Many people know the Milk Girl cake. Delicate, with a creamy taste. Today I am sharing the recipe for this chocolate flavored cake. Try it, you won't regret it!

How to make “Chocolate Girl Cake”

Prepare all the ingredients for making the cake.

Break the eggs into a bowl.

Beat the eggs with a mixer until fluffy.

Pour in condensed milk.

Again, beat the eggs and condensed milk well with a mixer.

Sift the flour with two tablespoons of cocoa and add to the bowl with the egg-milk mixture.

Add baking powder and mix the dough well.

Draw a circle with a diameter of 20 cm on the parchment. Turn it over and place two tablespoons of dough. Flatten the dough onto the paper. If you are not sure about the quality of the paper, then grease it with oil and only then lay out the dough.

Bake the cake in the oven at a temperature of 175-180 degrees for 8-10 minutes. Let the cake cool and then carefully remove the paper. Bake all 8 cakes in this manner.

Prepare the cream for the cake. Pour heavy cream into a bowl. Cool them well before doing this. Add powdered sugar and two tablespoons of sifted cocoa powder.

Using a blender or mixer, beat the cream with powdered sugar and cocoa until fluffy, stable foam.

Place the removable mold ring on the dish. Place the first cake layer and brush it with cream.

You can make a cake with both chocolate and milk cake layers. Or you can combine two types of cakes in one product, which makes the taste of the cake even more interesting.

The quantities of ingredients indicated below are designed to create a cake divided into 12 servings.

For milk cakes

To make a milk cake with a rich sweet taste, take:

  • a can of condensed milk;
  • 2 eggs;
  • 160 g wheat flour;
  • a tablespoon of baking powder;
  • a pinch of vanillin.

For chocolate cakes

To create a Chocolate Girl, you can use chocolate, or you can use cocoa powder. But in the first case, the taste of the cake is more intense.

Ingredients of Chocolate Girl:

  • 200 g condensed milk;
  • 90 g dark quality chocolate;
  • 100 ml milk;
  • 2 eggs;
  • 200 g wheat flour;
  • a tablespoon of baking powder;
  • a pinch of salt.

For cream

There are many variations of the Chocolate Girl cake, differing in the composition of the cream layer. The most successful and interesting is chocolate cream, consisting of the following ingredients:

  • 250 g mascarpone;
  • 100 g dark chocolate;
  • 500 ml 30–35% cream;
  • 50 g powdered sugar.

Cooking method

For Milk Girl lovers, a detailed recipe for creating a white cake:

  1. Vanillin and baking powder are added to the sifted flour. Stir and set aside.
  2. Break the eggs and beat until foamy.
  3. Pour in condensed milk and stir until smooth.
  4. Pour the flour mixture into the egg-milk mixture. Gently stir with a mixer.
  5. Leave the finished dough for 10-15 minutes before putting it in the oven.

Fans of the chocolate version of the cake make cakes according to this recipe:

  1. Combine flour, baking powder, salt. The mixture is set aside.
  2. Milk is poured into a container for heating and sent to the microwave. Add chocolate broken into pieces to the warm drink and stir until a homogeneous mass of a beautiful chocolate color is obtained.
  3. Add condensed milk to the resulting mass and mix.
  4. Beat in the eggs and stir again.
  5. The milk-egg mass is combined with the flour mixture prepared earlier. Beat with a mixer.
  6. The prepared dough is left for 10–15 minutes before going into the oven.

Next comes the cake baking stage. To do this, heat the oven to 180 °C. Take culinary parchment and draw a circle on it with the same diameter as the cake should be. For convenience, you can take a cooking ring or a flat plate.

For the specified amount of ingredients, it is advisable to make a diameter of 20 cm, then 2 or 3 tablespoons of dough are enough for one cake. There should be 8 cakes in total, but the hostess can make more or less at her discretion.

The dough is spread on parchment paper and baked in the oven for 5-7 minutes. The finished cakes are leveled by placing a plate or ring mold on top, cutting off the protruding parts with a knife.

The next stage is preparing the cream for the Chocolate Girl:

  1. Mascarpone cheese, softened at room temperature, is kneaded with a spoon to a viscous mass.
  2. The chocolate is broken into small pieces and melted in a water bath.
  3. Combine chocolate mass and mascarpone. Beat with a mixer at low speed until smooth.
  4. In another bowl, the cream is combined with sweet powder. Beat.
  5. Add a third of the sweet cream to the cheese-chocolate mass and gently stir until smooth.
  6. Add the rest of the cream and beat.

