Classic recipe

If you are a novice housewife and want to learn how to make cakes, we recommend that you follow our instructions.

Ingredients for making the cake:

  • Four eggs.
  • A glass of premium flour.
  • Half a teaspoon of baking soda.
  • 50 grams of butter.
  • Two spoons of cocoa.
  • A glass of sour cream.
  • A glass of granulated sugar.

Products for making cream: a can of condensed milk (boiled) and a pack of butter.

Recipe for the Little Negro cake step by step (see photo below):

  • In a glass bowl, whisk the eggs with granulated sugar.
  • Add 1/4 stick of butter, cocoa powder, baking soda, flour to the finished composition and mix thoroughly.

  • Place the finished dough in a metal frying pan and bake in the oven at 200 degrees.

  • Whisk condensed milk with butter.
  • Cut the finished cake into several even pieces.
  • Apply the cream to the skin one by one and form a cake.
  • In order for the cake to absorb the cream well, place it in the refrigerator for a short time.

Pie “Rotten Stump”

The “Rotten Stump” pie with kefir jam got its name because of its appearance: dark on top, but porous inside, as if someone had drilled holes.

Required Products:

  • 0.35 kg flour;
  • 200 grams of kefir;
  • 0.2 kg sugar;
  • spoon of soda;
  • two eggs;
  • 0.2 kg jam.

Preparation:

  1. Mix the sugar and eggs well to form a foam, and pour kefir into them.
  2. Add jam, soda and flour there. Knead again until smooth - the mass should come out thick.
  3. Transfer the dough into the mold and cook for 40 minutes at 200 degrees in a preheated oven.

Kefir dough

Cakes made with kefir turn out dense and do not change their shape. To prepare the Negro cake with kefir, according to the recipe, you will need the following products:

  • A glass of sugar.
  • A glass of flour.
  • A glass of kefir.
  • 3 eggs.
  • One glass of any jam.
  • Half a teaspoon of baking soda.
  • Vanilla sugar - a bag.

To prepare the cream, you need the following ingredients:

  • Vanillin.
  • One glass of natural cream.
  • A glass of granulated sugar.

In a glass bowl, beat the eggs with a mixer, slowly add kefir, sugar, baking soda and a glass of any jam. Then pour in a glass of flour and mix well. Grease the frying pan with oil and sprinkle with flour, pour in the dough. Bake at 220 degrees. Cut the cooled cake into equal parts. Mix natural cream with sugar and beat thoroughly, adding vanilla to the mixture. Grease the cakes well with cream. The recipe for making Negro cake with kefir is simple and economical.

How to make a kefir cake with jam

The dough is kneaded very quickly, so we can immediately turn on the oven so that it has time to warm up to the required temperature (180). Break two eggs into a suitable container, add granulated sugar and stir using a kitchen whisk.

Pour jam and a glass of kefir into the future dough.

Mix everything thoroughly by hand or using kitchen appliances (at minimum power), as shown in the photo.

Add wheat flour and soda. Before adding, sift the flour - this way the product will be airy and even more tasty.

Mix the dough thoroughly; it should have a runny consistency.

Grease a baking dish of suitable size with sunflower oil or a slice of butter. Pour the dough into the mold.

Bake the dessert for 40-50 minutes. Check readiness with a toothpick or wooden skewer: insert into the center of the pie and remove; If the stick is dry, then the cake is ready. You can put any jam in the dough according to your taste. Raspberry, apricot, cherry, strawberry - the assortment is large.

Thanks to this, each time the cake will be different, but incredibly tasty.

The “Negro in Foam” cake is one of the popular cakes during the Soviet Union. His recipe impresses with its speed of preparation and availability of ingredients. But at the same time it turns out very, very tasty. I offer you my version of this cake with kefir and jam. The jam for the cake should be plum or blackcurrant. This is necessary so that the sponge cake turns a dark color, since there is no cocoa in the cake at all.

Biscuit ingredients:

  • kefir – 1 cup;
  • flour - 2 cups;
  • jam – 1 cup;
  • sugar – 0.5 cup;
  • eggs – 2 pcs.;
  • vegetable oil – 2 tbsp;
  • soda – 1 tsp.

For cream:

  • sour cream 20% - 500 g;
  • powdered sugar – 150 g;
  • gelatin – 1 tsp.

Coffee Cake Recipe

There are many recipes for Negro cake. Let's look at a step-by-step recipe for one of the best cooking methods now.

