I live in a private house and I have my own small garden. I don’t know why, but zucchini grows best for me. And when there are a lot of them, I start to figure out where to put them. I’ve already fried pancakes and stewed all sorts of stews. And then the other day I took a couple of recipes from my aunt and tried to stuff them. I still haven’t decided which recipe tastes better. Therefore, I will share with you a recipe for stuffed zucchini boats with chicken in the oven and a recipe for stuffed zucchini in batter in a frying pan. Both recipes are simple and delicious!
Zucchini with minced meat - photo recipe step by step

Zucchini stuffed with cottage cheese
Try stuffing zucchini with cottage cheese, you will probably love this dish.
- 5 young zucchini;
- 400 gr. cottage cheese, preferably full-fat;
- 150 gr. hard cheese;
- 4-5 cloves of garlic;
- 1 bunch of greens (dill, parsley);
- 2 eggs;
- salt, pepper to taste;
- vegetable oil for frying.
Wash and dry the greens well, chop them finely. Peel and finely chop the garlic, you can pass it through a press. Mix cottage cheese with garlic, raw eggs, herbs. Season with salt and pepper. The filling turns out to be a little liquid, don’t be alarmed, the eggs will set when baking. Grate the cheese.
Wash the zucchini, peel it, cut it lengthwise and remove the middle part with a spoon, making “boats”. Sprinkle the boats with pepper and salt; you can season them with other spices to taste. Fill the boats with curd filling and sprinkle with grated cheese on top. Bake in a preheated oven for about 50 minutes. The zucchini should become soft, and the cheese on top should form a golden brown crust.

The following recipe with photo is dedicated to cooking zucchini in the oven. It's quite simple and won't take much time. The finished dish turns out incredibly appetizing. Vegetable lovers will appreciate this original appetizer.
Ingredients:
- Chicken breast – 235 g;
- Zucchini – 1 pc.;
- Tomato (large) – 1 pc.;
- Hard cheese;
- Chicken egg – 1 pc.;
- Greens, seasonings, ketchup and mayonnaise - to taste.
Step-by-step preparation:
- Cut the zucchini into rings about a centimeter wide. Using a glass or knife, remove the middle from the circles.
- Three centers on a coarse grater. Beat chicken fillet and onion in a blender or grind through a meat grinder. Combine both masses, add a chicken egg, a spoonful of mayonnaise and spices. Mix well.
- Grease a baking sheet with vegetable oil and lay out the zucchini. Sprinkle the rings with salt and spices and fill with minced meat.
- Squeeze a drop of mayonnaise and ketchup onto the preparations, stir the sauce with a spoon. Place diced tomatoes on top. Sprinkle with finely grated cheese.
- Place in the oven (180-200 degrees) to bake for half an hour. Sprinkle the finished appetizer with finely chopped herbs and serve on a beautiful plate to the table.
Zucchini stuffed with chicken
You can stuff zucchini with chicken; add rice and cheese to the filling.
- 1-2 young zucchini;
- 1 chicken leg;
- 2 tablespoons of boiled rice;
- 80 gr. processed cheese;
- 2 tablespoons sour cream;
- salt, pepper to taste;
- greens for decoration.
Cook the chicken leg and rice in advance and cool these products. Cut the chicken into small slices and add boiled rice. Cut the processed cheese into small cubes or three on a grater.
Advice! To make it easier to grind soft cheese, you need to keep it in the freezer for some time.
Add sour cream to the filling. If desired, sour cream can be replaced with mayonnaise. Mix everything well.
We clean the young zucchini, cut it in half lengthwise, take out the middle part, forming boats. Fill the resulting zucchini blanks with filling and bake in the oven for about half an hour at 200 degrees.
Zucchini boats stuffed with minced meat in the oven
Stuffed zucchini boats are very tasty and juicy. They can diversify the everyday menu or prepare for a holiday table. If the weather is good outside, this is an excellent option for a barbecue. In this case, the snack will be saturated with smoke and will become even tastier.
Ingredients:
- Zucchini – 3 pcs.;
- Minced meat – 500 g;
- Onion – 1 pc.;
- Carrots – 1 pc.;
- Hard cheese – 150 g;
- Garlic – 4-5 cloves;
- Sour cream – 3 tbsp. l.;
- Salt and ground black pepper - to taste.
Cooking method:
- Cut off the edges of the squash fruits and cut them in half. Using a spoon, remove the centers and cut them into small pieces.
- Chop the onion into small cubes and grate the carrots on a coarse grater. Pour a little sunflower oil into a hot frying pan and fry the onion until golden brown.
- Add the carrots and sauté for about 3 minutes. Add the zucchini and simmer the vegetables for 5 minutes. Remove the pan from the heat and allow its contents time to cool.
- Pour the frying mixture into the minced meat. Salt and pepper, mix. In a bowl, mix sour cream and garlic passed through a press.
- Grease a heat-resistant form with vegetable oil and lay out the boats. We coat the inside of each one with sour cream and garlic sauce, then put the filling in them.
- Grease the top with sour cream again and sprinkle with grated cheese. Cover the pan with foil and place in an oven preheated to 180 degrees for 30-35 minutes. Then remove the foil and bake for another 10 minutes.
- Sprinkle the stuffed zucchini with chopped dill and enjoy the delicious appetizer. It will remain delicious even after completely cooling.
Cooking rules
It is better to choose medium-sized zucchini for stuffing. However, you can use any vegetables. If you have small young zucchini, then it is best to make boats from them. To do this, you need to cut the fruit in half lengthwise, and then carefully select the central part with the seeds with a spoon.
If the zucchini is medium in size, then it is better to cut it crosswise into circles. Then, using a knife, you will need to carefully cut out the central part with the seeds. The result will be rings, in the center of which you can put minced meat. You can make “cups” from young zucchini. To do this, the fruits are cut crosswise into pieces 4-5 cm wide. Then the central part is removed with a spoon so as to preserve the bottom.
Zucchini filling can be made from a variety of products. The most popular filling option is minced meat. Rice and vegetables are often added to it. That is, they make the filling as for cabbage rolls. Instead of minced meat, you can take chicken or use poultry fillet, chopped into small pieces with a knife.
You can make fillings without the meat component. This could be a vegetable filling or, for example, minced rice with mushrooms. You can make a filling from cottage cheese with herbs, it will turn out very original and tasty.

