Redmond cottage cheese casserole with semolina in a multicooker

Finally, I had everything I needed to make the casserole:

  • 0.5 kg of cottage cheese of any fat content (I used 5% cottage cheese)
  • 2 medium sized eggs
  • 4 tbsp. Sahara
  • 2 tbsp. semolina (can be replaced with flour if desired)
  • 2 tbsp. sour cream of any fat content (I use store-bought 15%)
  • 1 tsp baking powder
  • 1/2 tsp. salt
  • vanilla sugar packet
  • 100 g seedless white raisins
  • butter for greasing the bowl

How to cook cottage cheese casserole in a Redmond multicooker

Add semolina, salt, baking powder, vanilla sugar and raisins. Mix everything again. I used white, clean, soft, seedless raisins, so I just rinsed them lightly and dried them with a paper towel. But if the raisins are hard and twisted, then they need to be soaked in hot water for a few minutes.

Grease the multicooker bowl with butter, dump the resulting mass into it and smooth the surface with a spoon or silicone spatula.

As soon as the cartoon signals the end of the program, take out the bowl with the casserole, wait until it cools down and carefully transfer the resulting casserole to a dish.

Since the casserole in a multicooker turns out to be on top without a golden brown crust, there are two options to solve this problem - turn the casserole onto a dish with the golden brown crust on top, which is what I did, or turn it over in a bowl and bake for another 10-15 minutes.

To improve the appearance, place fresh berries in a row on the casserole. You can also top it with jam syrup.

Cottage cheese casserole in a multicooker Redmond

It's easy to prepare cottage cheese casserole in a slow cooker. There are many casseroles where the main component is cottage cheese. It is necessary to take into account the temperature of the selected mode. After all, if you cook for a small number of servings, you need to reduce the cooking time. A casserole that is too crispy will not taste good.

If you are afraid that the casserole will stick to the bowl, you just need to lay down parchment paper.

Ingredients:

  • half a kilo of cottage cheese;
  • 2-3 eggs;
  • 250 grams of sugar;
  • 130 grams of raisins;
  • a packet of vanillin;
  • 250 grams of flour;
  • 1 packet of baking powder;
  • 35 grams of butter.

Cooking method:

  1. To begin, grate the cottage cheese. A sieve will help with this. Then the cottage cheese must be placed in a clean bowl.
  2. In another bowl, beat eggs and granulated sugar. Pour the resulting mass into the cottage cheese and stir. The result should be a homogeneous consistency.
  3. Separately, combine wheat flour, vanillin and baking powder. Pour the loose mixture into the curd mass. Mix all ingredients thoroughly.
  4. Pre-steam the raisins. Then all excess liquid should drain from it. Place raisins in a bowl with dough. Mix everything again.
  5. Grease the multicooker bowl with a piece of butter. Then you need to put the mass there and level it.
  6. Prepare the casserole with the lid closed on the “Baking” mode. The timer must be set for 40-45 minutes. Then you should turn off the device and remove the casserole.
  7. Cut the finished casserole into portions and serve.

Preparation

A truly delicious casserole is made from fresh cottage cheese. Fat content is not decisive here. Those who are on a diet - use a low-fat product, those who like fatter - high-fat cottage cheese, and in my opinion - the most delicious casserole is made from cottage cheese with 8-10% fat content.

To further improve the taste, add sour cream to the casserole.

So, put the cottage cheese in a deep container, add sour cream and milk to it.

Using a mixer, mix until you get an even, smooth mass.

In a separate container, combine eggs, granulated sugar and vanilla sugar.

If you like sweet baked goods, add sugar to 1 tbsp. l. more, since with the amount indicated in the list of ingredients, the casserole will be only moderately sweet, which may seem insufficient.

Beat the egg mixture using a mixer (the mass should double in volume). It is well-beaten eggs that will give the future casserole fluffiness and airiness.

Next, pour the egg mixture into the curd mass, add semolina and mix gently with a spoon.

Semolina will help keep the finished dish in shape and not fall apart. I advise you to use semolina, and not flour, as suggested in some recipes, since flour can make the casserole too dense and tough. You can also use semolina porridge; it is also perfect for casseroles.

As a result, the casserole preparation should turn out like liquid sour cream.

If desired, add raisins or other dried fruits, previously soaked in hot water, to the curd mass.

Grease the bottom of the multicooker bowl with a piece of butter and pour the curd mixture into it.

The cottage cheese casserole in the Redmond multicooker is baked in the “Bake/Bake” mode for 30 minutes. When baking, the valve must be in the “Open” position - this is very important!

After the end of the program, do not open the lid immediately, let the casserole cool gradually for 30 minutes, otherwise it may fall off.

It is convenient to remove the casserole from the multicooker using the steaming bowl, then turning it over onto a plate.

In the classic version, cottage cheese casserole is eaten simply with a cup of milk or tea. For those with a sweet tooth, you can offer it with sweet sour cream, condensed milk, jam and even grated chocolate.

As an experiment to add a special flavor to your cottage cheese casserole, you can try adding lemon zest, or cinnamon, or nutmeg - listen to your desires. You can also put fresh fruits in it - bananas, apples, pears, or vegetables - pumpkin, carrots, or berries.

Airy casserole without semolina and flour

In almost every cottage cheese recipe, there are additional components in the form of semolina, since it acts as a thickener and perfectly absorbs the separated whey and holds the dough components together. Cottage cheese casserole without adding semolina is a light and quick dessert.

Ingredients:

  • Cottage cheese – 500 gr
  • egg - 3 pcs
  • sugar - 3 tbsp. l
  • sour cream - 1 tbsp. l. with a slide
  • vanillin - 1/3 tsp
  • starch - 2 tbsp. l
  • salt - 1 pinch.

Cooking method:

Pour sugar into the cottage cheese (preferably crumbly and not very wet), add egg yolks, sour cream, vanillin and starch.

Next, using an immersion blender, we bring everything to a homogeneous, fluffy mass.

In case you don’t have an electric device like a blender, then you need to pass the curd through a sieve several times, combine it with the rest of the ingredients and beat with a whisk.

Now separate the yolks from the whites, put a pinch of salt in the whites and beat into a thick foam. Then we transfer it in parts into the curd mass and mix.

Grease a baking dish with softened butter, put the mixture we prepared into it and smooth it out properly. Then place in an oven preheated to 180 degrees, on a medium level, for about 40-50 minutes.

We check the readiness with a wooden skewer; if after piercing it into the middle of the mold it remains dry, then the dessert is ready. During baking, the casserole will rise, and after removal from the oven it will settle, don’t be afraid, this is how it should be, since flour and semolina were not used in this recipe.
