So, prepare:

  • 2 eggs;
  • 100 g margarine;
  • 1 cup of sugar;
  • 2 tablespoons honey;
  • 0.6 kg flour;
  • a teaspoon of soda.

And for the cream, take 0.4 kg of sour cream with 20-25% fat content and 150 g of sugar.

Final decoration

Melt the chocolate and combine with cream. The result is icing, which is carefully poured onto the resulting cake. How to make honey cake

Step 1. The first step is to prepare the bee product for further mixing; for this it should be softened. How to melt honey? It is best to use a water bath for this purpose. Place honey in it, bring it to a liquid consistency, then add margarine and sugar to it.

Step 2. In a separate bowl, thoroughly beat the eggs. To do this, it is advisable to use a mixer or blender, but in the absence of such devices, an ordinary whisk will do. Gently add the beaten eggs into the honey mixture, stirring all the time.

Step 3. As a result, you should get a fairly elastic, homogeneous mass. Add the prepared soda to it, stirring it constantly. You will notice the mixture begin to foam.

Step 4. Now remove the mixture from the water bath and gradually add the sifted flour into it. As a result, you should have a stiff, slightly sticky dough. Divide it into two equal parts.

Step 5. Roll out each ball of dough into a layer approximately 5 mm thick. Then transfer the resulting cakes to a baking sheet lined with pastry paper. Try to spread the dough over the entire surface so that the deck is completely covered.

Step 6. Place the pieces in an oven preheated to 250 degrees for 20 minutes. If your oven is less powerful, you can increase the baking time.

To begin with, I want to warn you that the cake made from whole-grain flour is somewhat coarser than from the “tower” that the author of the recipe suggests, but products made from whole-grain flour are certainly healthier. Make your own choice.

How to cook

It is most convenient to start the process with caramel. It will be the main decoration and unique highlight of the cakes, giving them an exquisite citrus taste.

So, the first thing you need to do is cut the zest from the oranges and chop it into thin strips. Then you should squeeze out the maximum amount of juice from the fruit, and then combine it with crushed peel and sugar. This mixture must be brought to a boil at maximum power, and then reduce the heat and cook for an hour, stirring the mixture occasionally.

As a result, this mixture will become similar to ordinary caramel. Once the desired consistency is achieved, the saucepan will need to be placed at an angle.

It is very important to ensure that the caramel and candied fruits are separated. After all, one of the parts is needed for the cream, and the second for decoration.

Well, while your caramel is languishing on the stove, it’s best not to waste time and start preparing the dough for future cakes. To do this, first of all, separate the yolks from the whites, placing them in different containers. Beat the first part with sugar, using a mixer or whisk, until the mixture acquires a beautiful lemon tint.

Without ceasing to process the mass, add liquid bee product to it. How to melt honey? Just place it in a water bath for a few minutes or in the microwave for 30 seconds. Also sift flour into the yolk mixture and add soda. All ingredients must be mixed as thoroughly as possible, preferably with a mixer, so that not a single lump remains.

To make the cake truly tender and tasty, it is very important to process the whites correctly: beat them to the consistency of a snow-white dense foam. In this form, they need to be sent to the yolk mixture, adding in small portions.

Line a baking pan with pastry paper. Carefully pour the prepared dough here, distributing it evenly. Just try not to press too hard on the mass during the process so that future cakes do not fall off.

Send the form with the preparation to the oven, heated to 200 degrees, for 10-12 minutes. After the baked shortcake has cooled, carefully roll it into a roll.

Now all that's left is the cream. But at this stage you definitely shouldn’t have any difficulties.

Divide the milk into two equal parts. Pour one of them into a saucepan and put on fire, and pour the sifted flour into the second.   • Margarine – 100 grams.

Preparation

  1. It is better to prepare the dough base in a water bath. In cooking, a water bath is often used when it comes to margarine. To make it at home, you will need two pans: one should be smaller than the other. But if you insert the smaller one into the larger one, a space should form between the bottoms. You should pour water into the larger one, but do not fill the space completely. And then it’s time to put the resulting water bath on medium heat.
  2. The dough base recipe, although it seems easy, requires constant concentration. Place margarine and sugar in the inner pan. Then the contents are thoroughly mixed. If the lumps of sugar have not melted, leave the mixture for a while.
  3. At this time, beat the eggs well. Only when a homogeneous mass is formed from the eggs is it added to the mixture already being prepared along with honey.
  4. The resulting mass is thoroughly mixed again until the ingredients are completely dissolved and become homogeneous. The resulting mass should be elastic.
  5. Now add soda to it. It is important that it is not slaked, because it will react with other components of the dough base. The mixture begins to foam within a couple of seconds.
  6. As soon as the base increases in size, remove it from the heat, while continuously stirring. Then leave until it stops being hot, but does not cool completely.
  7. Then add flour to it, constantly stirring the contents. Once the dough becomes thick, mix it with your hands until it becomes sticky and stiff. However, you cannot overdo it with flour, otherwise the puff pastry with honey cream will become too tight and dry.

After cooking, put the dough in the refrigerator for half an hour.

For the cake recipe, you can use special store-bought puff pastry, often used in cooking, and not waste time preparing it.
