boil, set the timer for 30 minutes and wait until the end of cooking.
  12. As soon as the timer signals readiness, remove the dish from the oven and let cool slightly. About 10 minutes after the end of cooking, the stuffed cutlets can be placed on plates, garnished to taste and devoured by both cheeks!

Recipe 7: chicken zrazy with a side dish of vegetables

Chicken zrazy with mushrooms is the perfect combination of tender minced chicken and aromatic champignons. The ingredients for this dish were selected very carefully to make the zrazy delicious, but at the same time easy to prepare at home.

As a side dish for this dish we will cook pumpkin and cauliflower. These vegetables will be a piquant addition to the taste of chicken zraza. You can use spices as you wish, however, for convenience, we will present a list of the most popular ones below. There is also a step-by-step recipe for preparing chicken zrazas with mushroom filling with photos.

We will cook the filling in a frying pan so that the mushrooms and onions are maximally saturated with their own juice and taste. We will cook the chicken zrazy itself in the oven. If you add roasted peanuts during the preparation of the side dish, then this dish will turn out even more tart, satisfying and tasty.

Let's start preparing delicious chicken zraza for dinner.

  • minced chicken – 370 gr
  • champignons – 200 gr
  • onion - 1 piece
  • pumpkin - 300 gr
  • cauliflower – 200 gr
  • peanuts - a handful
  • sunflower oil - for frying
  • spices and seasonings - to taste
  • salt - to taste

Preheat the oven to 180 degrees. Cut the peeled onion into rings or half rings of small width. Champignons absorb water too quickly, so we wash them under running water, dry them with a paper towel and cut them into neat plates, then cut the plates in half. Heat a frying pan with a small amount of sunflower oil and fry the onion in it for 4 minutes over high heat. Add chopped mushrooms to the pan, mix the ingredients and continue cooking for another 8 minutes, add salt and spices to taste.

We pass the chicken fillet through a meat grinder if you did not purchase ready-made minced meat. Mix the chopped meat, ground black pepper and a little salt in a bowl.

Lightly wet your hands in cold water (this will prevent the minced meat from sticking to your fingers) and form all the meat into 4 identical cakes. The diameter of each cake should not exceed 8 centimeters.

Transfer the onions and mushrooms from the frying pan to a plate lined with a paper towel, allow time to cool and drain off excess oil. On the previously prepared flatbreads, place a teaspoon of the prepared mushroom filling in the center, bring the edges of the meat flatbread to the center and carefully glue the edges of the cutlet together. Line a baking pan with parchment paper, lightly grease it with vegetable oil and place the formed zrazy on it. Place the pan in the oven and bake the cutlets for 10 minutes until the meat is cooked.

To prepare the side dish, we need to wash a piece of pumpkin and cut it into thin but wide layers as shown in the photo. Then you need to heat a frying pan with a couple of tablespoons of vegetable oil and fry the chopped pumpkin in it for 6 minutes over high heat.

Peanuts wrapped in cling film must be crushed with a kitchen hammer into not too small pieces.

We tear the cauliflower into inflorescences and add them to the frying pan with the pumpkin, and add crushed peanuts there too.

Stir and fry the ingredients for another 5 minutes.

Lastly, add the spices to the pan. You can take them at your choice: aromatic ground paprika, a pinch of coriander, black pepper. Mix the ingredients in a frying pan and cook for 1 minute.

Serve the finished dish with a side dish made from pumpkin and cabbage. Minced chicken zrazy with mushrooms is ready.

Recipe 3: chicken zrazy in the oven with vegetables

Zrazy is always tasty, original and economical. I suggest preparing chicken zrazy with eggs and vegetables, which are baked in the oven, so they are healthy and can be offered for dietary and baby food.

