What is tasty is rarely healthy; “rice flour charlotte with apples” is an exception to this rule, because it does not contain gluten. It's quick and very easy to prepare!
How to cook “Charlotte from rice flour with apples”
Prepare your ingredients.
Pour vegetable oil into a container for kneading dough and add 100 grams of brown cane sugar. Stir.
Add salt and yogurt, stir for 2 minutes until the sugar dissolves.
Add vanilla sugar and baking powder, stir again.
Add flour and starch, mix until smooth.
Peel and cut one apple into pieces.
Place the chopped apple into the dough and stir.
Place the dough into a baking pan.
Peel one or two more apples, remove the core, cut into rings.
Place apple rings on top of dough.
Mix brown sugar and cinnamon.
Sprinkle the cinnamon sugar mixture on top of the pie and bake at 185 degrees for 20-25 minutes.
Remove the charlotte from the mold and cool to room temperature.

Classic charlotte with rice flour
Rice charlotte for dietary nutrition can be baked according to the classic recipe. For this you will need:
- 3 chicken eggs;
- 4 apples;
- 100 g rice flour;
- 10 g sugar or its substitute;
- ½ tsp. baking powder;
- 1 tsp ground cinnamon;
- ½ tsp. nutmeg.
Raw eggs should be thoroughly beaten. When the mass reaches thickness, add sugar, baking powder (it can be replaced with ¼ tsp of soda, quenched with the same amount of citric or acetic acid) and flour in small portions. The mixture is carefully brought to homogeneity. The consistency of the dough should resemble sour cream.
For charlotte, choose sweet and sour apples with green skin. They must be hard, because... Only such fruits do not fall apart during heat treatment. The apples are cored and the peel can be removed. Fruits are cut into slices or cubes. Some of them are placed in a form greased with vegetable oil. Apples are covered with spices and filled with half the volume of dough. After this, add the remaining fruits, spices and top up the dough.
The oven is heated to +140°C, place the pie in it and gradually increase the temperature in the oven to +180°C. This will allow the biscuit to bake more evenly. The baking time for charlotte is about 40 minutes. The readiness of the dessert is determined by dipping a wooden skewer into the browned sponge cake - there should be no traces of dough left on it. The pie is removed from the oven after cooling so that it does not lose its shape.
Sometimes recipes suggest mixing wheat flour with rice flour. In such cases, the dessert becomes more nutritious, but loses some dietary properties.
One way to make charlotte with apples requires the following ingredients:
- 3 apples;
- 4 raw eggs;
- 50 g wheat flour;
- 150 g rice;
- 130 g sugar;
- 10 g vanillin;
- 1 tsp baking powder.
Beat eggs with sugar and vanilla. Sifted rice and wheat flour are mixed with baking powder. Peeled and seeded fruits are cut into thin slices. Flour is added to the egg-sugar mixture and the mixture is brought to the consistency of sour cream. The ingredients are placed in a mold greased with refined sunflower oil and placed in a preheated oven. The dessert is baked for 40-45 minutes.
Curd PP charlotte with apples and oatmeal (without flour)
The recipe is prepared according to all the canons of proper nutrition. Cottage cheese and oatmeal make the pie incredibly healthy.
The dietary version of cottage cheese charlotte with apples will appeal to everyone, especially athletes and adherents of proper nutrition will appreciate the recipe.
Curd dough for a pie can be prepared from both soft cottage cheese and granular one. Grainy - before cooking, you need to beat it with an immersion blender until you get a smooth, homogeneous curd mass.
Ingredients:
- 400 g cottage cheese;
- 4 eggs;
- 110 g long-cooked oatmeal (grind in a blender or coffee grinder) or take ready-made oatmeal;
- 3 medium apples;
- ½ teaspoon baking powder;
- ½ teaspoon cinnamon;
- Sugar or other sweetener to taste.
How to cook step by step:
- Blend the cottage cheese with an immersion blender (if using granular).
- Beat the eggs with a blender into a thick foam.
- Pour the egg mixture into the cottage cheese, add baking powder, cinnamon and oatmeal. Mix the dough well with a whisk, it turns out quite thick.
- Peel the apples and cut them into cubes.
- Pour apples into the dough and mix.
- Grease a baking dish with butter or sprinkle with flour. Spread the dough out, leveling the surface with a spatula.
- Place the curd charlotte in the oven for 30-40 minutes at 180 degrees (non-convection mode).
- Let the charlotte cool and only then remove it from the mold.
Curd charlotte with apples is ready. Sprinkle the pie with powdered sugar or skim milk powder, decorate with a mint leaf or berry if desired. Bon appetit!

What is this diet charlotte made from?
In the list of ingredients for this dietary apple baking you will not find either regular flour or sugar. The base is healthy rice flour. That’s why the calorie content of my signature charlotte is only 99 kcal per 100 g, and the entire serving is 323 kcal! I will definitely include the recipe in my next weight loss marathon - these are exactly the kind of pies you can eat on any diet! But, don’t forget, it’s better to eat even baked goods before lunch; after lunch (if you’re losing weight) there’s no need for carbohydrates.
That day I made both lazy pie and classic sugar-flour charlotte. So they taste almost the same! My son almost ate my diet, he got it mixed up. Juicy sweet dough, but at the same time airy, not “gummy”, appetizing apple aroma and simplicity of preparation - isn’t this ideal?
