Line a wide baking tray with baking paper and lightly grease it with vegetable oil. Divide the dough into two equal parts. Roll out one part and place on a baking sheet. The dough is difficult to roll out with a rolling pin, since it is very tender, it is easier to stretch it with your hands.

Peel and cut the apples into pieces, arrange them in an even layer on the dough.

Cut the dried prunes into pieces and scatter them over the apples.

Roll out the remaining piece of dough and cover the fruit with it, pressing the edges of the pie with your fingers. Preheat the oven to 200 degrees and place the workpiece in it. All irregularities in your product will be hidden during heat treatment. The cake rises well in the oven and becomes porous and airy.

As soon as you put the pie in the oven, immediately start working on the whites. They need to be beaten with sugar until stiff peaks form. We take approximately 100 g of sugar, but you can add sweetness to your taste. Also add a packet of vanilla sugar to the egg whites.

Grind the walnut kernels in a blender and pour into the beaten egg whites.

Gently fold the nuts into the whites. The mass should be homogeneous and smooth.

There is also a Russian charlotte, invented, however, by a Frenchman. It consisted of French savoiardi cookies, Bavarian custard, ready-made sponge cake and whipped cream.

Charlotte is prepared with plums, pears, berries, raisins, and cream instead of fruit. But traditionally, apple charlotte is still baked, and the real “charlotte” boom comes in the fall, during the apple harvest.

The most delicate autumn delicacy

The pie received the name “Invisible” for its unique tenderness.

Ingredients:

  • Apples - 1.2 kg.
  • Sugar - 100 gr.
  • Flour - 120 gr.
  • Milk - 100 ml.
  • Eggs - 2 pcs.
  • Butter - 40 gr.
  • Baking powder – 1 tsp.
  • Salt - a pinch
  • Cinnamon - to taste
  • Lemon - 1 pc.

Preparation: Scald the lemon zest with boiling water, grate it on a fine grater, then add it to the dough, and pour the juice over the fruit.

Slice the apples thinly, pour over the juice and sprinkle with cinnamon.

We'll tell you how to prepare a fluffy tall charlotte with melting pieces of apples and a crispy sugar crust. This charlotte is best eaten warm with a scoop of ice cream.

So, the ingredients for charlotte:

  • 900 g sweet and sour apples;
  • 5 eggs;
  • 200 g + 2 tbsp. l. Sahara;
  • a pinch of vanillin;
  • 1 tbsp. l. cinnamon;
  • 2 tbsp. l. starch;
  • 50 g butter;
  • a spoonful of vegetable oil to grease the mold;
  • 1 tbsp. l. lemon juice.

Wash the apples, dry them, peel them. Cut into equal cubes and one apple into slices. Sprinkle with lemon juice, then roll in the cinnamon-starch mixture.

Turn on the oven to heat up to 180 degrees and take the dough. In a tall bowl, beat the eggs with a mixer into a light foam, then, continuing to beat at high speed, gradually add 200 g of sugar. The whole process will take you about 8-10 minutes, our goal is to dissolve the sugar. If you do everything correctly, you don't need baking powder. If in doubt, add a teaspoon.

Put the mixer aside, take a spatula and add the sifted flour in three additions, gently mixing from bottom to top. Then spoon a third of the dough into a mold (24 cm in diameter) greased with vegetable (or butter). You can sprinkle the mold with breadcrumbs, and then pour in the dough.

Place all the apples, except the slices, on the dough layer. Fill with the remaining dough or spoon it out. You can hit the pan on the table to help the dough spread faster. Place apple slices on top and brush them with melted butter. Sprinkle with sugar, we have 2 tablespoons for this.

Place the mold in an oven preheated to 180 degrees for 45 minutes. Bake until dry. Depending on the oven, baking time may increase to an hour. Cool the charlotte in the mold, then carefully remove. Have fun!

For this version of charlotte (classic, I must say) you need pieces of white bread or a loaf. Yesterday's or the day before yesterday's stale bread is ideal. We won't use flour! It is better to take apples for charlotte with sourness - it will be ideal with a sweet biscuit.   • 150 g sugar;

Low calorie Italian dessert

We will need:

  • 200 g flour;
  • 3 tbsp. l low-fat sour cream;
  • 25 g butter;
  • 7 apples;
  • a large handful of raisins;
  • 200 g granulated sugar;
  • 1 egg;
  • A pinch of salt;
  • 50 g powdered sugar.

Dough:

  1. Mix sour cream, sugar, salt, egg, 1 tbsp. l. vegetable and butter.
  2. Gradually add flour, beat, set aside to infuse.

Ingredients for charlotte with dried apricots:

  • 600 g apples;
  • 120 g dried apricots;
  • 4 eggs;
  • a glass of flour;
  • a glass of sugar;
  • 50 g butter.

Soak dried apricots in boiling water for 20 minutes, wash, peel and cut the apples into small cubes.

  • 1 kg apples;
  • 2 eggs;
  • 100 g butter;
  • 80 g sugar;
  • 300 g rice flour (you can use wheat flour);

  • 2 tbsp. l. cocoa powder.

In a bowl, combine flour, cocoa and baking powder. In another tall bowl, beat the eggs with sugar with a mixer until foamy, continuing to work with the mixer, add the melted and cooled butter. Wash the apples, cut into slices and sprinkle with lemon juice. Separate the whites from the yolks and place in different bowls. Add half the sugar to each and vanilla sugar to the yolks. Beat both masses with a mixer, whites to peaks, yolks to light mass. Then add the sifted flour into the yolk mixture in 4 additions and mix with a spatula. Step 1.

