Nutritionists tell us from all sides that turkey meat is almost the healthiest meat in the world. First, turkey breast contains very little fat, including bad cholesterol. Therefore, its consumption is safe for the figure and health of the cardiovascular system, although in this parameter it is comparable to chicken breast. Secondly, unlike chicken, turkey is considered a less allergenic meat, since due to the less popularity of this product, birds are not stuffed with as many hormones, antibiotics and other medications as is the case with chickens. These qualities make turkey a wonderful product for daily consumption, a source of valuable animal protein, vitamins and iron.
However, like any lean meat, turkey during heat treatment can turn out dry and therefore less tasty. To solve this problem and get juicy and tender meat that the whole family will love, I suggest cooking turkey fillet in sweet and sour sauce with pineapples. In this recipe, the turkey is first marinated in wine and soy sauce, then quickly fried over high heat to preserve the juiciness of the pieces, and then stewed with vegetables and canned pineapple. As a result, the meat is saturated with a variety of aromas and tastes, becomes soft and melts in the mouth, and as a side dish you get a very tasty vegetable sauce that goes well with rice or any other grain of your choice. Try making turkey stew with vegetables and pineapples, and you will see that something healthy can also be very tasty!
Preparation
According to the original recipe, the dish is prepared with the addition of peanuts. I don’t use this bean, but if you cook with it, you will get closer to the authentic recipe. The pulp of chicken, turkey and pork is suitable as a meat ingredient according to the recipe. This time I have Chinese turkey.
Cut the turkey fillet into fairly large pieces, rinsing and drying first.
Marinate the pieces of meat for at least an hour in a mixture of soy sauce and wine vinegar. Use other types of acid for the marinade, if you want, lemon juice or other vinegar will do, just make sure that the concentration percentage is no more than 6%. If more, dilute with water.
First, fry the chili pepper in a frying pan, if it is fresh, I put in a dry one and let it sizzle a little. Fry the sweet pepper in this hot oil, cutting it into strips.
Add ginger and garlic, peeled and finely chopped.
Fry, stirring until the vegetables are half cooked. Remove them from the pan.
Leave in a bowl while you cook the meat.
Fry well-marinated turkey pieces in a small amount of oil, placing them in a frying pan in portions. Do not touch them at first, let the juice seal inside.
Then turn it over. Fry, but do not overcook.
Remove the turkey to a plate with the vegetables. Pour chicken broth into the pan, add peanuts if you decide to put them in the dish. Reduce the broth slightly - this is a Chinese sauce for turkey with vegetables.
Dip turkey and vegetables into sauce. Hold for 2 minutes, shaking.
Serve Chinese-style turkey with freshly cooked rice. Delicious!
Cooking time: 30 min.
Number of servings: 4 pcs.

It is advisable to take turkey fillet (you can remove the bones from the thigh) or breast. These parts contain a minimal percentage of fat and bad cholesterol. This means that the food will not only be tasty, but also beneficial for the health of the heart and blood vessels, and also safe for the figure.
- Take a container where you pour all the spices (ground black pepper, ground chili pepper, ground paprika, dried garlic), and also add soy sauce, vinegar, ketchup and sugar. Mix all ingredients until smooth. This creates the marinade that you will need to cook the turkey (see photo).
- Now you should prepare the meat. It is advisable to take the turkey thigh loin, freeing it from the bones. The meat must be washed and dried well. Then get rid of films and excess fat. After this, cut the meat into small pieces.
- Add the prepared turkey pieces to the marinade. Mix thoroughly with a spoon or hands. After this, cover the bowl with the turkey in the marinade with cling film and put it in the refrigerator. Leave the product there for twenty minutes. This time is enough for the food to marinate.
- After this, the fillet must be placed in the multicooker bowl. Just place it on the bottom along with the rest of the marinade.
- Now turn on the “Stew” mode and cook the food for one hour. Sometimes you need to add water so that the meat does not turn out dry. Do it. Before turning it off, you need to take green onions, wash and dry them, then chop them and put the onions in the slow cooker with the meat. Now you can pour the finished sweet and sour dish, prepared according to the recipe with step-by-step photos, into plates, add a side dish and serve.

We will need turkey fillet, tomato sauce, onion, garlic, egg, sugar, carrots, white wine vinegar, olive oil, salt, pepper, cornstarch.
Beat the egg with 1 tbsp. l. starch, salt and pepper.

Then coat each piece of meat in the remaining cornstarch.
Heat the oil in a saucepan and lightly fry the meat on all sides.
Turkey meat is considered dietary and healthy. The fillet of this bird is low in fat and bad cholesterol, which has a positive effect on both health and figure. This meat is especially good for the heart and blood vessels: the high content of bad cholesterol contributes to the formation of plaques, and turkey contains little of it, but is rich in vitamins and microelements.
The only negative is that due to the minimal fat content, the cooked meat can be dry, but this can be solved with culinary tricks. The turkey is pre-marinated, and during the cooking process various vegetables and fruits are added to the meat, which give the finished dish juiciness and aroma.
Meat with fruits and vegetables can be served with various side dishes or as a separate dish.

