Pizza sauce - recipes like in a pizzeria, we cook quickly!

What you need to make the sauce, main ingredients

You can make any pizza, be it Margherita or Four Cheese, using a variety of doughs, but the sauce always plays a decisive role in it.

It should be juicy, bright, quite rich, but at the same time not interrupt the taste of the dish itself, but only set it off.

Traditionally, it is customary to distinguish three types of sauces:

  1. Red is prepared on a tomato base. You can use both fresh and canned tomatoes for this. In the first case, it is better to choose sour varieties so that the taste of the filling is not bland. If you don’t have tomatoes on hand, you can use ready-made paste. The effect, of course, is not the same, but still, with some effort, the result will be quite decent.
  2. White sauce is not so popular on pizza, but it also has its connoisseurs. It is usually prepared with cream or soft cheese. It happens that kefir is added to the composition.
  3. Green sauce is a rarity in our pizzerias and on our tables. Usually this is a classic pesto based on basil, which gives the mass color. But there are other, more exotic options, which we will discuss below.

The first type of sauce is usually used on meat pizzas. It goes well with sausages, pork, bacon, and olives. Creamy dressing is often used to lubricate a dish with seafood - salmon, shrimp, mussels. It is also best added to pizza with mushrooms and vegetables. But cheeses and chicken are “friends” with both types of sauces. As for green, it is very self-sufficient in itself, and therefore does not combine with complex fillings. It can be supplemented with poultry, vegetables, fish, olives.

  1. Greens are always added to the sauce as additional ingredients. These are basil, cilantro, dill and other herbs.
  2. Can't do without hot pepper. Depending on your preferences, you can use regular ground pepper or a piece of real cayenne.
  3. By the way, speaking of pepper, we cannot forget about Bulgarian. Its delicate taste perfectly complements tomato dressings.
  4. Garlic is often added to sauces for added spice. You can take fresh or dried - it doesn’t matter which one is at hand. But, of course, if you have plenty to choose from, give preference to the young one. It's more flavorful.
  5. Onions are also a frequent guest in the dressing. It is usually cut into thin, almost transparent half rings. To eliminate a specific taste, onions are sometimes pickled.
  6. The sauce must contain oil. It should be neutral. It is better to take olive or sunflower, but refined.
  7. White sauces are prepared with the obligatory addition of butter and flour. Cream, sour cream, kefir, and cheeses of all kinds can also be added here.
  8. Don’t forget to add salt to the mixture so that it is not bland. Sometimes the sauce also contains a pinch of sugar.

Housewives love to add mayonnaise everywhere. This is not the best ingredient in a dish. With the same success, you can spread the pizza with ready-made tomato ketchup “Spicy” and not fool yourself.

Pizza sauce recipe

You can prepare the sauce for greasing pizza very quickly, but you can also complicate the preparation. Unusual green sauce

In Italy they love pesto and use it, among other things, as a sauce for pizza.

There are only five ingredients:

  • grated parmesan - 150 grams;
  • vegetable (preferably olive) oil - 150 ml;
  • peeled pine nuts (can be replaced with walnuts) - 4 tablespoons;
  • garlic - a couple of cloves;
  • basil - a lot!

Cooking takes a couple of minutes. Grate the cheese, grind the herbs with garlic and nuts in a mortar into a homogeneous paste. Mix the resulting mass with cheese and butter - your pesto is ready to go on the crust.

Thai sauce has an emerald green color and a very unusual taste. The ingredients are also specific. But if you want to really surprise your guests, believe me, this is your choice.

So, prepare:

  • green chili - 4 pieces;
  • onion;
  • garlic - 2 cloves;
  • cilantro, lemon zest - a spoon;
  • butter - spoon;
  • cumin, turmeric, cinnamon - a teaspoon each.

Unripe chili is not as hot as red chili, but if you find it too hot, replace some of it with green bell pepper.

  1. Peel the pepper and cut it. Grind the onion and garlic with herbs in a blender.
  2. Place all prepared ingredients into a saucepan, add oil and simmer for a couple of minutes.
  3. At the end, add spices and leave the mixture to infuse.

Neapolitania sauce

This sauce smells like the sun of the southern coast of Italy, where one of the largest cities in the country, Naples, is located. Pastas and pizzas with the addition of the classic tomato sauce and onions are incredibly popular here. We call it “Neapolitania” or “Neapolitano”. To prepare you will need:

  • half a kilo of fresh tomatoes;
  • large onion;
  • clove of garlic;
  • 4-5 tablespoons of oil;
  • basil;
  • salt, a pinch of sugar and black pepper.

