Secrets of making delicious manna without flour

The technology for making semolina pie is incredibly simple, and the recipe includes affordable products that can always be found in any housewife’s kitchen. The basis of baking is semolina: it does not require special preparation, but if you have not completely clean semolina, in which specks, dark inclusions or lumps are noticeable, it is better to sort out such semolina first .

Baking from semolina without flour is made with the addition of milk or some fermented milk product (sour cream, kefir, curdled milk, yogurt, etc.). The cereal is poured with liquid and left to swell for a while - this technique allows you to get a moderately thick but fluid dough without adding flour, which bakes perfectly and turns into a delicate porous crumb. The required components of the dough base for manna are eggs, sugar, baking powder and fats (butter or vegetable oil, spread, margarine).

If desired, various fillers are added to the manna - cocoa, poppy seeds, nuts, cottage cheese, berries, pieces of fresh or dried fruit, which improve the taste and appearance of the sweet dish. After baking, the pie has a beautiful golden brown crust, so this pastry is very appetizing even without any decoration. If you want to make your manna more attractive or are preparing such a dessert for the holiday table, you can decorate it with powdered sugar, chocolate or coconut shavings, pour over jam, jam or condensed milk, and decorate it with a colorful scattering of fresh berries or candied fruits.

The process of baking manna without flour does not require much effort from the housewife, because the finished dough is simply transferred to a greased form and sent to an oven preheated to 160-180 °C. Baking time directly depends on the thickness of the future pie, but on average does not exceed 45 minutes. To ensure that your semolina pie always turns out tasty and beautiful, remember some useful tips from venerable confectioners:

  • The minimum time for infusing semolina in a dairy product is half an hour, the optimal time is a couple of hours, during which time all the grains can swell well, and the dry mass will turn into an ideal liquid base for the pie. You should not keep the semolina in the liquid for more than three hours, otherwise the dough base will become very compact and form grains, which will greatly spoil the appearance and taste of the finished baked goods.
  • If you are short on time, you can use a warm one instead of a cold liquid product according to the recipe - this will make the semolina swell faster.
  • To improve the taste and color of baked goods, you can add aromatic spices to the dough - vanilla, cinnamon, turmeric, lemon zest.
  • If for some reason the test mass turns out to be liquid, you can correct the situation without resorting to adding flour by using ground oat flakes. Balls or rings for quick breakfasts, coconut flakes and cocoa absorb moisture well - such ingredients will help not only compact the dough to the desired consistency, but also give the dessert an interesting taste.
  • You can use absolutely any form for baking manna without flour, but it must first be generously greased, since the pie dough is liquid and can stick to the walls.
  • To prepare delicious baked goods from semolina, it is important to observe the temperature regime: you cannot set the temperature in the oven above 180 °C, otherwise the semolina may burn on the outside, but remain damp on the inside.
  • While baking the semolina pie, it is better not to open the oven door or the multicooker lid so that the semolina does not fall off and turns out fluffy and airy.

Recipe 5: Manna in a slow cooker

It’s easy to cook manna in the oven, and even in a slow cooker it’s a one-two punch. In addition to cottage cheese, the recipe contains a small amount of sour cream. You can take it at any fat content, but not too liquid. If you add soda instead of baking powder, the color of the sponge cake may turn out a little darker. If you are not a fan of overly sweet baked goods, reduce the amount of sugar. To achieve a more tender pie, the cottage cheese needs to be rubbed or mixed with a blender to break up the lumps.

Ingredients : a glass of sugar and semolina, 4 eggs, 0.5 kg of cottage cheese, baking powder 1 tbsp. spoon or soda ½ teaspoon. l., sour cream 5 tbsp.

Cooking method

Mix cottage cheese, semolina and sour cream. Can be mixed with a blender. Separately beat the eggs and sugar, adding them to the cottage cheese. Add baking powder and stir.

Grease the bowl with margarine or butter and pour in the dough. Bake for 60 minutes on the “baking” setting. When the cake is removed from the slow cooker, it settles a little, but still remains quite thick and fluffy.

3. When our semolina swells, mix it with the egg mixture. It’s also better to mix with a mixer so that there are no lumps left in the text.

4. Melt the butter and let it cool a little. Next, we send it to the almost finished dough and knead.

It is best to use 82.5% fat, it tastes better and the finished pie will have a creamier taste.

5. Flour must be mixed with baking powder and sifted into the total mass. Then knead the dough until it becomes homogeneous.

6. Now it’s time to add the raisins, pour them directly into the finished dough and mix.

If the raisins are hard, then it is advisable to pour boiling water over them for 5 minutes.

7. The oven must be preheated to 200 degrees. Then grease the sides and bottom of the mold well with oil and pour the dough into it. We will bake the pie for about 40 minutes. When the time is up, cool the manna and you can eat.

Recipe 6: Pumpkin manna without eggs

This amber sunny pie will appeal to many. The cinnamon in manna gives it a festive Christmas touch. If you don't like the aroma of cinnamon, simply omit it from the composition. This recipe has one twist - the finished pie is filled with syrup. This moment will be especially appreciated by lovers of juicy and “wet” biscuits.

Ingredients : 2 cups of grated pumpkin, semolina – 1.5 cups, a glass of kefir, baking powder – 1 tbsp. or soda 1/2 teaspoon, sugar - 1/2 cup. Syrup: 100g apple juice or 1 large orange (you will need freshly squeezed juice), lemon juice - 1 table. l., sugar 2/3 cup, a pinch of cinnamon.

Cooking method

Finely grate the pumpkin and squeeze. The resulting juice can be used for syrup instead of apple or orange juice, or find other uses. Can be frozen.