Chinese turkey in sweet and sour sauce
- turkey fillet in the amount of 800 g;
- onion – 1 large head;
- carrots – 1 pc.;
- bell pepper – 1 pc.;
- canned pineapples – 1 can (average 580 ml);
- dry red wine – 100 ml;
- soy sauce – 70 ml;
- salt, pepper to taste;
- Sunflower oil - for frying.
Preparation:
- Wash and marinate the turkey fillet to soften the meat and cook faster. For the marinade, mix wine and soy sauce (50 ml), add pepper to taste. Cut the fillet into pieces, pour in the prepared marinade and set aside for 30 minutes.
- At this time, let's take care of the vegetables. Cut the onion into thin half rings, chop the carrots into strips, you can grate them on a Korean carrot grater.
- Cut the bell pepper into strips or as you like. You will need pineapples in cubes, so you can immediately buy them in pieces or cut the rings into pieces.
- When all the products are prepared, we begin the cooking process. In heated oil in a frying pan, fry the onions and carrots for about 10 minutes at medium temperature.
- Separately from the vegetables, fry the turkey pieces. The meat must be placed in hot oil so that it sets into a crust and retains all the juiciness inside. It’s better to fry in one layer, so if you can’t place everything at once, then do it in several approaches.
- After all the pieces are browned, put the meat, onions and carrots in the pan and simmer for 5 minutes.
- Add bell pepper and pineapple pieces and simmer for another 5 minutes.
- At the end, pour in the remaining soy sauce, 20 ml of syrup from canned pineapples, cook under the lid at low temperature for 20 minutes.
- Aromatic, juicy Chinese-style turkey with pineapples in sweet and sour sauce can be served. In addition to it, we serve boiled rice.
- The rice will soak up the sauce and flavors and will be delicious paired with the meat.
- In addition to pineapples, oranges will add juiciness and exquisite taste to turkey.
How to Cook Turkey Stuffed with Pineapples and Apples
- 1 turkey carcass (about 8 kg);
- 120 g cheese;
- 30 ml olive oil;
- 350 g pineapples;
- 5 pieces of garlic;
- 3 branches of rosemary;
- 2 heads of garlic;
- 4 apples;
- ½ lemon;
- nutmeg;
- Provencal herbs.
Time - 8 hours + 20 minutes + marinating.
Calories - 88.
Product preparation:
- If you have a frozen bird carcass, then you need to defrost it in cold water at the very bottom of the refrigerator. It takes one hour to make one kilogram of carcass;
- Rinse the finished turkey outside and inside, and then wipe it dry on all sides;
- Peel the garlic heads, crush them using a crush and place in a bowl;
- Add olive oil, some spices, salt and mix;
- Put the mass aside for twenty minutes, because it needs to brew;
- Place the bird in a bag and place half of the marinade inside, rub it inside;
- Rub the outside of the turkey with the other half;
- Seal the bag and marinate the bird overnight. At this time, it is worth calculating when you will need to take the bird out of the refrigerator to bake, since it bakes for one hour per kilogram of weight. That is, an 8-kilogram carcass will spend about eight hours in the oven;
- To prepare the filling, you need to rinse the rosemary and chop it;
- Peel the remaining five cloves of garlic;
- Peel and cut fresh pineapple into cubes; if canned, remove the syrup and cut into cubes;
- Remove the wrapper from the cheese and cut it into thick slices;
- Peel the apples, cut each into eight pieces, removing the centers;
- Combine apples, cheese, pineapple and rosemary;
- Squeeze the juice of half a lemon, nutmeg, herbs, salt and pepper into the ingredients;
- Mix all the ingredients and stuff the marinated turkey with them;
- The bird's legs must be tied;
- Cover the baking sheet with two sheets of foil, the length of which will be one meter;
- Where they meet (seam), place the third sheet;
- Place the bird in the center and wrap it as correctly as possible in the third sheet;
- After this, wrap the other two sheets, but not tightly so as not to tear them;
- Preheat the oven to 250 Celsius;
- Once heated through, place the turkey inside;
- Bake for thirty minutes, then reduce the temperature to 180 degrees;
- Next, bake for the calculated amount of time;
- Half an hour before the end of cooking, remove the baking sheet/mould with the turkey and carefully open the foil so as not to lose the valuable juice that the meat gave;
- Start piercing the bird in the breast and thigh area;
- If the juice is clear, it is ready; if it is scarlet, then it needs more time, which means you need to wrap the foil back and bake the meat until done;
- If the meat is ready, then leave the foil unfolded and return it to the oven to get a golden brown crust at 200 Celsius;
- Every five minutes the bird needs to be watered with its own juice and checked to make sure it is not browned too much. Serve the cooked turkey immediately to the table.
Turkey fillet with oranges
- turkey fillet – 0.5 kg;
- oranges – 2 pcs.;
- starch – 1 tsp;
- salt to taste;
- herbs to taste.
Preparation:
- Wash and dry the meat. To make it soft, you need to either beat it with a hammer or prick it. It is better to put the piece in a plastic bag or cover it with cling film so that the pieces do not fly apart.
- Salt the prepared meat and sprinkle with your favorite herbs.
- Carefully remove the zest from the orange with a grater and cut off the white layer, as it will give off bitterness.
- Cut one orange into circles, not too thin. Cut out the flesh of the second, remove the seeds and cut into cubes.
- Place a circle of orange on a piece of fillet in the center and fold it into an envelope. To be secure, we secure it with toothpicks so that the envelope does not unfold.
- Then we wrap the envelopes in foil and bake in the oven for 25 minutes at 180 degrees.
- While the meat is cooking and soaked in orange juice, prepare the sauce. Rub the chopped orange pulp through a sieve, add salt, pepper to taste, zest and mix everything.
- We dilute the starch in water and add it to the sauce.
- Cook in a frying pan at low temperature until thickened.
- When serving, place the envelopes on a plate and pour over the orange sauce.
To add juiciness, benefits and flavor to the meat, you can cook it according to the recipe with quince.
Description of preparation:
I invented this recipe for turkey in sweet and sour sauce when I was inspired by a book I read on the topic of Chinese cuisine. As you know, the Chinese really like to mix ingredients that seem incompatible to a Slavic person. And turkey in sweet and sour sauce is one of those dishes that is based on an unusual combination. If you like to experiment, be sure to try it, since the ingredients used are quite affordable. The most outlandish is soy sauce, which, you see, has not been inaccessible for a long time and is sold inexpensively and everywhere.
So, how to cook turkey in sweet and sour sauce: 1. First, prepare all the ingredients we need. Cut the turkey fillet into large cubes. 2. In a large bowl, toss the turkey pieces with the cornstarch, salt, pepper and minced garlic. 3. Beat the eggs and dip each piece of turkey in them. 4. Heat the oil in a frying pan and fry the turkey pieces on both sides until the batter forms a crispy crust. 5. Meanwhile, in a small bowl, combine the remaining ingredients: sugar, soy sauce, ketchup, vinegar and spices. Stir. 6. Place the fried turkey pieces on a baking tray and generously pour our sweet and sour sauce on top. Place in the oven for 30 minutes at 180 degrees. The dish is ready. It is best served with rice.
Turkey stewed in sweet and sour sauce is a good alternative to chicken, although this dish also works great with chicken.

