Rolls baked at home. Recipes with cheese, chicken, shrimp, mussels, salmon, eel, crab

General cooking principles

Baked rolls differ from standard rolls only in that they are cooked in the oven or microwave. To emphasize the taste, a special sauce is added, which most often consists of standard or Asian mayonnaise, tobiko or masago caviar and some spicy component. Baking is carried out at a fairly high temperature.

In order for the products to be not only tasty, but also aesthetically pleasing, they need to be made using a special tool. A baked dish retains more beneficial properties than a fried one. Therefore, people who care about their health should prefer these hot rolls rather than fried tempura ones.

When baked, this Japanese dish has 2 advantages:

  • Raw fish can contain dangerous bacteria, and heat treatment destroys them.
  • Regular rolls are eaten with salty soy sauce. This is highly undesirable for people with hypertension and kidney disease. Baked rolls are prepared with other sauces that are not so harmful.

At home, you can make your own rolls from any ingredients. To do this you will need to purchase special tools and products. There is no need to follow existing recipes exactly - you can experiment with ingredients and create your own unusual combinations. The main thing is to purchase quality ingredients for cooking.

The general rule can be represented as follows:

Baked rolls with chicken

Rolls baked at home are made according to the same culinary rules as regular rolls. This is a very easy recipe using common and inexpensive ingredients. If desired, it can be changed or supplemented in accordance with personal wishes.

What ingredients will you need?

To make these baked rolls you will need:

  • 2 tbsp. short grain rice;
  • 4 tbsp. water;
  • 1-2 tbsp. l. special vinegar for dressing;
  • 5 layers of nori;
  • hard cheese of any kind, finely grated;
  • boiled or fried chicken fillet;
  • lightly sweetened mayonnaise.

Step-by-step cooking process

To make baked rolls filled with chicken fillet, you will need to follow these steps:

  1. It is necessary to rinse the rice with cold water, place it in a saucepan with a thick bottom, add clean water in a ratio of 1:2 and bring to a boil over high heat.
  2. Then you need to reduce the heat to low, cover the container with a lid and cook for 15-20 minutes until the grains become soft.
  3. The finished rice should be removed from the heat and allowed to cool slightly, then add rice vinegar and mix very carefully (literally with a few sharp movements).
  4. Next, you need to place a sheet of nori on a bamboo mat and distribute the rice evenly over its rough surface.
  5. In the middle you need to put the filling - chicken cut into thin slices, then tightly roll into a roll, pressing it tightly, and cut into standard pieces (7-8 pieces) with a sharp knife.
  6. Next, you need to repeat the same thing, using all the sheets of nori.
  7. Then you need to very finely chop a little more chicken fillet and mix with sweetened mayonnaise and grated cheese.
  8. The consistency of the sauce should be very thick. You need to put it on each piece, forming “caps”.

  9. Bake the products in the oven at 180-200ºС for approximately 10 minutes. When they are ready, it is recommended to set them aside for 5 minutes to cool slightly.

What can I add?

This recipe is basic, so it can be supplemented with any components. If you fry chicken fillet in teriyaki sauce, the rolls will acquire an interesting sweetish taste. Hard cheese can be replaced with cream cheese, and cucumbers can be added as an additional filling component.

If you want to achieve a spicy taste, it is recommended to add a few chopped olives or drops of chili sauce to the sauce.

How to serve these rolls

The dish is served only warm, and the standard Japanese garnish of wasabi paste and pink ginger is optional. Baked rolls turn out quite juicy and salty, and usually do not need any additions, including soy sauce.

It must be kept in mind that they should not be heated. The rolls will lose their taste and attractive appearance. This is especially important if you plan to make them for the holiday table.

  • capelin caviar 150g.
  • mayonnaise 2 tbsp. l.
  • Philadelphia cheese 3 tbsp. l.
  • hot sauce to taste

Step-by-step instructions on how to prepare:

  1. Capelin caviar can be found today in almost any supermarket. You can take it with white sauce. If this is not available, you can replace it with regular salted caviar. Place the caviar in a deep bowl, add mayonnaise to it. It is preferable (according to the recipe) to take Japanese soy mayonnaise, but if you can’t find one, you can use regular full-fat mayonnaise (from 70%).
  2. Add hot sauce and soft curd cheese (ideally Philadelphia) to the mixture of mayonnaise and caviar. There is no need to add salt, since when baked, the caviar itself will release as much salt as needed.
  3. Mix all ingredients until smooth so that the cheese does not form lumps. The sauce is ready. By the way, this mixture can be used as a regular spread on bread - it turns out incredibly tasty!

Some Important Recommendations

To make homemade baked rolls tasty and of high quality, you should listen to the recommendations of professional sushi chefs:

  • When choosing rice for preparing them, you can also prefer ordinary coarse-grained varieties. The result depends on the correct cooking.
  • Before cooking, rice must be rinsed in several waters, then soaked in clean cold water for half an hour.
  • It is advisable to transfer the cooked cereal into a wooden or ceramic bowl and season it with special rice vinegar in a small amount. Thanks to this, the grains will acquire viscosity.

  • An indispensable ingredient in rolls is nori. They should definitely be purchased in undamaged packaging, into which no moisture could get in. Raw layers stick together during cooking and spoil the appearance of the dish.
  • The main secret of good rolls is also that you should not mix more than five components in the filling.
  • Experienced sushi chefs make such products at great speed. This is important because the dish does not have time to maintain the human body temperature.
  • When making baked rolls at home, you must use a special bamboo mat to form them. Without it, the products will become uneven and will not hold their shape.
