You will need:
- Flour – 2 cups (volume 200 g).
- Granulated sugar - glass.
- Honey – 2 large spoons.
- Walnut kernels - ½ cup.
- Boiled water – 200 ml.
- Sunflower oil – 100 ml.
- Cocoa – 2 large spoons.
- Baking powder – 2 small spoons.
- Coriander - a pinch.
- Cinnamon – a pinch.
- Raisins – ½ cup.
Step by step recipe:
Pour sugar into a bowl, add honey. Dilute with hot water and stir thoroughly to dissolve the ingredients.
Pour in the oil, stir well again. Leave the mixture to cool.
Combine all dry ingredients in a bowl and stir.
Pour the contents from the bowl with the sweet mixture.
Add nuts and raisins (be sure to rinse). Stir the dough.

Ingredients:
- Flour – 250 gr.
- Cocoa powder – 2 large spoons.
- Honey – 6 large spoons.
- Water – 200 ml.
- Sunflower oil – 80 ml.
- Dried cranberries, raisins - ½ cup each.
- Prunes – ¾ cup.
- Jam (jam) for the layer – 5 tablespoons.
- Baking soda - small spoon.
- Cinnamon – 0.5 small spoon.
- Cloves, coriander, cardamom, nutmeg - a pinch each.
For the glaze:
- Sugar – 100 gr.
- Water – 50 ml.
How to bake:
- Warm the water a little, add honey, stir. Pour in the oil and mix the contents again.
- In a separate bowl, mix all the spices, soda, cocoa powder. Stir and add sweet water.
- Add flour in several additions, kneading each portion vigorously to break up any lumps.
- Add finely chopped prunes, cranberries, raisins.
- Grease the bottom and sides of the pan with butter and sprinkle with flour. Fill with dough. Preheat the oven to 180-200 o C. Set the timer for 50 minutes.
- Divide the finished gingerbread lengthwise into 2 cake layers of equal thickness. Spread the bottom layer with jam and cover with the top layer.
- Make glaze from water and sugar. When it thickens, immediately pour over the top of the pie and smooth it out. Do everything quickly because the glaze hardens instantly.
- Be patient for about 2 hours so that the gingerbread has time to soak in the jam and the glaze has time to harden well.
Fragrant monastic gingerbread - Lenten recipe with dried fruits
A very simple and quick way to get excellent pastries for tea.
Necessary:
- Flour – 2 cups.
- Apple juice – 200 ml.
- Dried fruits, any – ½ cup.
- Nuts - the same amount.
- Sunflower oil – ½ cup.
- Sugar - a glass.
- Soda – 0.5 teaspoon.
- Salt, vanillin, cinnamon - a pinch each.
How to cook:
- Finely chop the dried fruits and crush the nuts into crumbs.
- In a deep container, combine all the products listed in the recipe list. Flour is added last.
- Knead the dough, mix well. Transfer to form.
- Bake the gingerbread at 180°C. Cooking time: approximately an hour, depending on the power of your oven.

However, it is worth remembering that only a natural product has these properties, but not its imitation. It is easy to distinguish natural honey from artificial honey:
- Natural honey flows from the spoon in a continuous thin stream, does not drip or splash, and forms a small mound at the point of flow.
- In a glass of water, a spoonful of natural honey should dissolve completely, without any residue. There should be no rainbow film formed on the surface of the water, and no sediment at the bottom.
When making baked goods, it is better to use fresh, liquid honey. However, if the season of fresh honey has already passed and the product has become candied, it doesn’t matter - you can return it to its original consistency by heating it slightly in a water bath with constant stirring. You should not melt honey directly over the fire - most of the beneficial properties of honey disappear with strong heating. Honey gingerbread may contain vegetable oil - it is best to use refined sunflower oil, unless the recipe suggests otherwise. This oil will make the dough more tender and moisturized and will not impart an off-flavor to the baked goods.

Lenten gingerbread with jam and tea
The pie is traditionally made with tea leaves, which gives it a special twist. - Flour – 400-500 gr.
- Strong tea – 200 ml.
- Honey – 50 gr.
- Sugar – 50 gr.
- Jam – 200 gr.
- Sunflower oil – 130 ml.
- Soda – ½ small spoon.
- Vanillin, cinnamon - a pinch (instead of cinnamon, sometimes they use powdered ginger).
How to bake:
- Brew very strong tea and cool.
- Place jam in a bowl and add baking soda. The baking powder will immediately work and begin to hiss and bubble, especially if the jam is sour.
- Pour the cooled tea leaves and oil. Add sugar, honey. Mix everything thoroughly. To make the ingredients combine faster and better, use a blender.
- Add cinnamon and vanilla, beat well again.
- Add flour in three additions, kneading the dough, which resembles the thickness of sour cream.
- Pour the dough mixture into a greased mold.
- Level the surface. Place on the middle rack of the oven, preheated to 190 o C. Baking time 50 minutes.
- Remove the finished pie and cover with a towel. Leave it alone for 20 minutes. Then transfer to a plate and sprinkle with powder.

- Soda – 1.5 teaspoon.

- 1 glass of black tea;
- 150 grams of peeled walnuts;

- Dried fruits and nuts need to be transferred to a blender and chopped properly, the smaller the better.
- Pour warm, freshly brewed tea, a little melted honey, and refined (odorless) oil into a large bowl and mix well. Then add sugar, salt, ground dried fruits, as well as cinnamon and ginger, the amount of which can be adjusted to your own taste. Mix again.
- The last step is to add soda; it is better to extinguish it with lemon juice (this way there will be no unpleasant smell, as when extinguishing it with vinegar, which is sometimes present in baked goods).
- Now we begin, continuously stirring, pour in the flour, this is required so that the mixture becomes homogeneous, there is not a single lump, and all the spices are well dispersed throughout the entire perimeter, giving their unique taste.
- While the dough is kneading, you can turn on the oven so that it is ready for baking a delicious and aromatic delicacy. It should be heated to a temperature of 190 degrees Celsius.
- While the oven is heating up, you can prepare a baking dish, line its bottom and sides with baking paper or grease it with butter. The liquid mixture is poured into the mold and carefully leveled with a spoon (so that the top is nice and neat). In this form, the lean honey gingerbread goes into the oven for 60 minutes until fully cooked and until golden brown.
- If you need to prepare a dessert in a multicooker, you should first grease the multicooker cup with oil, pour out the mixture and level it. Next, you should select the “Baking” mode and set the time to 50 minutes. Before removing the finished product, you need to check the degree of readiness with a wooden stick.
- In addition, such a lean gingerbread in a slow cooker, as a rule, turns out to be very airy and high, and this allows you to cut it into 2 parts and soak the cut between them with something tasty. For example, make a layer with jam or cream. In this case, it will be necessary to leave it to rest and soak for several hours and only then serve it to the table.