After preparing all the ingredients, all that remains is to assemble the chocolate cake. It is most convenient to do this in a cooking ring, but it is also possible without a device, since the cakes are neatly round in shape and easy to stack on top of each other.

Spread 2-3 tablespoons of chocolate cream onto each cake with a diameter of 20 cm. Do not apply cream to the last layer of baking. The surface can be decorated with chocolate glaze and sprinkled with chopped scraps left over from the cakes. Or you can prepare a delicious filling from sour cream, mascarpone and granulated sugar.

The finished Chocolate Girl is sent to infuse on the refrigerator shelf for 3-4 hours.

With cream Ice cream

The most popular recipe is Chocolate Girl with ice cream. Real ice cream is not used to prepare the creamy layer, and the name is due only to the similarity of taste to ice cream. This taste feature becomes possible when vanilla pudding is added to the composition.

To make a chocolate girl ice cream, take:

  • 250 g white flour;
  • a can of condensed milk;
  • 4 chicken eggs;
  • 2 tablespoons cocoa powder;
  • 500 ml milk;
  • a pack of vanilla pudding;
  • 150 g granulated sugar;
  • 200 butter;
  • 15 g baking powder.

How to prepare a chocolate ice cream cake:

  1. The flour is combined with cocoa powder and baking powder. Beat in 2 eggs, add condensed milk.
  2. Draw a circle with a diameter of 22–25 cm on a culinary parchment sheet.
  3. Inside the circle, spread a thin layer of prepared dough on the parchment; it should be enough for 7-8 cakes.
  4. Each cake is baked in an oven heated to 180 °C for 5–6 minutes.
  5. The protruding edges of the baked goods are carefully trimmed to form a round shape.
  6. The baked goods are left to cool while the cream is made. The remaining two eggs are broken, the white mass and yolks are separated.
  7. Pour milk into the yolks, add granulated sugar and pudding. Stir.
  8. The resulting mixture is placed on low heat and heated with constant stirring until thickened.
  9. Add butter melted at room temperature to the mixture. Mix well.
  10. The finished cream is smeared onto the cake being formed in layers.

Creams for “Milk Girl”

There are several options for cream that suit the taste of cakes baked with condensed milk . Cream ice cream, sour cream, curd, caramel, cream cheese - all these creams are used in the preparation of Milch Mädchen. Each of them imparts a unique and special taste to baked goods.

Any of these creams can be combined with fruits and berries. You can take any of them as a tasty and aromatic berry-fruit layer: peaches, strawberries, cherries, mixes of forest and garden berries, bananas, kiwi. Peaches and bananas are good caramelized, mixes are gelled, cherries are in syrup, liqueur or cognac (an option for adults!), strawberries are fresh.

Assembling “Milch Mädchen” is as easy as shelling pears - spread the cooled cakes with cream, adding fruits, nuts or berries if desired. Here's a good example video:

The most delicate cream filling


Cream with the flavor of your favorite ice cream enhances the milky-creamy aroma of the dough.

It is prepared on the basis of cream.

Good not only for layering the cake, but also for leveling the outside.

Compound:

  • heavy cream (fat content 30% minimum) - 350 ml
  • sugar - 1/2 tbsp.
  • chicken egg - 1 pc.
  • butter - 120 g
  • vanilla sugar - 1 sachet
  • wheat flour 3 tbsp.

Cooking technology

  1. Mix cream, sugar, vanilla sugar, flour, egg and lightly beat in a small saucepan. Place the mixture in a water bath. Stirring, wait for the cream to thicken. Cool the mixture to room temperature.
  2. Beat the softened butter into the cream in small portions. The consistency of the filling cream should be thick and fluffy.

Traditional sour cream

The simplest and most affordable option for cream for any cake is made from sour cream and sugar. The traditional sourish taste of sour cream is ideal for layering sweet biscuits with condensed milk.

You will need:

  • sour cream 25% - 500 ml
  • granulated sugar - 1 tbsp.
  • vanillin - on the tip of a knife

Cooking for 3 minutes:

Beat the cooled sour cream with sugar and vanilla at low speed until it reaches a stable, airy consistency. The cream is ready - quick and tasty!

Attention!

It is important not to “beat” the sour cream, that is, beat it thoroughly, but not for too long, otherwise the sour cream may separate into butter and whey.

Chocolate curd cream


The taste of curd cream - soft, delicate - is ideal for the “Milk Girl”.

This is a budget, but no less tasty variation of cream cheese.