Useful tips
Some housewives advise buying turkey no earlier than two days before cooking. At the same time, do not forget to rinse and dry the bird. If you purchased frozen fillets, remember that they are never cooked. It should simply be left to defrost at room temperature. Otherwise, the dish will not turn out juicy and as tasty as possible.
Remember that it is recommended to marinate the turkey before roasting. Only in this case the meat will turn out tender and juicy. You can use water, honey, spices or lemon juice as a marinade.
If you do not want to marinate the fillet, then you can simply rub it thoroughly with various spices and herbs. But at the same time, the bird should be lubricated with them both outside and inside.

Chinese-style turkey “One hundred percent”
Many oriental dishes are distinguished not only by their excellent taste, but also by the speed of preparation. And the tendency of Easterners to systematize everything is also known.
Natives of the Celestial Empire, like their neighbors, love to put everything in order, to organize the world around them in every possible way, and cooking, of course, is no exception.
Today’s recipe is a vivid illustration of this - all stages of preparation last exactly the same time, namely one hundred seconds.
- Turkey fillet (300 gr.)
- Broccoli (100 gr.)
- Carrot
- Leek
- Ketchup
- Corn starch
- Ginger
- Garlic
- Brown sugar
- Soy sauce (50 ml)
- Wine vinegar (20 ml)
- Black pepper
- Salt
- Vegetable oil
Cut the fillet into small pieces and pour in half the soy sauce. Season to taste and leave to marinate for ten minutes:
We cut vegetables as follows:
Roll the turkey in starch and lightly “massage” it, as if driving the starch into the fillet.
This technique allows starch particles to slightly penetrate into the product, and subsequently, during heat treatment, to expand and, as it were, “push apart” the fibers, making the meat soft:
Place a wok or similar vessel over high, high heat, pour in a couple of tablespoons of vegetable oil, turn on the timer and fry the turkey for one hundred seconds:
Place the fillet in a colander to drain the oil:
In its place, load the carrots and also fry for a hundred seconds:
Add broccoli, onion, garlic, ginger and fry for another hundred seconds:
Pour 50 ml of hot water, return the turkey, add ketchup, the rest of the soy sauce, sugar and wine vinegar.
Stir and cook everything over the same high heat again for one hundred seconds:
Thus, the entire process took us 400 seconds, or just under seven minutes.