- Zucchini (medium size) – 1 pc.;
- Minced chicken – 200-230 g;
- Tomato (large size) – 1 pc.;
- Hard cheese – 70 g;
- Vegetable oil for frying;
- Salt, black pepper - to taste.
How to prepare:
- Cut the zucchini into slices approximately 1-1.5 cm thick. Add some salt, mix gently with your hands and set aside.
- Cut the onion into pieces and place in a blender bowl. We also send pieces of chicken fillet there. Beat the mixture until pureed. Salt the minced meat and season with your favorite spices.
- Wipe the zucchini with a paper towel to remove excess moisture. Place approximately 1 tbsp on top of each circle. l. prepared minced meat.
- Heat the vegetable oil in a hot frying pan and place the pieces minced side down. Fry on both sides until golden brown. Remove to a plate lined with paper towels.

Zucchini stuffed with meat and rice in a frying pan
Let's cook stuffed zucchini in a frying pan, filling them with meat and rice. We recommend choosing a frying pan with a thick bottom so that the dish does not burn during cooking.
- 1 medium sized zucchini;
- 0.5 glasses of water;
- 150 gr. minced meat;
- 1 egg;
- 1 tablespoon pre-cooked rice;
- 1 clove of garlic;
- 0.25 teaspoon black pepper;
- 4 tablespoons of sour cream;
- salt to taste;
- a little vegetable oil.
Peel the zucchini, cut crosswise into circles 4-5 cm thick. Using a knife, cut out the central part.
Advice! You can use a suitable sized round pastry cutter to cut out the center of the zucchini.
Blanch the prepared zucchini in salted boiling water for 5-7 minutes. There is no need to boil the zucchini until tender; they will then continue to stew in the sauce.
Recipe for zucchini with minced meat and cheese
Below is a recipe that will appeal to everyone who adheres to proper nutrition. Soft and juicy zucchini stuffed with meat under a layer of melted cheese is a delicious treat that’s hard to resist.
Ingredients:
- Zucchini – 2 pcs.;
- Minced meat – 350 g;
- Hard cheese – 150 g;
- Salt, black pepper - to taste.
Cooking instructions:
- Cut the zucchini into discs approximately 2-3 cm thick. Cut out the pulp from each.
- Chop 1/3 of the pulp into small cubes and add them to the minced meat. Pepper and salt the mixture to taste. Mix with a spoon.
- Cover a baking sheet with parchment and place the rings on it. We fill them with minced meat and sprinkle generously with grated cheese on top.
- Bake at 200 degrees for 30-40 minutes. This snack definitely won’t harm your figure, and the taste is finger-licking good.