Instead of granulated sugar, you can use condensed milk, which will “support” the taste of the base.

Adding cocoa will provide a rich chocolate aroma.

Components:

  • cottage cheese - 400 g
  • condensed milk - 1 can
  • sour cream or cream - 150-200 ml
  • vanillin - on the tip of a knife
  • cocoa - 1-2 tbsp.
  • chocolate - 50 g.

Cooking technology:

  1. Mash the cottage cheese, add vanillin.
  2. Add cream and condensed milk little by little and beat until light and fluffy.
  3. Melt the chocolate in a water bath and pour it into the cream in a thin stream.
  4. At the last stage, add cocoa and mix gently.

Cheese cream cheese

Its taste is somewhat unusual - curd cheese adds piquancy. In this version, you need to use powdered sugar - regular sugar does not have time to dissolve.

You will need:

  • curd cheese (mascarpone) - 400 g
  • whipping cream (not less than 33% fat) - 100-150 ml
  • powdered sugar - 100 g

Cooking method

  1. Whip cream with powdered sugar.
  2. Adding curd cheese 2-3 tablespoons at a time, continue beating. The finished cream cheese should hold its shape well and be homogeneous.

How to cook:

  1. Whip the cream at the same time as the condensed milk.
  2. Gradually adding softened butter, continue beating.
  3. Add the nuts last. Mix.

Secrets of the "Milk Girl"


The Milk Girl recipe comes from Germany.
In German, its name is written and sounds like “Milch Mädchen”. This is nothing more than the famous German condensed milk - one of the oldest and highest quality brands.

Used to prepare the base of the cake, it gave the name to the baked goods.

For the traditional cake layers of the famous cake, you will need a minimum amount of ingredients - flour, eggs and the ingredient that determines the taste of the future culinary masterpiece - condensed milk.

Therefore, it must be the best and meet all possible standards.

There is no point in saving money and buying cheap ones - the taste of “Milk Girl” can be hopelessly ruined.

Each cake is baked independently. They should not be thicker than 1 cm. But you need a lot of cream, it will make the cakes soaked and moist. It is up to each pastry chef to decide which cream to choose. The classic is ice cream, but others will work just as well.

Cake “Milk Girl” with yogurt and curd cream

Let's make a “Milk Girl” cake with an unusual cream! For it we need soft creamy Mascarpone cheese or low-fat soft cottage cheese, and also any natural yogurt. Choose the yogurt you love, but if you want to maintain the original Dairy Girl flavor, choose a non-sour, creamy yogurt without any additives. Any fruit, confectionery sprinkles or chocolate chips are suitable for decorating the cake.

Ingredients:

For the test:

  • Chicken eggs – 2 pcs.
  • Condensed milk – 1 can.
  • Flour – 1 tbsp. (no more than 180-200 gr.).
  • Baking powder – 1 sachet (10 g).
  • Salt – 1 pinch.
  • Vanillin – 1 tsp.

For cream:

  • Cottage cheese or Mascarpone cheese – 250 ml.
  • Yogurt – 300 gr.
  • Vanilla sugar – 1 sachet (10 g).
  • Powdered sugar – 70 gr.

Cooking process:

  1. Pour a can of condensed milk into a bowl, beat two eggs into it. Beat everything together until smooth with a mixer or whisk with a pinch of salt.
  2. Add sifted flour with baking powder and vanilla to beaten eggs and condensed milk, mix. The result will be a dough that has the consistency of thick sour cream.
  3. Bake cake layers following step-by-step recipe No. 1 from our selection. You should get 5-6 porous cakes from the specified amount of dough.
  4. Separate the warm cakes from the baking paper and place them on a flat surface to cool. There is no need to stack the cakes in one stack to prevent them from sticking together.
  5. For cooled cakes, you can use a knife to trim the uneven edges using a general template. For example, a saucepan lid of a suitable diameter.
  6. For the cream, in a deep bowl you need to mix cottage cheese (or Mascarpone) with yogurt. Yogurt can be replaced with non-acidic sour cream with a low fat content (10-12%).
  7. Add vanilla sugar and powdered sugar to the cream. Beat the cream with a mixer.
  8. Assemble the cake, lightly brushing the bottom layer with cream. When you place each layer on the cake, lightly press it with your hands - this will allow the cream to be absorbed better. Soak each layer, top and sides of the cake well with cream. Each layer should use 2-3 tablespoons of cream.
  9. Chill the cake in the refrigerator for 8-12 hours.
  10. Decorate the top of the cake as you wish and serve.