Traditionally, we start cooking by peeling the tomatoes.

  2. Grind the garlic into a paste so that the pieces do not end up in the finished sauce.
  3. Cut the tomatoes.
  4. Chop the basil. If desired, you can add oregano to it (oregano, in our opinion).
  5. Heat the frying pan, pour in the oil and add the onions. Fry until golden. Add the garlic and sauté for another minute.
  6. Place the tomatoes in the pan and simmer for up to half an hour, until the excess liquid is gone and the fruits themselves have completely turned into porridge.
  7. Season the sauce with herbs and salt, add a little sugar and ground black pepper to taste.

Leave the sauce to steep under the lid for 10 minutes and you can use it.

youtu.be/N4jgdr-Ae7E

For preparation you will need:

  • butter (50 g);
  • garlic (3 cloves);
  • flour (3 tablespoons);
  • milk (1 glass);
  • hard cheese (100 g);
  • basil (2 teaspoons);
  • spices and salt to taste.

Step 1. Three hard cheese on a grater.

Attention! You can use any variety, but I recommend Parmesan.

Step 2. Squeeze the garlic through a garlic press. If you don’t have a tool, you can use improvised means or cut the slices very finely.

Step 3. Melt the butter in a deep saucepan. The fire should be slightly higher than minimum. But not average.

Step 4: Once the butter has melted, add the garlic. Mix well. Cook for about 1 minute.

Step 5. After a minute, add flour.

Step 6. Everything should be mixed until smooth.

Step 7. Pour in milk. Mix again.

Step 8. Add salt and other spices and basil.

Step 9. Grated cheese. Let's get in the way again.

Attention! Italian chefs pay a lot of attention to consistency. Lumps, pores, cavities are excluded. Everything should be perfectly balanced and not liquid. Like puree.

The result should be a thick, homogeneous mass. The sauce is ready. The main thing when preparing a dish is to mix each stage of adding an ingredient and do not turn off the heat. If the grated cheese is not completely melted, it will finish in the oven on the dough.

Vegetable sauce

A spicy mixture of vegetables complements the taste of the meat filling well.

  • 3 meaty tomatoes;
  • 2-3 pickled cucumbers;
  • 250 grams of champignons;
  • garlic, a couple of cloves;
  • carrots, onion;
  • a third of a glass of sour cream.

Prepare all the ingredients: peel and cut the tomatoes, cucumbers, champignons, finely chop the onion and garlic, grate the carrots.

  1. Fry the champignons, add onions and carrots to them.
  2. When the vegetables are half cooked, add tomatoes and cucumbers to them.
  3. Pour sour cream over the entire mixture and bring to a boil. At the very end, add garlic, salt and pepper.

You can leave the sauce in this form, but it is better to chop everything thoroughly with a fork, mixer or blender.

Pizza sauce made from mushrooms and milk cream

Crispy sheet with creamy mushroom filling - simply delicious! To prepare you will need a blender.

Let's buy:

  • 200 gr. champignons, boletus or chanterelles (thawed ones are also suitable);
  • 200 ml cream (from 20%);
  • 100 gr. sweet butter 82.5%;
  • 1 tbsp. l. premium wheat flour;
  • salt and pepper - as needed.

Let's get down to business:

Carefully! Forest beauties must be cleaned in advance and boiled for 30-40 minutes after they boil. This will protect you from unpleasant health surprises.

  • We simmer the washed, chopped mushrooms in butter (substitution with other fats is not acceptable) until a golden hue appears on them. Sprinkle the pieces with flour and grind thoroughly.
  • Slowly pour in the cold cream and at the same time rub the mixture with a silicone spatula.
  • Salt and, if necessary, pepper. Boil for 8-10 minutes over low heat, cool slightly and beat. It is better to do this not with a whisk, but with a mixer or blender.

A delicious, fluffy pizza sauce would also go well with spaghetti and meatballs.

Sizzling hot tomato sauce

If you want something hot, then prepare a fiery pour. To do this, add chili pepper crushed in a mortar and, if desired, ginger to a regular tomato sauce (according to the recipe given above) during the cooking stage. To make the mass thicker, boil 2-3 hard-boiled eggs and add the yolks to the tomato mass. Stir well.