This dish is very easy to make yourself at home. Therefore, even a beginner in the culinary arts can cope with its preparation.
You will need:
- Zucchini - 3-4 pieces;
- One onion;
- Hard cheese – 50 g;
- Minced meat – 150 g;
- Salt and spices - to taste.
Recipe for baked zucchini with minced meat:
- Cut the main vegetable into thick slices and select the middle from each. You should get blanks in the form of “barrels”, which we rub from the inside with spices and salt;
- Combine the minced meat, finely chopped onion and spices, add the zucchini pulp cut into small pieces. Mix the ingredients thoroughly and fill the barrels with them;
- Sprinkle the food with grated cheese on top and bake in the oven for about 40 minutes at a temperature of 180 degrees. The barrels should become soft. Then the dish can be taken out and served to the table.
How to cook zucchini with minced meat and tomatoes
The next dish is a bit like French ratatouille, but without eggplant and with minced meat. Everything is sprinkled with grated cheese on top, which melts in the oven and turns into a beautiful crust.
Ingredients:
- Zucchini – 2 pcs.;
- Minced meat – 400 g;
- Potatoes – 2 pcs.;
- Tomato – 2 pcs.;
- Sour cream – 2 tbsp. l.;

Cooking method:
- Place the minced meat in a bowl, sprinkle it with salt and pepper. Knead. Shred the zucchini into fairly thick slices.
- Cut the potatoes into thin slices. We do the same with tomatoes. Add some salt to the vegetables to taste. Place the ingredients in a heat-resistant form as in the photo in the following sequence: tomato – zucchini – minced meat – potatoes.
- Lubricate the top well with sour cream and sprinkle with finely grated soft cheese.
- Send to bake in the oven at 180 degrees for 1 hour. The appetizer turns out beautiful and tasty, it can be placed on the festive table.
Zucchini stuffed with buckwheat and mushrooms
This dish option will appeal to fans of a vegetarian diet. We will stuff the zucchini with mushrooms and buckwheat.
- 2 zucchini;
- 70 gr. buckwheat;
- 1 onion;
- 200 gr. champignons;
- 3 cloves of garlic;
- 1 bunch of dill;
- salt, ground black pepper to taste;
- vegetable oil.
For the sauce:
- 2 tomatoes;
- 2 cloves of garlic;

Boil the buckwheat in advance. While the buckwheat is cooking, prepare the mushrooms: cut the champignons into small slices. Peel the onion and garlic, finely chop the vegetables. Heat vegetable oil in a frying pan, fry the onion and garlic in it, then add the mushrooms and cook until all the juice has evaporated. Add finely chopped dill and pre-cooked buckwheat. Mix and season the filling to taste.

- Zucchini – 700 g;
- Garlic – 3 cloves;
- Dill – 70 g;
- Chicken eggs – 2-3 pcs.;
- Minced chicken – 500 g;
- Onion – 2 pcs.;
- Hard cheese – 100 g;
- Tomato – 150-200 g;
- Salt, black pepper - to taste.
How to prepare:
- Three zucchini on a coarse grater in a deep plate. Add some salt and mix with a spoon. Let stand for 15 minutes and then drain off the juice.

In this recipe we will stuff zucchini with vegetables, rice and melted cheese.
- 8 young zucchini;
- 3 onions;
- 3-4 carrots;
- 30 gr. butter;
- 50 gr. fresh dill;
- 1 cup boiled rice;
- 200 gr. processed cheese (if desired, you can replace processed cheese with hard cheese);
- vegetable oil;
- salt, ground black pepper to taste;
- dry aromatic herbs to taste;
- 3-4 berries of dry barberry;
- 100 ml water;
- vegetable oil for frying.
Cut the onion into cubes and grate the carrots. Fry the vegetables in vegetable oil until tender, add salt and pepper. Cut the processed cheese and butter into small cubes. Remove the fried vegetables from the stove, add melted cheese and butter to them, mix.
Products will begin to melt upon contact with hot vegetables. Then add boiled rice to the vegetables and cheese. Chop the greens and add them to the filling. Season to taste with salt and pepper.
Peel the zucchini, cut into circles about 4 cm wide. Carefully cut out the centers, turning the zucchini circles into rings. Finely chop the cut out zucchini pulp and mix with the filling. Stuff the prepared zucchini with the prepared minced meat.