  • 500 g minced chicken
  • 80 g white stale bread without crust
  • 1 onion
  • 2 cloves garlic
  • 50 ml vegetable oil
  • 1 tbsp. homemade mayonnaise
  • salt and pepper to taste

For the zrazy filling:

  • 1 large onion
  • 1 carrot
  • 1 boiled egg
  • small bunch of greenery
  • 1 tbsp. vegetable oil
  • salt, pepper to taste

For the sauce:

  • 400-500 ml milk
  • 1 tbsp. flour
  • 1 butter (or vegetable oil)
  • salt, pepper to taste

Preparation:

  1. Combine the minced meat with soaked white bread, very finely chopped or grated onion, crushed garlic, add 1 tablespoon of vegetable oil, salt and pepper to taste, mix well, beat and put in the refrigerator for the time it takes to prepare the filling and sauce.
  2. Sauté finely chopped onion and grated carrots in vegetable oil until golden brown. Cool slightly, add chopped egg and herbs, add a little salt and pepper (optional) and mix thoroughly.
  3. Dissolve butter or vegetable oil in a frying pan, add flour and fry it until light beige, then pour in milk and, stirring with a whisk, boil the sauce to the desired thickness. Add salt and pepper to taste at the end of cooking.
  4. Divide the prepared minced meat into 7-8 parts and form them into flat cakes. On each of them, put the filling (divided into the same number of parts as the minced meat) and using cling film (this is much more convenient than just using your hands) form oval zrazy and immediately place them in a baking dish.
  5. Pour the prepared sauce over the zrazy, grease the tops with mayonnaise (for a beautiful, golden brown crust) and place in an oven preheated to 190 degrees. Bake for 25-30 minutes until done.
  6. Serve chicken zrazy with eggs and vegetables baked in the oven as a main hot dish with any side dish, fresh vegetables and herbs. And when cold, chicken zrazy slices very well and can be placed on sandwiches.

Meat zrazy in Bechamel sauce

Appetizing cutlets stuffed with eggs and cheese and a delicate creamy sauce will definitely not leave anyone indifferent. These zrazy can be eaten as a separate dish or served with a side dish of pasta or mashed potatoes.

Ingredients:

  • Minced beef - 500 gr.
  • Onion - 1 pc.
  • Hard cheese - 70 gr.
  • Bread (a little stale) - 5-6 slices
  • Egg - 4 pcs.
  • Flour - 2 tbsp.
  • Butter - 2 tbsp.
  • Milk - 1 l.
  • Salt - to taste
  • Ground pepper - to taste

Cooking process:

  1. To begin, boil the eggs until fully cooked, this is about 7-8 minutes after the water boils. Peel the onion and soak the bread in 200 ml. clean water.
  2. Cut the peeled onion into arbitrary pieces and place in the grinding bowl of a blender; add the bread, squeezed out of excess liquid, into the bowl. Grind the ingredients to a smooth paste.
  3. Place the onion and bread into a bowl with the minced meat, add a little salt and pepper, then knead the minced meat thoroughly. Place the bowl of minced meat in the refrigerator, while you prepare the filling.
  4. Peel the boiled eggs and finely chop them using a sharp knife, or you can also use a blender and chop the eggs with it. Grate the cheese on a medium grater or grind in a blender along with the eggs.
  5. Remove the ground beef from the refrigerator, divide it into equal pieces of fairly large size and form each piece into a uniform ball, then press the balls into cakes. Place the filling in each flatbread and form into oblong patties.
  6. When the zrazas are formed, start preparing the bechamel sauce. To do this, melt the butter in a saucepan and, stirring thoroughly, add the sifted flour to the butter. When all the flour has been added to the butter, begin to pour in the milk in a thin stream, stirring the mixture with a whisk. Add a pinch of pepper and salt, wait for the sauce to boil and turn off the heat.
  7. Place the formed zrazy in a baking dish - non-stick or glass, carefully pour the sauce over the zrazy. Turn on the oven to 180 degrees and place the pan with the zrazy coated with bechamel sauce. Bake the dish at a constant temperature for about 45 minutes, then serve in portions. Bon appetit!

Recipe 4: chicken potato zrazy (step by step)

Ingredients:

  • potatoes - 1000 gr
  • wheat flour - 80 gr
  • chicken egg - 3 pcs
  • onion - 100 gr
  • breadcrumbs - 40 gr
  • sunflower oil – 50 ml
  • chicken fillet – 450 gr
  • ground black pepper - 0.5 tsp.
  • salt - 1 tsp.

