The dish consists of long rectangular sticks of meat, or, more simply, sticks, in a crispy, fried breading, and is usually served with ketchup. Perhaps this is a modern treat - a variation of American fast food, for example, KFC, only, naturally, cheaper than from American franchise restaurants. Well, that’s not the point – cheap and tasty. The children will be delighted.

INGREDIENTS: chicken breast fillet (boneless and skinless) – 200 g, corn starch – 50 g, breadcrumbs – 100 g, chicken egg – 1 pc., Shaoxing rice wine – 10 g, dry chicken broth granules – 0.5 tsp, salt - 1 tsp, ground black pepper - to taste.

To make chicken fillet sticks and not clumsy squiggles, the chicken fillet must first be frozen, and to such an extent that the chicken meat can still be cut, but at the same time it would still hold its shape after cutting. You need to cut into rectangular bars. Place the chopped bars into a suitable container (or gastronorm container), salt and pepper, add dry chicken broth in granules, sprinkle with Shaoxing rice wine, mix the contents of the container, cover with cling film and put in the refrigerator to marinate for 15-20 minutes.

Prepare three containers. Break a chicken egg into one and beat it a little until the white and yolk are smooth, you can add 1 tbsp. water. Pour corn starch (or wheat flour) into the second, and add breadcrumbs into the third. First roll the chicken strip in corn starch on all sides. Why in starch and not in flour? It’s just that the starch will stick to the surface of the wet meat exactly as much as it can stick, and quite evenly; moreover, excess starch can be shaken off when the flour sticks and, getting wet, begins to stick to your hands. Then dip the starch-breaded strip of chicken into the beaten egg.

Then roll the chicken strip in the breadcrumbs until the surface of the chicken strip is completely coated in crumbs. Set aside on a dry cutting board. Do the same with the remaining chicken strips. Let the strips sit for 10 minutes so that the crumbs stick to the breading more firmly.

Heat the vegetable oil in a wok (saucepan or deep fryer) until hot, then reduce the heat to above medium (up to 160⁰C) and fry until golden brown for 6-8 minutes in batches of several pieces (I cooked in a deep fryer, the container is small and only fit 2 sticks each).

Then carefully remove the finished chicken fingers from the hot oil with a slotted spoon and place them on a plate lined with a paper towel to drain excess oil. Rinse the green onion stalk, shake off the water, pat dry with a towel and cut only the green part into rings.

Transfer the finished sticks to a serving dish, sprinkle with green onion rings and serve. This treat is served with ketchup (or another favorite sauce).