The technology for preparing dishes from zucchini stewed with minced meat differs depending on the recipe. But there are several rules, the observance of which guarantees an impeccable option.
- Young zucchini is more suitable for cooking. They do not need to be cleaned, just wash and dry well enough. If the zucchini is large, they must be cleaned of seeds and skin. Ripe zucchini is not suitable for all dish options.
- The dish will turn out tastier if you use homemade minced meat from high-quality meat to prepare it. A mixed version of beef and pork works well. You can also use minced chicken. When purchasing in a store, give preference to fresh or chilled, but not frozen, product. Pay attention to its appearance and production and expiration dates.
- You can stew zucchini with minced meat in water or sauce. In the latter case, the dish will turn out more tasty. Tomatoes, sour cream, and a mixture of them work well.
- Zucchini itself has an almost neutral taste, so the addition of herbs and spices has a good effect on the organoleptic qualities of the finished dish. When choosing them, you need to consider how well they combine with the meat from which the minced meat is made.

How to stew zucchini with carrots and onions in sauce
- Fry the minced meat in a frying pan in 1 tbsp. vegetable oil. Grind the meat, breaking up large lumps. Fry for about 5 minutes.
- We push the minced meat towards the walls of the pan and add chopped onion and grated carrots to the center. Lightly fry the vegetables in the center of the dish and mix with the meat.
- Peel the tomato and turn it into puree. Pour the chopped tomato into the frying pan with the minced meat and stir. Fresh tomatoes can be replaced with tomato paste diluted in a glass of water.
- About 10 minutes after introducing the tomato, add a pinch of salt and sugar, mix and continue to simmer the vegetables and minced meat for another 10-15 minutes with the lid closed. During the process, you can add about 100 more grams of water and let the products simmer a little longer, this will only improve the taste of the sauce.
- Taste the sauce and add salt, sugar, and pepper if necessary.
While the vegetables and minced meat are stewing in a frying pan, prepare the zucchini. Wash the fruits and remove the skins. We cut the zucchini lengthwise into two parts, remove the seeds from each using a spoon, vegetable peeler or knife - whichever is more convenient, cut off the ends.
At this stage, the weight of the zucchini is determined. By eye, my zucchini was about 30 cm long and weighed 600 grams after peeling.
I hope it’s clear that the width of the zucchini fettuccine will be equal to the thickness of the wall of the zucchini, which is what we will plan with a vegetable peeler. Remove the squash pulp layer by layer.

Place the chopped zucchini in the frying pan with the minced meat and carefully mix them into the sauce for even distribution. We only have 5-7 minutes left to simmer the zucchini. Cover the dish with a lid and remove the frying pan from the heat - the zucchini stewed with carrots and onions should soak in the meat sauce and absorb all the flavors. Leave the dish alone for 15 minutes.
Serve the stewed zucchini in minced meat sauce hot, sprinkled with herbs.
Step by step recipe
Remove the hardened skin from the zucchini and remove the seeds. If you use a young zucchini, then do not remove the skin and seeds, because young zucchini has a soft and tender skin and seeds. We wash the remaining vegetables, peel them, and remove the core from the bell pepper. Let's start chopping vegetables. Cut the zucchini into cubes, chop the pepper into strips, and grate the carrots. Chop the garlic and onion very finely.
Cut each tomato in half and grate with the soft side. This is very convenient, since the skin of the tomato remains in your hands, and the soft pulp and juice of the tomato are in the plate, which is what we need.
There is another way. Make a cut on the tomato with a knife, lower the vegetable into boiling water for 1 minute, then lower into ice water. The skin will come off on its own. Then finely chop the tomato.
Fry finely chopped onion in a frying pan with oil, then add grated carrots and mix. Sauté the vegetables over low heat for 3-4 minutes. Then add tomato puree, mix, let the mixture simmer for 4-5 minutes, add zucchini and bell pepper.
In a second frying pan, fry the minced meat in vegetable oil.
When the minced meat is slightly browned, add it to the pan with vegetables. Add 2-3 tablespoons of sour cream and salt to taste. You can add a little hot boiled water (1/2 cup) to the vegetables to make the vegetables stew faster. Simmer vegetables for 20-30 minutes. 10 minutes before the end of stewing, add garlic, and 5 minutes - chopped herbs and a little seasoning (to your taste).