Preparation:

  1. A simple, tasty and satisfying dish. Let's start cooking. First of all, wash and peel the potatoes. Let's let it cook.
  2. While the potatoes are cooking, peel and finely chop the onion and fry it in vegetable oil. When the potatoes are cooked, set them aside to cool.
  3. Boil the chicken meat and chop it finely. You can pass it through a meat grinder, or punch it with a blender. We like the meat to be chunky.
  4. Add the onion, which was previously fried, to the meat, as well as salt and pepper to taste.
  5. The potatoes had cooled down by this time. It needs to be crushed. Grate it on a grater with small holes. You can also resort to using a meat grinder.
  6. Break two raw eggs into the potatoes. Add salt to taste.
  7. All that remains is to add flour and quickly knead the potato dough. This dough needs to be kneaded very quickly so that it does not become sticky.
  8. Using a spoon we will cut the dough.
  9. Place a plate of water next to the dough. Dip a spoon in water, scoop out a portion of dough and place it on a plate.
  10. Form the dough into a ball with wet hands.
  11. We place the ball on the palm of our hand and press it to form a flat cake, on which we place the meat filling, fold it in half and mold it into a pie shape.
  12. Break the egg into a plate and lightly beat it with a fork. Place breadcrumbs on another plate. First dip it in the egg immediately.
  13. And then immediately coat it in breadcrumbs and put it in a frying pan. Fry in vegetable oil on both sides until golden brown. The best option is to deep fry.
  14. You can serve zrazy with sour cream or mushroom sauce, which is ideal. Or you can do it without gravy.

On average, one chicken and egg meal “weighs” around 100 g, which makes it easier to calculate its calorie content. The energy intensity of any dish depends on the recipe and method of its preparation.

Zrazy are usually fried in a frying pan in oil or, which is most preferable from the point of view of proper nutrition, baked in the oven. In today’s article we will look at 3 popular zraz recipes with different fillings; we calculated their calorie content taking into account different types of processing.

Thus:

  1. Zrazy made from minced chicken, with the addition of a bun and stuffed with a mixture of eggs and green onions, has a calorie content of 110 kcal when baked in the oven, and 130 kcal when fried in a frying pan with the addition of oil.
  2. Zraza from a chicken breast chop, with fried mushrooms and egg, when cooked on the grill reaches 95 kcal, and when fried in a frying pan - 105 kcal.
  3. Chicken breast zrazy, with the addition of potatoes instead of bread, as well as with egg and cheese filling, has a calorie content of 121 kcal in the oven and 140 kcal in the frying pan.

How to make potato zrazy with chicken

There are a huge variety of cutlet recipes - every housewife or owner has a dozen ways to prepare such a dish. In order to somehow diversify this meat dish, you can put some kind of filling inside each cutlet or, on the contrary, wrap the meat in it and make, for example, potato zrazy with chicken. Such an unusual dish can replace a full meal - there is both a meat component and a side dish, and if desired, the filling can be made even richer and additional components can be added to it.

Chicken zrazy with cheese

This is the classic and easiest way to prepare zraz; the combination of chicken meat and cheese turns out tasty and tender. When forming, you need to moisten your hands with cold water, then the minced meat will not stick to the skin.

Ingredients:

  • 700 g chicken fillet;
  • 150 g cheese;
  • 1 egg;
  • 3 spoons of sour cream;
  • 50 g white bread;
  • 50 ml milk;
  • 60 g vegetable oil;
  • fresh herbs;
  • breadcrumbs;
  • salt, spices to taste.

It is important to use hard cheese: it does not melt so easily, so it will not leak out when frying.

Sequencing:

  1. Break white bread into pieces and soak in milk for 15 minutes.
  2. Rinse the meat, cut into small pieces and pass through a meat grinder. Season the prepared minced meat with salt and pepper.
  3. Lightly squeeze the bread soaked in milk, combine with minced meat, mix well.
  4. Wash parsley, green onions and dill and chop finely.
  5. Grate the cheese on a coarse grater. Mix it with 2 tbsp. l. sour cream, add herbs - this mass will be the filling for the zraz.
  6. Form zrazy: make a ball out of minced meat, flatten it into a flat cake, put 1-1.5 tsp in the center. fillings. Close the edges of the flatbread and form a completely closed oblong patty.
  7. Roll each one immediately in breadcrumbs.
  8. Fry them in vegetable oil on both sides over medium heat until fully cooked.
  9. Chicken zrazy is eaten hot. You can serve them with a salad of fresh vegetables with plenty of herbs.

