Hi all! For most of us, the “herring under a fur coat” salad is an integral part of any holiday table. There was basically only one question - in what order should the layers be laid out correctly?
But even here the housewives showed ingenuity, as a result of which real masterpieces are obtained from what would seem to be the simplest and most familiar holiday snack from childhood.
And today I want to present to you not only the classic versions of this salad and the sequence of layers in order, but I will also tell you about serving “herring under a fur coat” on the table in a new and original way.
I hope I've piqued your interest enough, so do your research and consider the options that suit you. But, since this appetizer is not the only one on the holiday table, I recommend that you look at many more interesting salad recipes - from crab sticks, shrimp, cod liver or chicken. There is even a whole menu for celebrating the New Year or birthday.
It will also be very useful for you to learn how to make homemade mayonnaise, since it will be one of the main ingredients in our “fur coat”. Making such a sauce will be cheaper than buying it and tastier.
“Herring under a fur coat” - sequence of layers in order
So, we'll start with the classic version. You can lay out layers as you wish. You can put it in a deep salad bowl, or on a flat dish, leveling each layer. You can also use a cooking ring or a springform baking dish for convenience.
Ingredients:
- Beets - 2-3 pcs.
- Herring fillet - 2 pcs.
- Potatoes - 5-6 pcs.
- Carrots - 2 pcs.
- Onions - 2 pcs.
- Mayonnaise
Preparation:
1. First, all products should be prepared. Boil beets, potatoes and carrots in advance and cool. Then peel and grate on a coarse grater. Peel the onion and cut into half rings. Cut the herring fillet into small cubes.
2. Now start laying out the food in layers, carefully leveling it with a spoon or spatula, in the following sequence:
- First, place the herring on the bottom.
- Next comes the onion, grease it with mayonnaise on top (you can make it into a mesh or spread it with a brush).
- Next comes a layer of potatoes, also grease with mayonnaise.
- The next layer is made of carrots (you can also grease it with sauce, but not necessarily).
- The last, final layer of our “fur coat” will be made from beets. Spread it with mayonnaise over all surfaces.
3. Place the finished salad in the refrigerator for several hours so that all layers are thoroughly soaked.
I usually make “herring under a fur coat” on the eve of the holiday, in the evening. And it stays cold until it is served.
Herring under a fur coat according to the classic recipe - sequence of layers without eggs
Lately I have often met people with egg intolerance. For the sake of the good health of some of my friends and relatives, I have to completely exclude this chicken product from their favorite dishes.
In this regard, it is worth making one small adjustment to the classic order of laying the layers of “Herring under a fur coat”, which will hide the absence of the egg component. And the taste will be even more original!
Ingredients:
- Peeled herring fillet – 450 gr.
- Potatoes – 4 pcs.
- Carrots, beets – 2 pcs.
- Red onion – 1 pc.
- Salt, granulated sugar, ground black pepper, mayonnaise, vinegar - to taste.
- Greenery - for decoration.
Classic recipe for “herring under a fur coat” with onions and eggs
The recipe presented here is also considered a classic and is used more often than others in my family, since I always put boiled eggs in this salad. It seems to me that they give the appetizer tenderness and airiness.
Ingredients:
- Herring fillet - 2 pcs.
- Boiled beets - 2-3 pcs.
- Boiled potatoes - 3 pcs.
- Boiled carrots - 2 pcs.
- Onion - 1-2 pcs.
- Boiled eggs - 4-5 pcs.
- Mayonnaise – 250 gr
- Salt - to taste
Preparation:
1. Peel the onion and cut a quarter into rings. Place it in a frying pan with vegetable oil and fry until light golden brown over medium heat.
This action is optional, optional. In fact, you can leave the onion raw, or you can pickle it.
2. Peel the remaining pre-boiled vegetables and grate them separately on a coarse grater.
Alternatively, you can not cook the vegetables, but bake them separately in the oven, in a sleeve, for about 40 minutes.
3. Peel the boiled eggs and separate the whites from the yolks. Mash the yolks with a fork and grate the whites on a medium grater. Cut the herring fillet into small cubes.
4. Now start assembling the salad in layers:
- The first layer is potatoes, you can lightly salt it, then cover it with a mesh of mayonnaise.
- Second layer - lay out the herring.
- The third layer is fried onions.
- Fourth layer - spread the yolk.
- The fifth layer is carrots, add a little salt and grease with a mayonnaise mesh.
- Sixth layer - lay out the beets, generously grease them with mayonnaise and cover with grated egg white.
5. Then put the “herring under a fur coat” in the refrigerator. Soak for at least 4 hours.
If you formed the salad in a round shape, remove it before putting it in the refrigerator.
Before serving, you can decorate as you wish. For example, fresh herbs and pieces of herring.