The following ingredients will be required:

  • 1/2 cup granulated sugar.
  • Vanilla sugar.
  • A glass of natural cream.
  • A few tablespoons of olive oil.
  • Three tablespoons of cocoa.
  • 1/2 cup flour.
  • Two spoons of natural coffee.
  • A teaspoon of baking soda.
  • Dark chocolate bar.

Now let's start preparing the cake:

  • Take the eggs and separate the whites from the yolks.
  • In a bowl, beat the yolks with 1/2 cup granulated sugar.
  • Pour olive oil into the prepared mixture and mix thoroughly.
  • Combine cocoa powder and instant coffee, add warm drinking water.
  • Pour the mixture of cocoa powder and coffee into the yolks, stirring gently.
  • Pour flour, baking soda and two tablespoons of sugar into a separate plate and mix.
  • Combine the flour mixture with the previously prepared mixture and mix well.
  • In a separate bowl, beat the egg whites and two tablespoons of sugar, pour into the main composition.
  • In pre-prepared molds, bake the cakes at a temperature of 220 degrees.

Now prepare the cream:

  • Pour the cream into the pan and add 2 tablespoons of sugar and heat.
  • Add chocolate to the mixture and stir.
  • Beat the cooled mixture with a mixer.

We cut our cakes into several parts, grease them thoroughly and put them in the refrigerator. According to this recipe, the Negro cake with the addition of coffee turns out to be very tender.

How to bake a Negro cake?

In our family, this delicious dessert is affectionately called “Negritenko” for the characteristic color of the cake layers, which cocoa gives to a homemade cake.

To prepare Negritenka cakes we will need:

  • 3 cups sugar
  • 3 tablespoons cocoa,
  • 3 cups flour,
  • 1 liter of kefir,
  • 4 eggs,
  • 1 teaspoon baking soda.


First, mix two cups of sugar, cocoa and flour.

Beat the eggs with the remaining glass of sugar. Gradually pour kefir into the beaten eggs and add soda slaked in vinegar.

Combine the resulting egg-kefir mass with the dry mixture and stir well so that there are no lumps left that form when the ingredients are combined. You should end up with a liquid dough similar in consistency to pancake batter.

It is better to take a frying pan for baking “Negritenka” that is not too large, so that the cakes are easier to remove. Grease the frying pan with vegetable (sunflower) oil. Then pour the dough into the pan with a ladle. Depending on the size of the ladle, from one to three ladlefuls of the mass are poured into the frying pan.

Next, put the pan in the oven, preheated to 200C. Bake the crust for 20 minutes. If the cake turns out sticky, you can hold it for another 5 minutes. After the cake is baked, remove it from the pan, refill it, put it in the oven and continue this until the dough runs out.

While the cakes are baking or when they are all ready, you need to prepare the cream. You can choose any cream for Negro. But our family loved it with custard.

For the cream you need to prepare:

  • 1 cup of sugar,
  • 2 tablespoons flour,
  • 1 egg
  • 2 glasses of milk,
  • 300 grams of butter.

Mix sugar and flour. Beat the egg into the mixture and stir. Pour milk into the resulting mass.

Then bring the mixture to a boil and, stirring continuously, cook until thickened over very low heat. Afterwards, cool the mixture and beat with butter.

Now the process has come to an end. Grease the cakes with cream and the cake is ready!

If you have berries on hand, you can put them on the cream between the cakes. For example, I used cherry, it gave it an extra zest.

You can decorate the cake with an inscription or design. To do this you need to prepare chocolate fudge.

For the fudge we need:

  • 5 tablespoons cocoa
  • 0.5 cups sugar
  • 50 grams butter
  • 3 tablespoons of milk.


Mix all the ingredients and cook over low heat, stirring constantly, until “melted chocolate” is formed.

Pour the fondant into the syringe and create your own design on the cake!

I would like to note that using this amount of ingredients, we will bake two cakes. If you want to bake a cake in one copy, then you need to halve the amount of ingredients for the cakes, and take only one glass of milk for the cream. But I don’t recommend baking one cake. “Negritenok” is so tasty that you can’t have too much of it!

Chocolate cream

In order to decorate the top of the Little Negro cake, the recipe for which we reviewed earlier, we will need to prepare chocolate cream.

We will need ingredients:

  • One can of condensed milk.
  • Two hundred grams of butter.
  • Dark chocolate bar.

Melt dark chocolate in a cup, or in the microwave. Using a mixer or whisk, beat the condensed milk, add butter and heated dark chocolate to the finished mixture. Our cream is ready.