Recipe 6: chicken and cheese immediately (with photo)

The good thing about cutlets is that you can experiment not only with minced meat, but also with the filling. Cutlets with filling are called zrazy. This dish originated in Lithuania and eventually spread throughout Europe. Zrazy is especially popular in Poland, Belarus, the Baltic countries, and Ukraine. Initially, the filling was wrapped in a well-beaten piece of meat. Since using a meat grinder we have the opportunity to grind meat into minced meat, minced meat zrazy has taken the form of cutlets with various fillings. The filling can be very varied: mushrooms, onions, eggs, rice, vegetables. I offer a recipe for zraz with cheese. I hope these delicious chicken zrazy with cheese will not leave anyone indifferent. Here is the prescription.

  • Cheese - 120 g
  • Chicken fillet – 550 g
  • Lard - 150 g
  • Onion - 1 head
  • Garlic - 3-4 cloves
  • Salt - to taste
  • Spices - to taste
  • Ground black pepper - to taste
  • Vegetable oil - for frying
  • Walnuts - optional

Minced meat can be prepared from the meat that is available. I make minced chicken fillet with the addition of lard or brisket. I add fat so that the minced meat is not completely dry. Of course, I wash the chicken fillet first, cut off the veins and let the meat dry. I pass chicken meat, lard and brisket through a meat grinder. I add peeled and finely chopped onion, garlic squeezed through a garlic press. I season the minced meat with salt to taste and spices according to my desire and discretion. You can add a little more ground black pepper. I mix everything well.

I am preparing the filling for zraz from chicken fillet. I grate the cheese on a fine grater, add 2 teaspoons of dry or fresh dill. (You can also add walnuts, ground in a blender, to the filling).

I make a medium-sized cake from the minced meat (Tip: to prevent the minced meat from sticking to your hands, it is better to moisten them in water).

I put the cheese filling in the center of the flatbread, pinch it and form a patty. Then I dredge the chicken cutlet on all sides in flour. Chicken zrazy for frying is ready. If you do not want to use zrazy immediately, you can freeze them for future use.

I fry the minced chicken zrazy on one side over high heat. Then, after browning, turn the cutlet over and fry on the other side over low heat until cooked, covering the pan with a lid. The approximate frying time for minced meat is 7 - 10 minutes on both sides.

Chicken zrazy with cheese should be eaten hot, before the cheese hardens. You can serve with any side dish and sour cream. Bon appetit!

How to fry zrazy in a frying pan

  1. Turn on the frying pan to heat up at maximum heat, pour in a little oil and wait for 3 minutes.
  2. As soon as smoke begins to emanate from the oil, place the breaded zrazy in it, fry them over high heat for literally 2-3 minutes until a golden brown crust appears and turn them over. Now reduce the cooking temperature to the lowest setting, cover the pan with a lid and set aside for 15 minutes.
  3. After a quarter of an hour, raise the lid, turn up the heat, making it above medium, and fry the zrazy until crusty.

Cooking with mushrooms

Zrazy with mushrooms and chicken is perfect for both a festive table and a family dinner. It is better to take forest mushrooms: porcini, aspen, oyster mushrooms or chanterelles.

Ingredients:

  • chicken thigh – 6 pcs.;
  • porcini mushrooms (frozen or fresh) – 300 g;
  • onion – 1 pc.;
  • breadcrumbs - 0.5 cups;
  • cheese – 50-70 g;
  • one egg;
  • sunflower oil;
  • spices - optional.

Preparation procedure:

  1. Separate the thigh fillet from the bone. You can buy boneless fillets in meat departments.
  2. Finely chop the onion and fry lightly. Add pre-boiled mushrooms to the onions, mix and sauté for another 5-7 minutes without covering.
  3. Using a slotted spoon, transfer the contents of the pan onto a plate. Add grated cheese and spices and mix well.
  4. Beat a piece of fillet with a kitchen hammer as thin as possible, add a little salt and pepper.
  5. Place the filling on the fillet and roll it into a roll.
  6. Break the egg into a separate plate and shake lightly. Pour the crackers into another container.
  7. Place the zrazy one at a time into plates with egg and breadcrumbs. Place in a baking dish and place a few small pieces of butter on top.
  8. Bake the dish in the oven for 40 minutes at 200 degrees.

The finished dish is best served with sour cream. The fermented milk product will give it a richer taste.