The first thing I do is turn on the oven and preheat it to 180 degrees. I grease a pentagonal baking tray with butter (butter) and sprinkle with flour.

Then I add baking powder and baking powder to the sifted flour and mix everything well.

And now I start preparing the dough. Place butter in a deep bowl, add granulated sugar and beat with a mixer until the sugar dissolves. I got a lush mass. Add sour cream to the mixture and beat for a couple more minutes.

  • Beat the whites with half the sugar, the yolks with the rest;
  • Combine the whites and yolks, gradually add the flour, no need to beat, mix gently with a spoon or fork;
  • Add salt and soda;
  • Cut the fruits into slices or cubes, pour them into the dough;
  • Grease the baking dish well with butter and sprinkle with semolina;
  • Pour the mixture into a mold, put it in the oven, heated to 180 degrees, bake for half an hour.

This charlotte recipe is also popular among housewives. To prepare we will need:

  • 4 chicken eggs
  • 1 tbsp. Sahara
  • 1 tbsp. flour
  • half a teaspoon of soda
  • 1-2 green apples

Preparation:

  1. Beat the eggs, adding sugar and flour until a homogeneous mass is formed. Add soda to the contents and mix everything well. At this stage it is important that the soda is well mixed, this will ensure the uniformity of the cake;

  4. Pour the mixture into the mold and place in the oven for 20-30 minutes at 150-200 C, on the “top and bottom heat with convection” mode. The charlotte pan must be slightly greased with vegetable oil to avoid burning.

The Bulgarian recipe has taken root on the tables of our housewives. We will need:

  • Flour - 300 ml
  • Sugar - 250 ml
  • Semolina – 300 ml
  • Baking powder - 10 g
  • Apple – 1.5 kg
  • Vanilla sugar - 15 g
  • Chicken egg - 1 pc.
  • Vegetable oil – 100 ml
  • Milk – 350 ml
  • Butter - 2 tbsp. l.
  • Powdered sugar - 1 tbsp. l.

In a bowl, mix semolina, flour, baking powder, sugar, vanillin well. Grease a round springform pan with butter. Spread 1/3 of the flour mixture in an even layer over the bottom of the pan.

Grate the apples, spread 1/2 of the part over the dry layer in the mold, just without pressing. Sprinkle with dry mixture again. Then again a layer of apples, without pressing, then the dry mixture.

Filling. Whisk milk, egg, vegetable oil. Spread the filling over the top layer of the pie. To make the baked goods more tender, pour a little filling over the bottom layer as well.

Bake in the oven at 200 degrees for 15 minutes. Remove from the oven and spread the remaining 50 ml of milk on top. Then use a brush to coat the remaining areas of the dry mixture. Transfer the pie to the oven again and bake for 25-30 minutes (until golden brown).

Then take out the baked goods and let them sit for 3-4 hours so that the juice better saturates all layers of the baked goods. Sprinkle with powdered sugar, preferably through a strainer, and serve.

Charlotte with apples and cinnamon

If you love spiced baked goods, you will love cinnamon charlotte. To bake this pie, prepare the following ingredients:

  • apples – 6 pcs.;
  • 1 tbsp. flour;
  • sugar - one glass;
  • 3 eggs;
  • soda - a pinch;
  • cinnamon - a tablespoon.

Prepare the pie in the following order:

  • Separate the whites from the yolks. Beat the egg whites with sugar;
  • Add flour and soda to the yolks;
  • Cut the fruit into thin slices and place the bottom of the baking container;
  • Sprinkle with cinnamon and top with batter;
  • Bake for half an hour in the oven at 220 degrees.

Apple charlotte with butter

To make a pie according to this recipe, you will need the following products:

  • 3 apples;
  • 200 g flour;
  • 1/2 tsp. baking powder;
  • 4 eggs;
  • 50 g fresh butter;
  • 1/2 cup sugar.

Preparation:

  1. Grease a baking dish with butter. Wash the fruits, peel them, cut into small pieces, but do not grate;
  2. Line the bottom of the container with them. Grate butter on top of the fruit. For the dough, you need to beat the eggs, add sugar, beat again until the sugar is completely dissolved;
  3. Gently add flour, beat for a couple of minutes, add soda and beat again;
  4. Pour the liquid dough on top of the fruit and butter, let it stand for 15 minutes, place in the oven, heated to 180 degrees, bake for 20 minutes.

Step-by-step preparation

  1. Grease a baking dish with butter.
  2. Wash the apples, peel them, cut them into small pieces, but do not grate them. The pieces should be 2–3 cm in diameter. Place them along the bottom of the mold.
  3. Spread/crush butter on top of the apples into small pieces.
  4. For the dough, beat the eggs, add sugar and beat again until the sugar dissolves. Add flour and beat again, add baking powder and beat again. This way the mixture will be as airy as possible. The dough should be quite liquid, like sour cream - do not make it too thick.
  5. Pour the mixture into the mold on top of the apples and butter, let stand for 15–20 minutes and then bake in a preheated oven for 20–30 minutes until done at 180 degrees.
  6. Check the dough with a match - if the dough does not stick to the match, then the pie is ready!

This is a very simple recipe, but the result will pleasantly surprise you!
